			<description>I need to use up some potatoes and already cooked bacon, and I found this recipe in 1990 Hometown Collection America's Best Recipes.  It is from Charlotte Givens and was originally in The Delaware Heritage Cookbook.  The recipe didn't look that exciting to me, but it I was pleasantly surprised at how yummy it was!  I let the potatoes cook in the pan and didn't cook them in advance.  I threw in some red onion (more like a cup--not 2 tablespoons) and green and yellow peppers for color/flavor (probably a cup as well).  I used a cup of cheddar cheese and threw the bacon in right before I melted the cheese.  It's probably the bacon grease that makes it so tasty. 			<description>This is a basic omelette recipe that has several variations, Everyone has their own favorite -   The proper pan is important to successful omelette making.  The right size pan for 1, 2 or 3 egg omelette is about 8-inches in diameter at the base.  It should ba shallow with sloping sides to make it easier to slide the omelette onto the plate.

Always prepare individual omelettes, rather than one large one , you will find each one will be lighter, fluffier and easier to handle. 			<description>Bacon,mushrooms, red pepper and onions bring excitement to the scrambled egg.  If using leftover bacon drippings isn't your thing, you might try olive oil.  This has become DH's favorite breakfast. Sometimes I eat one of the pieces of bacon (while DH isn't looking), so if you're like me, plan on cooking more. Adding the cheese and bacon right before serving insures the bacon is crisp and the cheese is barely melted.
revision: 7/17/09 per kate's review: at step 5 be ready and prepared to add back in the sauted veggies when eggs are not quite done, certainly not set, but not completely runny, if you let the eggs cook too much, you'll end up with over cooked eggs, no fun!!!! Then right before serving toss/fold in the fried bacon. 			<description>This recipe is a great way to start off the day without the cholesterol or fat of a whole egg without sacrificing any of the flavor! Usually egg white omelets  are really bland unless you stuff them with cheese, which cancels out the entire purpose of using egg whites. Anyway, wanting a delicious egg white omelet for breakfast one sunday morning, i whipped this up and was astounded with its amazing flavor! Using a lot of veggies kept me full until lunch, and the protein in the egg whites kept me going all day. Enjoy!
 This recipe can be easily altered by adding meat or different vegetables, i am a vegetarian so i didn't put any meat in. Also, change the cheeses to whatever you like, i used mozerella to keep the flavor mild.
Note: Braggs liquid aminos is a  healthy soy sauce substitute that adds protein and flavor to any desired dish. It can be found at most regular grocery stores and if not, at any health food store. If you don't have braggs, use soy sauce to taste on top of omelet. 			<description>This dish has always been a staple in my very Italian family. It is quick and easy, and great for breakfast, lunch or dinner. My grandmother used to make it for my mom when she was little, as did my mother for me and now me for my son! I usually like to serve this dish for dinner, with the links stuffed into rolls and the rest of the mixture piled on top of the links, but I have also used it for breakfast as well. Usually when I serve it for breakfast I slice the sausage into wheels. 			<description>Julia Child urged a nation to put down their beaters, and pick up a whisk!!  When Julia Child first started teaching the fundamentals of French cooking, eveyone tended to use electric beaters for basic blending and mixing,  Then she introduced them to the whisk.  Child used whisks in numerous recipes, including sauces, creams and soups, as well as  for beating eggs.  She encouraged cooks to get a variety of sizes, including a large balloon whisk for beating egg whites.  Child featured a whisk during the pilot to her public television show The French Chef.  She used it to make an omelette. 			<description>I got this recipe from a friend....it is a Pampered Chef recipe.  It is delicious!  Just a little bit of work - especially if you want to get up and make it in the morning.  I don't move that fast in the morning so I usually make this for us for dinner in the evening and cut up and freeze the leftovers.  Pampered Chef says that you can sub the ham with 3/4 lb bulk sausage (which I did with chicken sausage!) or 1 lb bacon that is cooked, drained and crumbled.  We also used the light, flavored cream cheese.
