Baked Broccoli Frittata

This was my introduction to the concept of the frittata, from a Light Cuisine cookbook of my mother's. I have used every combination from the 6 eggs and 2 egg whites, to 4 eggs and a cup of egg substitute, to 2 cups of egg substitute, all with success (though it's a bit tastier with a real egg or two included). -- posted by OneEye

Soft Scrambled Eggs With Fresh Ricotta and Chives

A simple, creamy , and delicious recipe from From Bon Appétit Magazine (April 2008). Use more or less ricotta depending on your preference (I like it with less but the original recipe calls for a 1/2 cup). You can use regular ricotta, but it's even better with fresh ricotta. -- posted by blucoat

Baked Eggs With Spinach and Mushrooms

This light and delicious brunch recipe is from Gourmet Magazine (June 2004). The original recipe calls for heavy cream, but I prefer to use Greek yogurt, for a healthier recipe.
Note: The yolks in this recipe are not fully cooked. If salmonella is a problem in your area, bake until yolks are completely set. -- posted by blucoat

Scrambled Eggs With Zucchini

This recipe will make your taste buds smile, great combination of ingredients. This is my favorite way to eat zucchini. You will be surprised how good it tastes. Personally, I prefer not to use salt, as it's already in the butter. This is a good recipe for salt restricted diets. -- posted by Chef #906577

A delicious simple meal for all times. Healthy and one more use for zucchinis :)

If you desire to have any meat added to it, feel free to cut slices of a sausage link and cook with the onion. Can also be served with cheese on top after it is cooked, or even wrapped in a tortilla for a breakfast burrito.

Veggie Pasta Pie

This is especially good when all of the veggies and herbs are in season. I've served this for a weekend breakfast, ladies lunch and even dinner. When served for dinner I grilled chicken breasts. Possible you could cook diced chicken right on top of the pie but I haven't tried it. You may use the lower fat versions of any or all of the cheeses with good results. -- posted by racrgal

Onion, Garlic and Basil Frittata

Onions and garlic are slowly pan-cooked until caramelised and then used as the base of a delicious frittata. Adapted from a recipe on the Simply Great Recipes website. Obviously you can use your own pesto recipe or a pesto from your favourite deli in place of the commercially available one. I left the Leggo's pesto named in the original recipe in this recipe, as that makes for a quicker version when time is limited. For the best results from this simple dish, use free range eggs. -- posted by bluemoon downunder

Basque Eggs

A long time ago I had a recipe from a Basque cookbook for really tasty eggs poached in a simple stew of tomatoes, peppers, and onions. I've since lost that recipe, but this is pretty close to the flavors (though I won't claim it as authentic Basque cooking!)

This is really quick to prepare, especially if you dice your veggies as you're cooking instead of doing th prep work all up front (for example, while the sausage sautes, dice the onion, after the onion goes in, mince the garlic, once the garlic is in, dice the peppers, etc.)

This can be made vegetarian/vegan by substituting 1 tsp. oil for the sausage. -- posted by damienducks

Is It Frittata or is It Quiche

This came about when wanting to make a light quick easy tea for the DM and myself. I started out thinking mushroom frittata but then there was 1 lonely tortilla there and I decided it need to be used so the following recipe was created. I photographed it step by step (after cooking up mushrooms) and is in this thread http://www.recipezaar.com/bb/viewtopic.zsp?t=289609. I didn't accurately measure the ingredients so they are approximate as is the timing. I served with a simple salad. You could cut into small wedges and serve as you would a pizza. You could of course use other fillings other than mushrooms, I have since used steamed vegetables or left over roast vegetables or ham or cooked chicken with vegetables, let your imagination run wild or depending on what you have left over in the fridge. -- posted by I'mPat

Courgette Fritters from My Garden

I made this one day when my courgette plant had been going mad and we had a bit of a glut. They were delicious and even my little one ate them, which is a miracle in itself! I used goat feta as I have a lactose intolerance and also gluten free flour mix as I am gluten intolerant - you can use ordinary, it doesn't seem to make any difference (I've had them both ways pre-diagnosis!) This comes from Nigella Lawson's book Forever Summer - one of the books I use most. -- posted by Kiwibird #2

Perfect French Omelet (Cook's Illustrated)

From this month's Cook's Illustrated Magazine (January 2009). Makes two omelets. Because making omelets is such a quick process, make sure to have all your ingredients and equipment at the ready. If you don’t have skewers or chopsticks to stir the eggs in step 3, use the handle of a wooden spoon. Warm the plates in a 200-degree oven. -- posted by blucoat

Delaware Farmers' Breakfast

I need to use up some potatoes and already cooked bacon, and I found this recipe in 1990 Hometown Collection America's Best Recipes. It is from Charlotte Givens and was originally in The Delaware Heritage Cookbook. The recipe didn't look that exciting to me, but it I was pleasantly surprised at how yummy it was! I let the potatoes cook in the pan and didn't cook them in advance. I threw in some red onion (more like a cup--not 2 tablespoons) and green and yellow peppers for color/flavor (probably a cup as well). I used a cup of cheddar cheese and threw the bacon in right before I melted the cheese. It's probably the bacon grease that makes it so tasty. This hit the spot! -- posted by AmyZoe

Baked Vegetable Omelet

This recipe is from the vegetarian cookbook Mediterranean Harvest. It's perfect for when the garden is full of zucchini and fresh herbs. For a more authentic Greek flavor, you can use kefalotyri cheese in place of the Parmesan, if it's available to you. If you can't find Greek yogurt, you can drain plan yogurt in a strainer lined with cheesecloth overnight. I use the leftover yogurt to make tzatziki to serve with this along with some olives, crusty bread & wine. -- posted by Eat Your Vegetables!

From Recipe Magazine April 2009 - sounds and looks like a perfect breakfast for a diabetic (protien and veg. and if you want/need the carb add a slice of toast). I have changed the recipe a little - they cooked the egg/omelet first and then the veg but thought it was better to cook the veg first and keep warm in the oven.
Chard and Onion Omelet (Trouchia)

This is a simple and delicious springtime recipe from Debora Madison's essential cookbook, "Vegetarian Cooking For Everyone".
The traditional trouchia is a specialty of Nice, where slices of it are sold and eaten cold on the street. This is a very versatile recipe. You can substitute almost any green (kale, beet greens, mustard greens) serve this warm, room temperature or cold, as an appetizer or main dish, and at any meal. It even makes a great sandwich filling.
The trick to this recipe's success is to cook everything slowly so that the flavors really deepen and sweeten. -- posted by blucoat

Spanish Omelette (Tortilla De Patatas) (Spain)

POSTED FOR ZAAR WORLD TOUR 5. Along with paella, the ubiquitous tortilla de patatas - is perhaps one of the best-known Spanish dishes. It is impossible to find a self-respecting tapas bar that does not feature tortilla in its repertoire.
As delicious as it is versatile, this Spanish staple lends itself to countless variations according to personal taste. Some cooks mix in mushrooms, beans, spinach, and tomatoes, while others choose to omit the onion and instead cover the tortilla in tomato sauce. Others still would never dream of serving the tortilla without heaping mounds of mayonnaise. Each region, and each tapas bar, will have its own variation of the traditional tortilla. This delicious tapa can be served warm or cold. From http://www.spain-recipes.com. -- posted by UmmBinat

Bakinbaby's Egg & Mushroom Breakfast

Bacon, mushrooms, red pepper and onions bring excitement to the scrambled egg. If using leftover bacon drippings isn't your thing, you might try olive oil. This has become DH's favorite breakfast. Sometimes I eat one of the pieces of bacon (while DH isn't looking), so if you're like me, plan on cooking more. Adding the cheese and bacon right before serving insures the bacon is crisp and the cheese is barely melted.
revision: 7/17/09 per kate's review: at step 5 be ready and prepared to add back in the sauted veggies when eggs are not quite done, certainly not set, but not completely runny, if you let the eggs cook too much, you'll end up with over cooked eggs, no fun!!!! Then right before serving toss/fold in the fried bacon. I'm sorry this was not completley clear in my original posting of the recipe. -- posted by BakinBaby

Bethenny is very well known for this recipe and you can easily adapt this to suit your tastes.
Light, Delicious Vegetable Egg White Omelet

This recipe is a great way to start off the day without the cholesterol or fat of a whole egg without sacrificing any of the flavor! Usually egg white omelets are really bland unless you stuff them with cheese, which cancels out the entire purpose of using egg whites. Anyway, wanting a delicious egg white omelet for breakfast one sunday morning, i whipped this up and was astounded with its amazing flavor! Using a lot of veggies kept me full until lunch, and the protein in the egg whites kept me going all day. Enjoy!
This recipe can be easily altered by adding meat or different vegetables, i am a vegetarian so i didn't put any meat in. Also, change the cheeses to whatever you like, i used mozerella to keep the flavor mild.
Note: Braggs liquid aminos is a healthy soy sauce substitute that adds protein and flavor to any desired dish. It can be found at most regular grocery stores and if not, at any health food store. If you don't have braggs, use soy sauce to taste on top of omelet. It sounds weird, but adds delicious flavor to the omelet! -- posted by Chef #1290167

Tomato and Spinach Frittata

There are lots of Spinach, Tomato recipes but when I checked this one is a little different. I threw it together and liked the result. I say it is for 2 but that is if it is served with a salad and a roll. Hope you enjoy it. I like lite Havarti but use your favorite cheese. The hot spice is optional but it does give some pep to the recipe. An 8" pie plate works but it needs to have at least 1 1/2 " sides. I used an 8" x 6" casserole dish. I used adobo chili pepper for my "Hot" spice. -- posted by Bergy

I enjoy making breakfast on the weekends so I'm always looking for new recipes. I found this on another site & ended up really liking it so sharing with other Zaar cookers. I like using fresh herbs but you can sub in dried if you prefer. -- posted by Mustang Sally 54269

Dutch Oven Camping Breakfast Love

Not the most descriptive recipe title, perhaps, but this is what my friend calls it and I like the name, so there you go. Nothing wakes up your camp-mates like the warmth of a campfire and the sounds and smells of sausage, bacon, and veggies. You will NEED a REAL camping dutch oven (get the cast-iron kind with the little legs and the lip on top for putting coals on the lid - if you camp much, this is well worth the investment). You will also need two hot-pads, tongs, and a heat-resistant spatula. A long-sleeve shirt and leather gloves are recommended so that you don't singe your arms and hands. Note that preparation time consists mostly of letting the fire mature. -- posted by Da Huz
