Not-Like-The-Others Seafood Lasagna

This is a nice, lighter seafood lasagna. No cottage cheese. No mozzarella. No cream-of-anything soup. The secret is the SWISS CHEESE sauce - sounds crazy, but it works really nicely with the other flavors. I am generally not a fan of imitation crab (nothing's as good as the real thing!), but in this case you need the firmer texture to hold its own with everything else. It's 7 WW points/serving. -- posted by Amy020

I always have some type of smoked sausage in my fridge, because it lets me get supper on the table in a hurry during the week. This recipe was in a Taste of Home booklet called "No Fuss Freezer Meals", and makes two very large casseroles. We always add way more garlic than the recipe calls for, and use a spicy chipotle sausage. -- posted by Sweet Jezebel

Parmesan and Pepper Pasta

I like to eat this pasta after it's been refridgerated - it helps bring out the flavors and kick that the red pepper olive oil adds. However, it's still good when it's hot!
*By the way - I had to guess on the number of servings and the size. Usually I use half of this amount and it makes two fairly generous servings! -- posted by Chef #1045824

Mee Pok Noodle (Singapore Style Noodles)

Recipe is taken from a blog - teczcape and serves well in satisfying my craving for this singapore-styled dry noodls, having stayed away from Singapore for a number of years.

For those who are not familiar with Mee Pok
Mee pok is a type of Chinese noodle that is flat and yellow, often varying in thickness and width. Most hawker stalls (Singapore, Malaysia) mee pok come in two variants- fish ball mee pok (hee wan mee), and minced meat mushroom mee pok (bak chor mee).

The sauce in which you toss the noodles is an important aspect of the dish, and is often considered a representation of the cook's skill and experience. The importance of the sauce in mee pok can be thought of similarly as the sauces that accompany pasta. The sauce consists of four components: chilli, oil, vinegar and other condiments such as soy sauce and pepper. -- posted by Babibu

Baked Penne With Sausage and Spinach (Oven or Crock-Pot)

This baked pasta recipe is great for a potluck, or to take to someone who is in need of a home-cooked "comfort" meal. It's very flavorful, simple to prepare, and inexpensive to make. You can bake it in the oven or make it in the crockpot (instructions included). I particularly like the blend of fresh and zesty ingredients (spinach, fresh mozarella, pesto and hot sausage).

The Most Amazing Macaroni and Cheese in the World!

This macaroni and cheese is TO DIE FOR. People inhale it and drool over it as it's cooking, the aroma fills the whole house. Once it's on the table, it's gone in 3 seconds flat. It's pretty much AMAZING, if I do say so myself. DON'T skip any steps or substitute any of the ingredients, you have to make it just as it is for it to be amazing. NOT for the faint of heart! Quite an indulgence (look at the ingredients), but it's COMPLETELY worth it. It's the only way to make macaroni and cheese. -- posted by 'Cause I'm awesome

Red Pesto Lamb With Pasta (Oamc)

Red pesto has tomato and slightly less basil than the regular green pesto and is perfect for this recipe. If you like spaghetti bolognese you will also enjoy this red pesto lamb with pasta dish. The rich and tasty red pepper and tomato sauce makes a perfect partner to the ground lamb.
If you want to cook ahead and freeze this dish then. Cool, cover and freeze in a freezer-proof container for up to 3 months. Defrost at room temperature. Tip into a saucepan, add a splash of water and reheat for 5-10 minutes until piping hot. -- posted by English_Rose

Lasagna Squisito (Exquisite Lasagna!)

This is the culmination of my lasagna experimentation... I didn't see another recipe here that was quite like mine, so I decided to share! I usually make my meat sauce with ground turkey, but it is good with ground beef, too, or "meatball mix," which consists of ground beef, pork and veal. You can also cut the amount of meat in the sauce by one half and supplement spinach, if you like. It's best to experiment with the seasoning levels as you cook, based upon your preferences... I add lots of garlic to mine, and if I am using beef or a beef mixture, I toss a splash of red wine in the sauce. I also make my layers very thin. Oh, and this freezes and reheats well, if you are the make-ahead type! -- posted by Foxgirl

Our Favorite No Boil Lasagna

I found this recipe a long time ago on a box or jar, we've made our own additions to it over the years. Everyone always comments on the great flavors and the secret is the sausage- we use breakfast sausage for a great slightly spicy slightly sweet taste. You can use any red pasta sauce that you like- we LOVE a roasted red pepper and onion flavor because it complements the sausage really well. Enjoy! -- posted by sarahbeier

Spaghetti With Tahini Sauce

A twist on a classic, this vegan recipe uses tahini to increase the protein and add a nice mellowing nutty flavor to spaghetti sauce. It's really easy to make and very yummy. I like to make a batch for the week and take it for lunch; keeps well for several days in the fridge. I also use whatever pasta I have, and try to keep the whole-grain or sprouted varieties to increase the nutritional value even more. The ingredients reported here are direct from the book; I use 3 TBSP Tahnini and 6 oz Tomato paste, to make it slightly less nutty and more tomato-y. I got this recipe from the book "Vegan Cooking for Everyone" by Leah Leneman. -- posted by Chef #239578

Veggie " Everything but the Kitchen Sink" Pasta Sauce

I love chunky garden vegetable pasta sauce, and after trying a few on Zaar I modified my favorite spaghetti sauce recipe recipe #22782, to have fresh tomatoes instead of canned, lots of fresh vegetables, and less fat from the meat. Easily hearty enough with vegetables to omit the sausage for vegetarians.

I find it easiest to prepare the ingredients first. Slice, dice, puree, open cans etc. For stronger garlic flavor, "crack" the garlic open about ten minutes before mincing to give the oils air exposure. Use whichever ingredients you love most. The more juicy your vegetables the less water you need as the sauce will thin as the vegetables cook. It's easier to start with thick sauce and thin in out than to try to thicken the sauce later.

My instructions may seem a little elementary for some more advanced cooks, but as I learned how to do many of these techniques while developing this sauce, I wanted to include them for more novice cooks. If you have any suggestions or corrections please let me know. -- posted by @ home in SF Bay

This recipe was posted on coconutlime blog spot and copied it so I can share it with my friends. It is a little labor intensive but worth the effort. A great way to use butternut squash and swiss chard. My deviation from the original recipe is to add mozarella cheese to make it even cheesier. I found the original recipe didn't bring out the flavors of the fresh herbs. This is also great served as a side dish (about 20 servings) but we tend to eat it as a main course with a green salad and garlic bread. -- posted by Sherri at the Beach

Vegetarian Lasagna OAMC (Makes 3 Meals)

I created this recipe to get my kids to eat more vegetables and so we could have a great vegetarian lasagna that was not store bought. It's a little labor intensive so I usually make three at a time and freeze two. It's not that much work to make more, and then I have a meal I can take out of the freezer and pop in the oven!
Nikki's Lasagna Rollatini

*NOTE:Recipe has been updated and fixed since the first review.**
Like lots of people I had been seeing the commercial for Olive Garden's new dish, the Lasagna Rollatini with Fontina cheese sauce and wanted to try it soo bad. For those that haven't, a rolled up lasagna noodle stuffed with four cheeses and spinach, oven backed with a white cheese sauce with tomatoes and spinach. But like most times, i just haven't had time to go and try it. So after doing a lot of searching through ideas, I came up with my own Copycat version. My husband doesn't even want to try it now, saying it wouldn't have anything on this recipe! But he can be a little biases. :-) Let me know. Also, this makes a lot so can easily be halved, especially if you want to have some breaded chicken with it. This makes A LOT! -- posted by Lil' Miss Nikki

To create an eggless pasta with any type of flour, substitute about 2/3 cup water for every two eggs.

Personal note: the olive oil in this makes it more workable for filled pastas than would be a fat-free dough. -- posted by ZoeB

Mary's Savory Marinara Sauce

This is my mom's delicious marinara sauce recipe that she kindly provided to me. I have fond memories of her making this sauce often and filling the entire house with its wonderful aroma. It has a savory tomato-y taste, a nice hint of basil, and goes well with all types of pasta (including lasagna). I also like to use it for homemade meatball heroes.
Baked Manicotti With Prosciutto

This recipe is from America's Test Kitchen on PBS.

Their introduction: "The test kitchen prefers part-skim ricotta for manicotti, but whole or fat-free ricotta can also be used. We also prefer Barilla no-boil noodles for their delicate texture resembling fresh pasta. Note that Pasta Defino and Ronzoni brands contain only 12 no-boil noodles per package; the recipe requires 16 noodles." -- posted by SweetPeaNC

Originally posted on VegWeb.com by beep_i_am_a_robot. I haven't made this myself yet, but I want to get the nutritional breakdown. I plan to tweek by reducing the salt content (using Bragg's amino rather than soy and leaving out the salt), reducing the fat and increasing the tofu (several reviewers on VegWeb have done this and liked it).
Creamy Chicken and Kabocha Squash Shells

Don't be deceived by the lack of added seasonings. It is full of flavor! Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese! Delicious! Even my daughters loved it!
Boxing Day Festive Roast Pumpkin and Cheese Lasagne - Lasagna

Roasted pumpkin and creamy cheese lasagne (lasagna); a Boxing Day special - although I have made this for Christmas Eve too! This is a wonderful addition to the festive vegetarian table, but is ALSO hugely popular with meat eaters. This is my adapted version of Nigella Lawson's pumpkin lasagne; I have changed a few of the methods and added (as well as omitted) a few ingredients! Boxing day is the day after Christmas day, also called St Stephen’s Day – the 26th December; it is a public holiday in the UK and most Commonwealth countries……….generally a turkey curry day, or a turkey-free day, one of the two! Serve this with a large bowl of salad and some crusty bread for mopping up the delicious sauce. -- posted by French Tart

This is a PHENOMENAL recipe from Fine Cooking. I have made it for company and everyone raves over it. It's labor intensive but SO worth it. It either makes one huge pan or two smaller ones. I have found that making the ragu the night before makes the preparation a lot easier.

Two minor substitutions I have made: (1) I use the already prepared ground chuck and ground pork from the meat section of my grocery store. (2) I have always used either regular dried lasagna noodles or no-boil noodles. -- posted by CFRP

Best Ever Red & White Sauce Lasagna

This is the absolute best tasting lasagna I have ever had. The red sauce offers sweetness and the white sauce gives it a warm creaminess. I came up with this recipe for my sister who doesn't eat pork, but have made it many times with traditional pork Italian sausage. Either way its yummy, hearty and sure to impress. -- posted by Shamrockjulie
