This is a quick and easy quiche recipe I found at the Organic Valley website. I used Pillsbury Ready Made Pie Dough, a package of Canadian Bacon, Eggland brand eggs and various leftover cheeses. I never make it the same twice; I just use whatever I have on hand. -- posted by Chef #561055

Fresh Salsa Omelet

I made these omelets for Father's Day brunch and everyone said they were great. I don't usually make salsa from scratch but after tasting this one, I will continue to do so, unless I really need a lot! If you don't have time to make fresh salsa for this recipe, substitute 2 cups of your favourite store-bought brand. -- posted by Irmgard

Upma Kozhakattai With Thuvaiyal - a Mouthful of Joy

This is a hurried entry to my own event. Funnily enough, I was so enamoured by the beautiful entries that people have sent in, I nearly forgot about sending my own entry.
Upma Kozhakattai-now what kind of confusion is this? Upma is a mainstay breakfast in most Indian homes and Kozhakattai is something that Tamilians offer to our beloved Lord Ganesha to keep him happy. Upma Kozhakattai is none of these. This is a fine example of 'saatvic' food. Check out what 'saatvic' means here. As I write this, a doubt arises in my mind as to does food cease to be saatvic if it has chillies, even though the end result is not at all spicy.

My grandma used to make this one, once in 3 months or so- making it one of my favourite tiffins. (You get the drift? The rarer it's made, the more it's liked- or as goes the saying-familiarity breeds contempt) The common fellows like Idli, Dosai, Upma used to fall in the second category. I guess grandma would soak, dry and then grind the rice to obtain the base for making this dish. In today's times, the above three steps are replaced by these three steps-a visit to the supermarket, pick up a packet of idli-rava, pay for it!

Upma-Kozhakatti is steamed rice flour balls with a bit of seasoning and coconut. This is served with a lentil-coconut spicy and sour chutney. A small chunk of jaggery is sometimes kept inside these balls, so that you bite into a sweet surprise in the center. -- posted by Chef #1322226

Italian Sausage, Pepper and Potato Meal

This dish has always been a staple in my very Italian family. It is quick and easy, and great for breakfast, lunch or dinner. My grandmother used to make it for my mom when she was little, as did my mother for me and now me for my son! I usually like to serve this dish for dinner, with the links stuffed into rolls and the rest of the mixture piled on top of the links, but I have also used it for breakfast as well. Usually when I serve it for breakfast I slice the sausage into wheels. I hope you enjoy it as much as my family has. -- posted by rubygirl

Crab and Havarti Omelet

Skagit Bay Hideaway, La Conner, Washington. One of the most iconic foods of the Northwest, Dungeness crab is caught along the ocean coast, in the Puget Sound, and in numerous bays such as Skagit Bay. Here the sweet crabmeat is paired with mushrooms, tomato, Havarti, and green onion for a savory breakfast dish. At the Skagit Bay Hideaway, they often garnish the omelet with nasturtium flowers from the garden.

French Omelette

Julia Child urged a nation to put down their beaters, and pick up a whisk!! When Julia Child first started teaching the fundamentals of French cooking, eveyone tended to use electric beaters for basic blending and mixing, Then she introduced them to the whisk. Child used whisks in numerous recipes, including sauces, creams and soups, as well as for beating eggs. She encouraged cooks to get a variety of sizes, including a large balloon whisk for beating egg whites. Child featured a whisk during the pilot to her public television show The French Chef. She used it to make an omelette. Her method for unmolding the eggs from the pan may seem complicated, but it produces a nicely folded omlette ideal for filling. -- posted by Chef mariajane

This is a Sara Moulton recipe. She was introduced to the dish in the mid-seventies when she was dating her now-husband who is Jewish. She thought it was a wonderful "breakfast" dish -she started playing around with Boursin cheese - she likes putting the onions on top but we like our onions in and out - so that was a slight tweak!
Healthy Rolled Green Chili & Potato Omelette

I was doing a little research recently on Japanese food (when my son and I were making sushi rolls for dinner) and I came across some really great Tamagoyaki recipes. First...I had never heard of it. Second...It sparked my interest because my husband really loves a great filling breakfast with hardly any points (Weight Watchers). So I came up with this idea and came out pretty tasty. It is definately not a traditional Tamagoyaki roll, but it is my healthy american-ized version. -- posted by Melanie B.

Tomato and Spinach Frittata

There are lots of Spinach, Tomato recipes but when I checked this one is a little different. I threw it together and liked the result. I say it is for 2 but that is if it is served with a salad and a roll. Hope you enjoy it. I like lite Havarti but use your favorite cheese. The hot spice is optional but it does give some pep to the recipe. An 8" pie plate works but it needs to have at least 1 1/2 " sides. I used an 8" x 6" casserole dish. I used adobo chili pepper for my "Hot" spice. -- posted by Bergy

Pork Sausage and Egg Casserole

This is an easy to prepare, tasty dish using simple ingredients...my family loves it! If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking. While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole. Frozen hash browns would work too just thaw them before adding to the mix. Perfect for a brunch, we also love it for supper too! -- posted by Chef Learnee

Make Ahead Breakfast Wraps (Oamc)

These are quick breakfast wraps that can be made ahead for busy mornings. My kids love the breakfast sandwiches at fast food chains so this is an economical and healthier alternative. This is my own recipe, and I don't measure, so adjust the quantities to suit your tastes. These are small because my kids are little and not big eaters, so one is enough for a child or an adult who is a light eater. A serving size for an adult is two wraps. -- posted by UrbanDesiMommy

Ham and Cheese Brunch Squares

I got this recipe from a friend....it is a Pampered Chef recipe. It is delicious! Just a little bit of work - especially if you want to get up and make it in the morning. I don't move that fast in the morning so I usually make this for us for dinner in the evening and cut up and freeze the leftovers. Pampered Chef says that you can sub the ham with 3/4 lb bulk sausage (which I did with chicken sausage!) or 1 lb bacon that is cooked, drained and crumbled. We also used the light, flavored cream cheese. I used a carton of egg substitute and added four eggs. -- posted by Sky Hostess

This quiche is beautiful & delish! If you crave something savory for breakfast try my simple quiche. These are ingredients I always have on hand and can whip this up a head of time or in the morning. Measurements can be altered to taste. If you like spicy, savory add more, if not, add less. The salsa gives this quiche a nice kick and the flavors of cilantro, sausage and potatoes add to the taste and textures. This is a family favorite in my house. Great for overnight company as it feeds alot.
Dutch Oven Camping Breakfast Love

Not the most descriptive recipe title, perhaps, but this is what my friend calls it and I like the name, so there you go. Nothing wakes up your camp-mates like the warmth of a campfire and the sounds and smells of sausage, bacon, and veggies. You will NEED a REAL camping dutch oven (get the cast-iron kind with the little legs and the lip on top for putting coals on the lid - if you camp much, this is well worth the investment). You will also need two hot-pads, tongs, and a heat-resistant spatula. A long-sleeve shirt and leather gloves are recommended so that you don't singe your arms and hands. Note that preparation time consists mostly of letting the fire mature. -- posted by Da Huz
