100 Year Old New Zealand Lamb Dish - (I Have Used Deer W/This

A unique and exotic dish for the acquired taste of lamb . Not just any lamb only Imported lamb from NEW ZEALAND (because of the type of food the lamb eats) Australian lamb will do as well. It has a Kick so expect it. I Dont recommend you using American lamb as the flavor is not the same . Around Easter most stores get imported lamb from NZ (i buy all of my local stores imported NZ lamb to make sure i have enough for the year ) as they only carry American the rest of the year. This is over 100 years old but i said that to be safe . It was given to me by Grandfather who's Mother and Father was one of the first white familys to move into South Africa and they had New Zealand Lamb Imported to them to their farm. -- posted by Hotwingcooker

Easy Pavlova

A New Zealand dessert that is all the rage at the All Recipes site.
"To keep your meringue from being flat and grainy, try beating egg whites until stiff but not dry. Overbeaten egg whites lose volume and deflate when folded into other ingredients. Also, when beating in sugar, beat in about 1 tablespoon at a time, beating well between each addition. Then beat until meringue is thick, white and glossy. Be absolutely sure not a particle of grease or egg yolk gets into the whites." -- posted by WiGal

Herbed Rissoles With Mushroom Sauce

Entered for ZWT 5 - round 1. In Portugal, rissoles are known as rissóis and are usually filled with cod, minced meat, shrimp or (less frequently) chicken or a combination of cheese and ham.

The Australian rissole is generally made from minced meat without a pastry covering, but sometimes with breadcrumbs.Mostly cooked on a BBQ all year round.

The New Zealand rissole is much the same as the Australian rissole but may contain diced yellow onion and cooked on a BBQ as a healthier option during summer -- posted by Deantini

Shepherd's Pie

This is from Cook's Illustrated folks, who tinker to death every aspect of a recipe. Altho I haven't tried it yet, I wouldn't change a thing. On second thought, maybe leave out any extra salt, but that's just for me personally given sodium restrictions. Low-sodium broth seems to have plenty on its own. -- posted by Debbie R.

Zesty Polynesian Scallops

This Polynesian dish is reminscent of the uniquely tropical cuisines of Hawaii and New Zealand. It's a very easy dish to prepare, and it makes a very elegant dinner, especially paired with a dry white wine or a tropical orange-mango blend fruit juice. But remember to always take care not to overcook scallops or they will become tough. As soon as they lose their translucence and turn opaque, they are done. -- posted by NorthwestGal

Dark Chocolate and Pear Friands

These are a light tea cake. Financiers are often baked in shaped molds. The name "financier" is said to derive from the traditional rectangular mold, which resembles a bar of gold. The friands that have become popular in Australia and New Zealand appear to have been based on the French financier; however, Australian and New Zealand friands typically have additional flavorings such as coconut, chocolate, fruit, and nuts. Australian / New Zealand friands are traditionally baked in oval shapes. I found this recipe in a New Zealand paper. -- posted by Charlotte J

Anzac Day Oaty Biscuits

I found this recipe for a healthier Anzac Day biscuit on the New Zealand Heart Foundation website. It comes from a program they have done aimed at schools. I was also drawn to it because of the lack of coconut which I was finding in a lot of Anzac Day biscuit recipe. Since I am not a fan of coconut these sound perfect for me.
Gingernut Biscuits

A New Zealand biscuit (cookie). Golden Syrup is becoming more available in the US. I can find it in the British aisle of my grocery store and recently found it in the baking aisle. If you cannot find Golden Syrup, you may sub 2 parts light corn syrup to 1 part honey. These should get really hard and are often dunked in tea. I haven't made these yet, so I don't know how many it yields. The cooking time is per batch. I have posted the mixed spice recipe I found to go along with this if you cannot find mixed spice near you. -- posted by Scarlett516

Coffee Maple Walnut Muffins (New Zealand)

This comes from "Jo Sealard's New Zealand Country Cooking.". I haven't made it yet. I think instant coffee powder must be something different from the instant coffee we use with hot water to make the beverage because she says nothing about heating up the milk first. US instant coffee granules wouldn't dissolve w/o heating the milk. Therefore, anyone making this needs to find the powder itself or heat the milk somewhat and then let it cool back down so that it doesn't cook other ingredients (I would think). -- posted by Debbie R.

Carolanne's Anzac Biscuits

This recipe was shared by my friend, Carolanne, who was born and raised in New Zealand. She is a terrific cook! ANZAC stands for "Australian & New Zealand Army Corps" and is celebrated on April 25 in New Zealand. They were one of the items that would be sent to soldiers from home during World War One because they could survive the long journey by sea, and remain edible (and nothing hinders homesickness like home baking!). Over the years, softer, chewier versions of the biscuit have evolved, commonly including rolled oats, coconut and golden syrup. Eggs never feature in true Anzac biscuits, as eggs were in very short supply during World War One. Enjoy! -- posted by Nif

Carolanne's Shepherd's Pie

This recipe is from my friend, Carolanne, who is from New Zealand. The idea was that for a Sunday Roast, in New Zealand, the family would have a roast leg of lamb. One of the meals prepared from leftovers was shepherds pie. As leftovers, you would include not just the meat, but also the mashed potatoes, the gravy, and vegetables, usually carrots and maybe peas, depending on the season. You can substitute ground beef for the lamb is you prefer. Enjoy! -- posted by Nif

Lentil Tomato Pie

A deliciously filling pie loved by vegetarians and meat-eaters alike. Perfect for taking to picnics and potlucks or served with soup on a winters day. A pre baked bought pie crust can also be used. The pie crust works well with both wholewheat and half and half flour as it gives the crust more substance, however, white flour can be used if preferred. This pie can also be made without a crust on top. It works just as well, cuts down on fat and still looks and tastes delicious. -- posted by the_allergic_chef

To Die for Coconut Pie! (New Zealand)

There doesn't seem to be anything similar on Zaar yet, so this had to be posted!! This is a wonderful, versatile 'pie'. I serve it cold with thick yoghurt and passionfruit pulp, however others like it warm with ice-cream. It's totally up to you. If you like a very moist cake with a tang, then you'll love this - it's to die for!!
Note: My mum uses milk and coconut extract instead of coconut milk, so that could be an option. -- posted by Mellowpuff
