The way they are wrapped in my photo was my 6 y.o. son's idea.
Chocolate Banana Bread Pudding

Toronto pastry chef Anna Olsen includes this in her own Christmas Eve traditions! I like it because its actually a "double duty" recipe ........ I used half the banana bread on its own, then used the other half to make half the bread pudding. You could use your own favourite banana bread recipe - or even a store bought banana bread if you're really pushed for time. I served it warm with frozen vanilla yogurt but I actually preferred it the next day at room temperature. -- posted by CountryLady

Butterflied Lamb Leg, Cilantro, Chestnut, Prosciutto, Asiago

Lamb is one of my favourite things to cook. One day I shopped at my usual organic butcher and there begging me to take it home was a butterflied (gigot) lamb leg. Of course I had to obey. My mind was all awhirl with ideas but none which appealed. I thought, "What does one do with a Butterflied Lamb Leg??? Stuff it of course"..... Next question, "Stuff it with what?" Here, Ladies and Gents is where creative juices are allowed to flow freely. Reaching deep into the recesses of creativity, I came up with the following recipe for goodness, prepared and served it to a close friend with a critical palate, and a taste for good blend of herbs and seasonings. (Of course the Chocolate-Glazed, Hazelnut Mousse Cake, was inducement enough ).

You may want to serve a "simply perfect" Koongoora Hill, Shiraz Cabernet from Penfolds. They boast it to be Australia's finest, rich heritage of winemaking tradition and experience since 1844.

Whether you serve wine with your dinner, or not, do prepare and serve this delicious creation; I promise you won't be sorry .
Please note for richness of flavour, all herbs used are fresh, not dried. -- posted by TOOLBELT DIVA

Carnation Maple Muffins

My Mum got this recipe from a can of Carnation evaporated milk in the 80s and it's been a family favourite ever since. It's not listed among the Carnation website's current list of recipes at www.nestle.ca so I thought I should do my best to save this classic recipe from extinction. The original recipe calls for "1/4 cup shortening"; we use 3 tablespoons of (corn) oil. It also calls for 1/2 cup of maple syrup, but we found 3/4 cup was even better :) We also cut out the 1/2 teaspoon of salt from the original recipe. Use medium grade maple syrup (not the "light" stuff) if possible. Finally, be sure to use *evaporated* milk, not condensed milk! -- posted by Pepita

Lemon, Garlic and Basil Shrimp Skewers

Use this recipe as a template for other shrimp skewers. If you don't have honey mustard, stir a little honey into Dijon. Limes would also work well instead of lemons. And if you're finding your home-grown chives or parsley getting out of hand, substitute them for the basil.
These need to marinate for 45 minutes before cooking.

Anna Olson's Crisp Fruit Chips

Yes, this is another recipe from Food and Drink Magazine!
"A garnish of fruit chips is a dramatic way to add shards of concentrated flavour and snappy crunch to winter desserts and soups. Pastry chef Anna Olson, host of Food Network Canada's "Sugar" and owner of Olson's Foods and Bakery in Port Dalhousie, particularly loves pear or pineapple chips. They're easy to make at home, she says, but cautions "the real trick is having a good sharp mandolin slicer to cut the fruit thinly."

I had fun making these beautiful garnishes so I thought I would share!
They may be made with your favourite fruits, unpeeled pears or apples sliced lengthwise, or peeled and uncored pineapple are good choices. Use your imagination!!
Ingredient amounts are approximate, you can add more or less fruit and icing sugar to taste. -- posted by ~Leslie~

Easter Nests With Jelly Bean Eggs, Peanut Free

This is a recipe I developed using
Recipe #87879 by winkki as a base. I had to make these peanut free for my DD's grade one class and this is what I came up with. They turned out great, and I'd like to thank Winkki for a terrific idea!
You can mix chocolate and white chips together if you want to make the full 2 cups.
Makes 20 small nests. -- posted by ~Leslie~

Broccoli and Wasabi Dip

The broccoli gives a bright green dip that doesn't discolour and the wasabi adds a touch of heat. Make this an hour or 2 in advance so that the flavours have time to blend. Serve with crackers or chips.

Roasted Corn and Herb Dip

Roasting corn on the grill gives a sweet, toasted flavour that is hard to beat. Serve crunchy raw vegetable pieces, toasted pita wedges, bread sticks or crackers for dipping. If fresh corn on the cob is not available, substitute 1 cup (250 mL) frozen, defrosted or canned corn. Toss with oil and place in a single layer on foil-lined baking sheet. Broil for about 8 minutes, stirring often, or until browned.

No Bake Mandarin Orange Cheese Cake

This recipe was given to me by my best friend. She made it for me at her home, then I couldn't go without it for special occasions. It's very easy to make and the best I have ever tasted. Needs refrigeration in the preparation time. For the gelatin, one box weighs 28 grams and contains 4 envelopes. Use one envelope or 7 grams which is the equivalent of 1/4 ounce. In the original recipe, I had indicated 3 ounces which is way too much. Sorry for the mistake. -- posted by Y Franche

Challah and Leek Turkey Stuffing

I've made this stuffing for my family every Christmas and Thanksgiving for about seven years. I keep wanting to try a new one, but they keep saying this one is really good. It's not low calorie or low fat, but I only make it twice a year, so I guess that's ok. I was trying to reproduce the stuffing my mom used to make when I dreamed this one up. I didn't get it quite right, but once I hit this one, they told me to stop trying. Vary the amount of ingredients as desired (the quantities change a little every time based on the size of the bird, though in reality I just add or subtract bread as required). The recipe below will stuff a 15 lb turkey. I don't know what it turns out like in a casserole because I still stuff the turkey proper. -- posted by Ogwen

Chunky Orange Cranberry Sauce

I have never liked cranberry sauce before. This year though, I have discovered that I like dried cranberries. So I decided to come up with a cranberry sauce that I can like.
You can put in the raisins and the cranberries or one or none. It is up to your taste buds! For my tastes, I put in both. :) **Update Mar 30/08 - After the last time I made this, I threw the leftovers into a jar and popped it into the freezer. Then the next holiday, I just set it on the counter for the afternoon. Dumped some out for dinner and threw it back into the freezer. It was just as good the second time around as it was when it was made fresh. -- posted by Saturn

Build Your Own Canadian Cranberry and Herb Turkey Burgers!

Build your own burger - the recipe here is for a low-fat cranberry and herb turkey burger, with LOTS of options! Plump semi-dried Canadian cranberries and fresh chopped herbs are added to lean, low-fat turkey mince for a moist and flavourful burger, and without the guilt! I have offered the bacon, cheese, assorted condiments and the burger bun as an option; if you are REALLY watching your calories and fat intake, just go with the plain burger and a lovely crispy mixed salad on the side. Turkey mince can be a little bland, so the addition of the herbs and cranberries adds a real flavour injection. Try to use freshly chopped herbs for the best flavour, if you do use dried herbs, reduce the quantities by half, as dried herbs are more pungent than fresh. If you prefer a slightly sweeter taste, use Craisins, the sweetened dried cranberries that are available in North America and Canada; this recipe has been posted as a thank you to a Canadian friend on Recipezaar, who kindly sent me some Craisins, along with lots of other Canadian goodies! Merci beaucoup! -- posted by French Tart

Rustic Apple Tart

This recipe hails from British Columbia, Canada. It is from the website if the B.C. Tree Fruits Limited company. "Who doesn't love baked apples and cinnamon? They are an irresistible combination especially when served warm with a scoop of vanilla ice cream. This rustic apple tart is simpler to make than a pie. You don't have to be neat and fussy with the crust, just simply fold it up over the apples however you please leaving the centre open. The chopped pecans toast while the tart is baking which gives them a buttery taste and help to make the tart look very rustic." http://www.bctree.com/recipes/archive/apple-rustic-tart.php -- posted by Jess4Freedom

Can't decide between cookies or cake? Have both!
I discovered this recipe on a blog (cupcakeproject.com) and made a few adjustments to the directions as the original was a little difficult to follow.
These cupcakes are absolutely delicious and complete with a raw cookie dough surprise on the inside! Topped with some cookie dough icing and this makes for a fantastic treat for any occasion! (This recipe looks overwhelming, I admit, but it's pretty easy and well worth the effort!)

NOTE: If you use any flour other than self-rising cake flour as the recipe calls for, it will cut the number of cupcakes in half!!) -- posted by pott3r
