You Must Be (Tandoori) Nuts!

Here is a spicy mix that features a variety of nuts and a south Indian theme. Anyone who enjoys a good curry, or any other spicy food for that matter, will be enjoying these by the handful. If you're planning a large get together, I recommend adding a bit more salt and some mini pretzels to stretch the snack mix a bit.
Spicy Thai-Style Beans With Coconut Milk (Vegetarian)

This is a vegetarian dish. If you love spicy dishes like my family, then you will love this! The red curry paste is very hot so you might want to adjust the amount starting at 1 tablespoon, for our tastes I use about 2 tablespoons, the hotter the better LOL! You can find red curry paste in the Asian section of your supermarket or in any Asian grocery store, I use it in many dishes! The complete recipe is made on top of the stove in very little time, but has tons of flavor! -- posted by KITTENCAL

Cheat's Easy Spiced Couscous With Fruit and Nuts - in a Jar!

A Brilliant and easy accompaniment to a Fragrant Tagine, Stew or Curry. It's a cheat's recipe as you can pre-mix all the dry ingredients together & store in a jar ready for use at the drop of a hat. Just add hot water or hot stock and voila, a wonderful fruity, spiced couscous! It can be used cold for picnic & buffet salads - cold cuts of meat, such as diced cooked chicken breast can be added too. Also a great veggie main course - just add chargrilled vegetables and mix through - serve with flatbreads, pitta bread & harissa dressing for an extra kick! -- posted by French Tart

Thai Aubergines Scented With Coconut

The best aubergines for this are the baby sized Japanese ones but regular also works ok. Although aubergines do not need to be salted to take away their bitternes nowadays the salting in this recipe reduces the amount of oil they absorb.

Creamy Coconut Thai Curry

The version below is fairly mild, but if you prefer it a little hotter, just add more chilli to taste.

Peanut Chicken With Jasmine Rice

This is a dish you will probably need to play around with as everyone has different tastes for peanut chicken, I suggest you start with the ingredient amounts stated in this recipe and mabey adjust slightly to taste, you will know after you make this dish a few times how you prefer it. You also might want to add in a tablespoon or two of fresh cilantro. Adjust the cayenne to desired heat level that you like. I would suggest to prepare the peanut sauce before you start cooking the chicken thighs. -- posted by KITTENCAL

Volcanic Eruption

This is a cooling coffee drink that has a slight hint of heat! Chilis in small amounts stimulate circulation and the digestive processes. But when consumed in large amounts it will cause a cooling effect (so add the amount you like). This helps to explain why people living in hot tropical climates are apt to eat a lot of them. The cooling sensation is produced in two different ways. In one way the body (especially the face) starts to sweat; the more perspiration that gathers on the skin, the cooler a person will feel. The other way is through the release of endorphins by capsaicin into the bloodstream of people who eat them. These natural opiates in the brain affect the body’s own internal temperature, lowering it a few degrees. Made for RSC #10

Roasted-Garlic Chutney

When you think of chutneys, the word *dry* doesn’t usually come to mind – but this chutney with change all that. This potent condiment of roasted garlic, chilies and peanuts is a favorite in the western state of Maharashtra, home of Mumbai (Bombay). Use this chutney as a spicy rub for any meat, fish or poultry prior to grilling or roasting. Or mix it with cream cheese for a great sandwich spread or dip. Note: Tempted though you may be to roast all the ingredients at the same time, following the suggested roasting order ensures recipe success. Some of the spices have a tendency to burn faster when they are mixed with the slower-roasting garlic slices.
Mixed Spice - Traditional Old Fashioned English Pudding Spice

The aromatic scent of holidays and Mum's home baking, mixed spice is an essential jar on the spice rack. Mixed spice is a blend of sweet spices traditionally used in English cooking to provide a warming backnote. This typically English spice mixture can be purchased ready-mixed, but I prefer to make my own, as I find it difficult to find in France and I have my own special blend. It is essential for fruit cakes, Christmas plum pudding, mincemeat and hot cross buns; mixed spice is also a great addition to other fruity desserts such as apple & fruit pies, crumbles and compotes. Try it in cream cheese desserts, pickles, chutneys and mulled wine too. Make it up and buy the spices needed in small quantities, as the mixture soon loses its full rich flavour. Allspice, cinnamon, cloves, nutmeg and ginger are the usual blend of spices, but I sometimes like to add a few ground cardamom seeds as well as some ground coriander seeds. This spice mixture makes an unusual and attractive gift - tie a ribbon around the neck of the jar, with pretty paper and then add a seasonal recipe tag. -- posted by French Tart

Christmas Morning Jewelled Muffin Mix in a Jar

Delightful festive spiced muffins, studded with jewel coloured fruit and nuts - just the thing for Christmas morning! I love all types of "mixes" in a jar! Soups, biscuits, spices, cookies and cake mixes etc! However, this muffin mix is my favourite - it makes a wonderful gift, or I make it for us, as it looks so pretty & festive sitting in the kitchen waiting to be baked! Try to use really colourful dried fruits with a good mix of tastes and textures. For those of you who cannot source Mixed Spice, an essential ingredient, I have a recipe posted on Zaar: Recipe #266688. This muffin mix is always popular as a gift, and I do try to find unusual shaped jars and hand-made paper or card for the baking instructions. A wooden spoon tied around the neck of the jar is another winning idea - and don't forget the Holly sprig! -- posted by French Tart

Gingered Butternut Squash Soup With Spicy Pecan Cream

Dean Fearing loves the holiday feel of butternut squash, especially when it's cooked with ginger, as it is for his smooth, gently sweet soup. He tops it with whipped cream flecked with chopped pecans for a number of reasons: "Usually holiday soups have a dollop of cream-adding pecans gives it a dollop of flavor. And crunch. I think everything should have a little bit of crunch to it. Plus, this is Texas, and pecans are in Texas." Recipe by Dean Fearing from Dean Fearing's Dallas Thanksgiving.
Chile-Lime Peanuts

A traditional Oaxacan bar snack, these lime- and chile-flavored peanuts are typically deep-fried in pork fat. The folks at Chow lightened them up by roasting them in the oven for a quick and easy snack without sacrificing any flavor. Try them out at your next cocktail party, and don’t be put off by the amount of garlic—roasting sweetens and mellows it. -- posted by Sandi (From CA)

Szechuan Peanut Sauce * Exported from Mastercook *

After many years of searching for and trying many, many other recipes, this remains my favorite spicy peanut sauce. My favorite way to serve it is as a dipping sauce for long, fresh green beans, an idea I picked up from a caterer in Gainesville, FL (if I could remember her name, I'd give her credit).

Many years ago, I had an edition of MasterCook recipe management software. As technology changed, my software became out-of-date and unusable, but I didn't replace it because I saw the benefit of web-based software such as RecipeZaar (why try to manage recipes all by yourself when you can be part of a community and do it together). After years without this recipe (I never could find where I wrote it down or printed it), I tracked it down in Google. I've added it to RecipeZaar to keep for myself and share with others.

The recipe is exactly how I found it, including the name, ingredients, directions, and the notes (see below). The only additional notes I would suggest are: add the chili oil one teaspoon at a time, tasting in between, until you reach your desired level of spiciness; and keep the sauce thoroughly chilled or heated, it will separate at room temperature.

Enjoy!

ORIGINAL NOTES

Recipe By: Jo Anne Merrill

Use about 1 tablespoon of sauce per serving of chicken or fish.

*Cilantro is usually sold in small bunches. You will need only about 1/3 of an average bunch or 2-3 of the stems with leaves attached. It may also be sold as coriander or Chinese parsley. -- posted by lchelini

Isabel Cruz's Spicy "Shoestring" Party Menu for a Sultry Late-Summer Night - CBS Morning Show, 09/01/2007. The San Diego-based chef likes to marry the tastes of Latin American cooking she grew up with to the Pacific Rim tastes she's come to know as a Californian. But most of all, Cruz likes to keep her cooking clean, fresh, flavorful and healthy - she likes to go for flavors that pop and offer contrast to one another. She has 5 restaurants on the West Coast, from Portland, Ore. down to San Diego, Ca:). She has also published a cookbook "Isabel's Cantina."Growing-up, Isabel's friends were Puerto Rican, Cuban, Peruvian, and she also spent time with her Asian friends learning Japanese, Chinese and Korean cuisine. Thus, was born her fusion of different flavors. "This is a Thai appetizer of shrimp wrapped with coconut, peanuts, and chiles in a leaf. She likes to use raw collard greens as wrappers for these spicy little snacks, which she drizzles with a little guava sauce to complete the hot-sweet Thai flavors while also bringing these bites further into the Latin realm. Prepare these ingredients in advance, and then assemble these at the last minute." She was given a $60 budget to create a dinner menu for 6 people - thus: Chef on a Shoesting. -- posted by Manami

Crab Balls With Grapefruit Salad

Crab Balls with Grapefruit Salad Recipe by Jean-Georges Vongerichten The crab and grapefruit in this dish first appeared at the restaurant Spice Market tossed with cold glass noodles. Jean Georges Vongerichten decided it was a "messy pile," but liked the flavors, so he reconfigured them into crab balls rolled in panko (Japanese bread crumbs) and sesame seeds. The side salad is a fabulous mix of tart (grapefruit), spicy (Thai chile) and sweet (ginger syrup). ;) F&W Magazine, From: Jean Georges's Best Small Plates, Published, July 2006 edition. 2 hr 20 min freezing and thawing time. -- posted by Manami

Spicy Prawn Soup

Right now, the temperature is 49 degrees & I live in South Florida. The compressor for the heat on the first floor of the nursing home is broken, can you imagine? We don't even have clothes for this weather -- I think I'll spend some more time in my room in my flannel granny gowns - that my daughter insisted I have! So I found this recipe this morning, we made it and it's great! ;) A quick and spicy wok-based soup means one pan, zero fuss and supper's on the table in 20 minutes. Good Food Magazine, November 2007 edition.:) If you can't find a can of coconut milk, use a block of creamed coconut or a carton of coconut cream, diluted as instructed. -- posted by Manami

Taken from an appetizer cookbook I have, but modified a bit for our tastes. I make a peanut sauce to serve with the mango dip as well. Make some fried rice and serve with some wontons or egg rolls!! Prep time includes marinating. -- posted by KPD
