Barbecue /Bbq Mushroom and Green Bean Salad

This salad serves 8 as a side dish & is delish! It tastes of earthy goodness.
The photo you see is of half the recipe + extra spinach.
I prepared the mushrooms in a frying pan for convenience' sake and served the salad with a baked potato.
Next time, I think we'll add some garlic to the marinade. -- posted by Rhiannon&Matt.gauci

Dark Chocolate No Bake Cookies

Lower Calorie Quick Hot Fudge

Caramelized Onion on Your Indoor Grill

I only recently discovered caramelized onions and discovered this technique by mistake when I was grilling chicken and some vegetables one day on my counter top George Foreman. I realized the onions started to look and smell just like caramelized onions made on the stove top. I have started making my onions this way since then. I love to use it in sandwiches. I usually make one serving for myself, which is how I wrote the recipe. Just up the amount of servings if you wish. -- posted by Roxanne J.R.

Roasted Pork Chops With Caramelized Quince

This is a meal suitable for a cool, autumn dinner. The pork chops turn out moist and savory and pair nicely with the sweet and somewhat tangy flavor of quince. I like to eat a slice of quince with each bite of pork chop, as the combination reminds me of harvest season. If you are unable to find quince, two large apples would substitute well (any tart variety such as Macintosh, Granny Smith or Cortland). -- posted by MarthaStewartWanabe

Pear Bread Pudding With Jack Daniels Sauce

Adapted from Jr. League of Jackson, MS cookbook Southern Sideboards, "Ramada Inn Bread Pudding" recipe.

I add pears and cranberries for variety and when our old fashioned pears come in season late fall.

This is a great brunch dish substitute for french toast if you leave off the Jack Daniels sauce! -- posted by REALtorFOOD

No-Salt White Bread

Very simple white bread recipe for breadmaker (if you're clever you can adapt for oven!) Whole wheat flour could be substituted. This is originally a medieval Tuscan recipe, created by peasants who couldn't afford the high taxes on salt.
Vinyl Lager Crock Roast

I bought a six pack of Magic Hat's spring seasonal (Vinyl), and loved it so much I wanted to cook with it. Since I normally use deep, dark beers (like Guinness) to cook, and usually only for beef or vegetable stew, this was a bit of an experiment. All day, my apartment smelled AMAZING. Since I had to buy a three pound roast (the grocery store seems to only have VERY large roasts), and I'm only cooking for two people, this made a LOT of leftovers.
I don't usually measure anything, so I'm guessing on a lot of this. Adjust everything to your taste. As for the veggies, I used two small white potatoes, 1/4 of a large vidalia onion, and about 1/2 cup of sliced carrots. Use what you like! The blend of spices is my usual go-to blend, again... use what you like. Recipes are made to be adapted! -- posted by IndinaMarie

Chocolate Christmas Trees

Something I want to try next Christmas. These are little decorative (and edible) trees that can be stuck into cupcakes, cakes, or whatever you like. If you don't want to use toothpicks, the trees can be laid flat rather than standing up.
Spiced Pumpkin Butter

Pumpkin butter is one of fall's great all-purpose spreads. Spice up breakfast by using it on pancakes and muffins. For a quick appetizer, spread pumpkin butter on toasted bread with slices of your favorite cheese. Experiment with different flavors; add a dash of cayenne pepper or a drizzle of honey. Each serving is 2 tablespoons. I found this recipe in Better Homes and Garden magazine.
Lemoniest Lemon Squares

These are the best lemon bars I've ever tried. They have a fabulously buttery crust, a not too sweet or too tart curd-like lemony filling, and a thin chewy top. The recipe is from San Francisco pastry chef Emily Luchetti's cookbook, "Classic Stars Desserts". With more than a cup of fresh lemon juice, the lemon flavour is really pronounced, the filling sets up real well and the dusted sugar makes for a beautiful presentation.

NOTE: The squares can be made a day in advance, covered and refrigerated. Bring to room temperature before serving. Dust with confectioner's sugar before serving. -- posted by blucoat

Uyghur Polo (Pilaf)

Polo (a Central Asian variant on the word pilaf) is a food staple found across Central Asia, including Kazakhstan, Kyrgyzstan, Uzbekistan, Turkmenistan, Tajikistan, and parts of northwestern China. The different peoples of each region have their own takes, and their own flavors, for the recipe. This recipe is for Uyghur polo, the variant of the dish found in China's Xinjiang Uyghur Autonomous Region. Uyghur food is on the whole closer in taste to Indian, Persian, or Mediterranean food than it is to conventional Chinese food.

I credit this recipe to my Uyghur language instructor. The recipe can be a challenge to cook correctly at first, but the challenge will prove well worth the effort because it is absolutely delicious. -- posted by mpevans

Ginger Butternut Squash Soup

The combination of ginger and butternut squash is delicious and addictive. This recipe yields a creamy soup without the use of any cream. I love to whip this soup up with my immersion blender right in the pot. This soup also freezes well. You can serve it with a dollop of sour cream if you desire, although I serve it without a garnish. If you want to make this a completely dairy free soup, use dairy free margarine (Fleishman's unsalted, or Earth Balance.) Oh yeah, and you MUST use fresh ginger. -- posted by Lee Hock

Peanut Butter Granola

Here's a healthy granola that doesn't have a lot of oil, but has a lot of good-for-you ingredients in it. It's good sprinkled over vanilla yogurt or with milk -- or out of hand as I walk through the kitchen! I bake it at 325 for about 40 minutes, but my oven is going wonky, so I put the recipes original instructions here. You can substitute orange or cranberry juice for the apple juice. I've used almond butter instead of peanut and it turned out great. My picture shows goji berries and dried blueberries instead of raisins. -- posted by wife2abadge
