			<description>A lovely warming sauce; a good sinus-clearer; or just some proper traditional Italian cooking! This sauce announces itself at full volume, because of the chillies, but is also full of flavour. It is pantry food - a sauce that can be thrown together from ingredients you can keep in the cupboard for months at a time. This is the simplest recipe for it I have found, but is still delicious. When condensed down there may not seem to be much sauce, but you want to treat this like pesto - a small quantity swirled through lots of pasta, rather than drowning in sauce. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. 			<description>Spicy goodness! Pumpkin's not just for dessert anymore either-- and this is a fun casserole that has elements of Latin and Middle Eastern cooking.  Best of all, you don't even have to use the stove to make the sauce! It is a very thick and rich sauce. The pumpkin base is very hearty and delicious, and is jam-packed with Vitamin A and lycopene. The garbanzos (chickpeas) are loaded with protein and cold-press olive oil is good for your heart (so it's a good fat instead of bad fats like in vegetable oils and shortening.) You won't believe this yummy casserole is healthy. :) This is a totally vegetarian dish, but if you want to vegan-ize it, you can use soy, hemp or almond &amp;quot;cheese&amp;quot;, skip it altogether, or use some soy silken tofu. Meat lovers might want to throw in ground beef, and/or use chicken or beef stock/broth instead of veggie broth. I made this up myself, and love it! 			<description>I grew up eating a Filipino version of Congee called &amp;quot;Arroz Caldo&amp;quot;. My grandmother would have lots of dark chicken meat in it and huge chunks of ginger that I would end up biting into (not fun when you're 7 years old). Since then my own kids have developed a love for the traditional Chinese-style congee (also called rice soup) they serve in restaurants, especially during cold Autumn and Winter days. Some people may be uneasy about using the 'century duck egg' (or 'thousand year old egg' is really just as egg that is preserved in salt, ash and lime) but don't judge it in it's unpeeled, chopped up state - added to the congee, it really adds a yummy complexity to this dish, even my 2yo daughter loves it. This recipe is for you if you want a warm, hearty, simple and economical meal. Enjoy! Also try making it cheesier or adding or substituting cheeses.  I've made an excellent one with brie. I've also used canned tuna instead of chicken for a quicker version.

I have also experimented with different seasonings and rubs for the chicken or tuna, including celery salt, cayenne, rosemary, cumin, etc.

Changing the pasta also greatly changes the flavor as well, in my opinion.

Can be made with dried spices but I recommend fresh!
