Aunt Robyn's Simple Sweet Potato Casserole

I detested this stuff growing up...it was bland sometimes bitter & always the dish that MANY at my family gatherings would pass on over the years. Some years ago I became intrigued by wanting to make this traditional holiday fare into something that would be scrumptious to taste and be eaten up, so I worked and experimented. Finally I came up with this recipe. My family really LOVES it and often friends and family go back for 2nd and 3rd helpings. Without further ado.. here is Sweet Potato/Yam casserole. -- posted by Chef #228517

Bubble N Squeak Patties

This is another recipe I got from "Brain Foods for Kids: Over 100 Recipes to Boost Your Childs Intelligence" a mail in offer I got from Kashi. The whole family seems to like it pretty well. We usually do these for breakfast when we have leftover mashed potatoes from a dinner. I sometimes substitute fresh spinach or even bok choy for the cabbage. Also the recipe originally called for the patties to be coated in flour and fried in sunflower oil, but I omit the flour coating and just spray the pan with olive oil spray to cut calories and fat. -- posted by DbKnadler

A quick and easy microwave dish that tastes like you spent hours whipping it up. This is my stepped up version with more flavor than the bland recipe on the box. Tapioca is my favorite comfort food, but hubby and I have an ongoing disagreement about whether it should be served chilled - I like it slightly warm, hubby likes it chilled.
Old English Posh Picnic Raised Chicken and Ham Pie

I will not pretend that this pie is easy or quick to make, however, if you want to impress your friends or family with a sensational "posh" English raised pie then this is the recipe for you! Tender chunks of chicken with pork sausage meat and ham are encased in crisp hot water crust pastry, liberally seasoned with spices and herbs; this pie makes a simply stunning centrepiece for any Glyndebourne style picnic event or for a special celebratory cold buffet, such as weddings, christenings or anniversaries. The pastry used in this pie recipe is hot water crust pastry, which is a direct descendant of "coffer" paste that was used to encase and protect meat whilst it cooked centuries ago – the pies then being called “coffyns”! The pastry is shaped by hand whilst it is still warm, and is excellent for using with intricate pie moulds - the technique is known as "hand raised" and pies made this way are called "raised pies". The pastry is easy to make, but MUST be kept warm whilst you are using it - I keep mine warm over a pan of simmering water. This pastry is excellent for all types of traditional raised pies, such as Game pies, Pork pies and Veal and Ham pies. (Preparation time includes the one day needed for the pie to cool down and then for jellied stock to be added, and then allowing for the jellied stock to set.) -- posted by French Tart

The kids love to help out in the kitchen when we make these. -- posted by Um Safia

Lunchbox Blueberry 'sundae'

I put this in my daughter's school lunch a couple of times a week. She loves it. The fruit and cottage cheese are good for her, and the sprinkles make her feel like she's eating a dessert rather than a healthy dish rich in protein, calcium, and vitamin C! I like this as a snack, but with cinnamon and sliced almonds instead of the sprinkles. Also great with a little wheat germ. If making to eat right away instead of packing for a lunch, use fresh or thawed blueberries. Blueberries can be thawed in the microwave for a few seconds at a time. -- posted by SrtaMaestra

The Most Amazing Macaroni and Cheese in the World!

Refried Beans Made in Olive Oil

I love this recipe. Not only is it easy and cost effective, it is a healthy alternative to the lard that is used in traditional refried beans. This was one of the very first things my son ate as I weened him from formula. The high iron content makes this dish excellent for toddlers and anemia sufferers. This recipe makes enough to use with three or four meals depending on the number of people. I usually divide the batch into thirds and freeze the two I don't need right away. Expect compliments galore when you make this recipe. In fact I think it tastes better than the beans I have had at Mexican restaurants. Enjoy and happy cooking :) -- posted by Leahferne

Real Chicken Noodle Soup

This is homemade goodness! I was disappointed by the number of recipes I saw with bouillon or broth in them. My favorite chicken soup is made with a whole chicken, water, and veggies... and the taste is pure and delicious. No MSG or other fillers getting in the way. To make this truly from scratch, you could make your own egg noodles as well (try recipe # 95311) but pre-packaged ones do fine too. Adjust the noodle amount to how you like it... either a lot of noodles or a little. Enjoy this soup when you are under the weather or just as a warm comfort food. We love it served with a nice crusty bread with butter. Oh, and my 2 year old loves this too! It's perfect for little fingers and noodles and veggies are soft for them to chew. -- posted by Dans La Lune

Delicious Organic Green Smoothy

When my breastfed daughter was around 10 months I started noticing something wasnt quite right, so I went to my Midwife & it turns out I had extremely low iron. Normal is 12 & I was at 7. She told me to be sure to eat my leafy greens, we'll in the hot humidity of South Western Florida the cooler your food is the better! This is so good, my daughter & I drink one every other day now & my iron level is up to a 13 after just one month!!! I can just imagine what its done for her!

I have tried many variations to switch it up a little, adding yogurt makes for a smoother texture (and the active cultures never hurt) Apple Juice can be substituted if you dont have OJ in the house. Mango (i used frozen to avoid the prep) Use your imagination -- posted by mrs.cubana

Pancakes With Jarred Baby Food - Simple and Very Tasty

It is a trick to get my kids to eat veggies, so I started using jars of baby food in pancakes to boost the nutritional value. I prefer the orange vegetables such and carrots, sweet potatoes, and corn and sweet potatoes. The pureed consistency mixes easily into the pancakes and the flavor I have found can be quite tasty. It isn't just for the kids, either. This is so flexible I have used jars of fruit too, but since the veggies are the hardest thing for me to get my kids to eat, I usually use those. You can add wheat germ for an added nutritional boost. I like to use the Log Cabin Lite syrup - there is no high fructose corn syrup and the reduced sugar does not seems to reduce the taste at all. These can be frozen or refrigerated after being made for easy make ahead breakfasts. You could also use pancake mix as your dry ingredient base, I suppose. Have fun! -- posted by Mama Wendy
