			<description>My friend Lisa shared this recipe with me.  Comes together very quickly and tastes great.  You could substitute different cheeses or meats very easily.  You could also put in other types of vegetables (e.g. spinach, mushrooms, red bell peppers...).  The quiche freezes well -- just cook as usual, cool, then cover with aluminum foil or freezer wrap and freeze. It is from Donna Hay's 'Tastes of Autumn' magazine but to me this sounds like an anytime of year breakfast idea!  My only additions were garlic, rosemary and sage, simply because I enjoy all of these in many savoury dishes, but I've listed them as optional.  Feel free to add your favourite herbs.  So that the omelet retains its lightness, I'd be disinclined to add anything else to it, but I'll certainly be making this with some mushrooms.  YUM!  OOPS!  Chocolatl observed - quite rightly - that I'd omitted the butter from the Ingredients list. 			<description>Amazingly, the quiche will form its own crust.  I think this quiche tastes best when its made the evening before and heated up the next morning.  If you use a blender instead of a whisk, process the Bisquick, eggs, milk, pepper and salt for about 15 seconds; afterwards, by hand mix in the onion and garlic.  Optional: Use &amp;frac12; lb Canadian bacon in place of bacon and top with tomatoes. 			<description>My husband and I come from large families, many of whom do not live close by and often stay overnight.  I came up with this Breakfast Strata when I had guests over Easter weekend. I served it with Easy Gooey Caramel Rolls and fresh fruit and it was most assuredly a hit!  Everyone wanted recipes and my husband and daughters request it often. I just made the strata again this past weekend (had bread I needed to use up) and it's always such a treat. 
Quick Note: I like to split the recipe and put half in each of 2 8&amp;quot; square pyrex baking dishes. In one, I skip the cooked onions and use cheddar cheese, for those who prefer a milder flavor. In the other, I load up on the onions and use Pepper-Jack cheese (my favorite). The recipe is so versatile that every palate is satisfied; if you like peppers or olives, just throw it in, and if you prefer additional spice, add some Red Pepper Flakes.  For my husband, who cannot tolerate spicy or hot foods and most vegetables, I keep things very simple, yet the flavor is still wonderful, and the recipe is easy to assemble, too! They loved them so much I gave them the recipe and they submitted it and it was published in a local cook book.  They named it &amp;quot;Kims Famous Breakfast Egg Muffins.&amp;quot;  This is so versatile because you can use peppers, mushrooms, sausage, bacon, ham, any variety of cheese, hundreds of combinations. So have fun with the basic recipe and create your own favorite.  You can even go more savory:  - onion or fennel, mushroom and lots of fresh herbs and swiss cheese.  Spinach, sun dried tomatoes with goat cheese.  Bacon, cheddar and onion.  Broccoli, ham and onion with gruyere.  2 cheese and just fresh herbs.  Sausage, cheddar and peppers.

If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking.  While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole.  Frozen hash browns would work too just thaw them before adding to the mix.
