Great Vegetable Soup

I came up with this because my wife loves everything creamy, but has been told to cut down on the dairy. The potatoes break down and give a cream soup feel and taste. It's very simple, hearty and healthy. It's also easy to come up with variations. A food processor makes for easy preparation -- posted by Paul Elliott

Guacamole - Best Ever!

This "Best Ever" recipe is an amalgamation of every other Guacamole recipe I've tried. It's absolutely wonderful with tortillas or mixed with a can of salmon or tuna and spread on a sandwich. A perfect snack for when you don't want the oven on. It's so easy! I love it. -- posted by Rinjii Flower

Moderate Madeleines (Cocoa)

I got this as a diabetic cookie recipe many years ago from the Toronto Star. Because they are rather soft and cakey, I like to bake them in madeleine pans. They are very good, even if you are not diabetic give them a try. Do not overbake them, or they may be dry. -- posted by Jenny Sanders

Cocoa Oatmeal with Dates

Now that the word is out that chocolate is good for you (BUT only if not mixed with milk) why not have it for breakfast? This makes a nice change of pace from plain oatmeal. Karl did not think this was sweet enough, but when he sprinkled a little brown sugar over he was happy. Serve with ricemilk or soymilk to get the full advantage of those cocoa flavinoids. -- posted by Jenny Sanders

Versatile Brown Rice Salad

I make this quite often for pot-lucks. My circle of Friends includes vegetarians, and people with allergies to gluten, dairy and onions. It makes coming up with something everyone can eat and will like a bit of a challenge. However this goes over well even with those who have no food restrictions. It's very flexible; I hardly ever put in everything I have listed, and you can certainly put in other fruits and vegetables as seems good to you. Don't be put off by the length of the ingredients and instructions; it's really very easy especially if you cook the grains the night before. I typically stagger, bleary-eyed, into the kitchen at the last possible moment and have it put together in half an hour. If you don't mix in the seeds, the salad will keep well for several days in the fridge. (It will still keep if you mix in the seeds, they will just get a little soggy.) Also, remember that barley is not gluten free. Instead of the red rice, wild rice or barley you can also just use a second 1/2 cup of brown rice. -- posted by Jenny Sanders

Save the Stems Broccoli, Carrot & Cabbage Stir Fry

I've always liked broccoli, providing you are talking about the budding tops. The stems I could do without. For a while there I was throwing the stems away, but that felt so extravagant that I kept wondering if there wasn't something I could do with them. There is... and it's even delicious. Now I look forward to the stems as much as the rest of the broccoli. -- posted by Jenny Sanders

Coconut Meringue Cookies

These came out very light and crispy, but not the same texture as regular sugar meringues.
As you can see in the photo, they also come out very yellow instead of the usual white color.
I can only guess that it's the Splenda that causes it.
You can have 5 of these and only get 1 carb and 1 gram fat.
