Chewy-Ewwy Granola Energy Bar

This is a modified energy bar from Mollie Katzen's Protein Bar recipe, found at {http://www.fabulousfoods.com}. I try to steer clear from dairy as often as possible and it was tough finding a granola/energy bar recipe that didn't use milk or yogurt. So I kinda took what I liked from this recipe and left what I didn't and added a few other things. It's a really great tasting bar that is egg-free and dairy free (except for the chocolate chips, use carob chips instead or just omit them altogether if you want a truly vegan bar) and packed with nutrition. They're pretty sweet so if you like a less sweet bar use less sugar, choose a less sweet nut butter, and/or substitute dried fruit and chocolate chips for nuts and carob chips. Eat one fresh out of the oven then freeze the rest in freezer zip-bags. Just make sure to defrost or warm them before eating. They're great for breakfast, gym snacks, workday pick-me-ups, and even after-school snacks (I'd bake them in a cookie shape for the latter purpose). -- posted by Annie Made

Easy Tapas

i often have problems finding the right starter. This is perfect, especially if you have something going on in the oven or are serving a lighter dinner or another variation of Tapas. These are also nice as a late dessert served with some heavier wine as you would do if served as a starter.I often need something good and healthy around 3 or 4 p.m and i have made these and enjoyed a cup of Earl Grey Tea with them. Kids friendly i recommend apple juice.
Note: i use light home baked bread, evoo and organic honey for these Tapas. If you honey is hard you can make it liquid again by putting the jar into cooking hot water.
ATT!The amounts are of course some kind of guess. It depends on your bread in how many slices you want/ have to cut it. -- posted by Iceland

Goober Peas or Boiled Peanuts

A southern treat my husband was craving from his childhood in Florida. I'm posting the recipe so I have it handy in my cook book. :) Never tried them myself so I'm anxious to what his fuss is about...

Boiled Peanuts Recipe

Judging from the many variations on recipes for boiled peanuts, there appears to be no wrong way to boil green peanuts. The important thing is the many tastings needed to determine when they are done. You must taste test the boiled peanuts for saltiness and firmness, as some people prefer soft nuts to firmer ones. You can also add spices to add different flavors, I see canjun flavor is popular as well as adding hot sauce or cayenne pepper to the boiling mix to add kick I don't know how much though I assume it's preferential.

*NOTE* I'm using a bag of roasted peanuts still in the shell as I am in California and this is all I could find in the store. Also it seems Valencia peanuts are recommended because they have better flavor but my package doesn't say what type they are...My research says Valencia are the most common though. -- posted by Chef #938586

Greek Pasteli (Sesame Seed & Honey Snacks)

While in Greece I saw this "candy" that I loved from childhood...little bites of sesame and honey that were soft because they did not have any sugar. Inspired, I set out to see if I could buy them in the US but found instead that they are incredibly easy to make! So here is a recipe adapted from one found on www.globalgourmet.com. Each bar is 30 grams, which is a typical food bar you would get in the health food store. -- posted by All-Natural-Nut

World's Best Chocolate Chip Cookies (By Dorie Greenspan)

This recipe makes a perfect chocolate chip cookie that is both chewy and crispy. It is from Dorie Greenspan's excellent cookbook, "BAKING: From My Home to Yours". Including nuts is highly recommended.
Some variations: for chocolate chocolate chip cookies, substitute 3/4 cup of flour for 3/4 cup unsweetened cocoa powder; for espresso chocolate chip cookies, add 1 1/2 tablespoons espresso powder after the vanilla extract; for a coconut version, add 1 1/2 cups sweetened (toasted or untoasted) shredded coconut when adding the chocolate chips; and for peanut butter chocolate chip cookies, substitute 1/2 cup of peanut butter for 1/2 a stick of butter and beat them together before adding sugar (and use peanuts). Enjoy!

Note: The dough can be covered and refrigerated for up to 3 days, or frozen. If you'd like, rounded tablespoonfuls of dough, ready for baking. Freeze the mounds on a lined baking sheet, then bag them when they're solid. There's no need to defrost the dough before baking-just add another minute or two to the baking time. -- posted by blucoat

Cinnamon Sugar Sweet Spice Pumpkin Seeds

I wasn't in a salty mood this Halloween, so I whipped up a batch of these sweet, cinnamony pumpkin seeds. They're super easy and quick to make.
Fried Almonds

A delicious and extremely quick-to-make recipe which I was delighted to find in the October-November 2008 issue of 'dish'. As I don't like hot and spicy flavours, I made these with a mild paprika. Those who do like foods hot and spicy might want to add cayenne pepper. Please, do adjust the spices to meet your taste preferences. As almonds boost energy levels particularly at those times such as early afternoon when - given the choice - many of us may choose to have a siesta, I intend to have these on hand in a container at all times at work as a quick energy-boosting snack. I've found that even half a dozen almonds can provide the boost needed at such times, and these will offer a more flavoursome alternative to plain almonds. -- posted by bluemoon downunder

Swag Bars (Chocolate & Peanut Butter Bars)

This recipe was in the Jan/Feb 2009 issue of Cooking Light magazine. It was in their "Lighten Up" section - where a reader can submit a favorite recipe and COoking Light will make it healthier. This was very tasty and the kids LOVED them. Next time I might try and sub honey or brown rice syrup for the HFCS. I also increased the chocolate a teeny bit and spread it over the bars instead of drizzling it. -- posted by dukeswalker

Resveratrol Crunch-N-Munch

The French Paradox,,,the observation that the French suffer a relatively low incidence of coronary heart disease even though having a diet pretty rich in saturated fats. It is thought that their saving grace is coming from all the red wine that they drink. Red wine contains resveratrol, a natural substance that has been linked to the prevention of many diseases including cancer and also to healthy life expansion.
I love red wine but I also wanted to see what other foods contain large amounts of the stuff!! Surprisingly, peanuts!! I decided to put together a trek mix using some of the tasty resveratrol winners!!!
I find that I enjoy a mix of fruits and nuts with a little salt and a treat like chocolate rather than just a bowl of just nuts or just fruit. I used salted peanuts to give this mix that hint of salt and balance but you can definitely use raw peanuts along with all of these other raw ingredients. I hope you like the mix! -- posted by Chef*Lee

Aussie Spiced Nuts

A deliciously different recipe for spiced nuts which I came across this afternoon in the current issue of the Australian magazine 'Woman's Day', and with my usual impatience just had to make this evening, with a few modifications - minus the chilli powder to meet our taste preferences - but I'd certainly make these complete with the chilli powder for friends, and have left the chilli powder in as an ingredient. In making these, I increased the garlic from 1 to 2 cloves, and I minced it rather than crushing it. I used cashews, macadamias and hazelnuts. Why, oh why do I keep buying all these magazines each week? Spot on if you guessed to check out their latest recipes! And it was worth buying this week's just to have found this recipe! These would be demolished very quickly if served with other appetisers and drinks, and they'd be a great addition to salads and stir-fries - if they lasted that long! :) Don't add salt - or add it sparingly - if your nuts are already salted. -- posted by bluemoon downunder

Low Carb Cinnamon Vanilla Pecans

I pulled this recipe off the net in 2003 when I was initially started low carbing. It has since become my go to recipe for something that will always add that sweet crunch that will keep me on the straight and narrow. If you are really watching your carbs, vanilla, pure or imitation, does have sugar in it. You need to look for the sugar free variety which can get quite expensive.

I find they make great toppings for a low sugar ice cream dessert. -- posted by Fireflylover

A delicious, healthy, moist, nutty, and filling pancake recipe from "Bon Appétit Magazine" (Jan. 2004).
You can tweak this recipe to your preferences, it's very forgiving. You can add some cinnamon to the batter, throw in some blueberries, mash in a banana, or substitute wheat germ or oats for the flax seed meal. If you don't have buttermilk, you can use the yogurt & milk substitution, soymilk, or about a tablespoon of vinegar to regular milk and let it sit for 5 minutes and use that. -- posted by blucoat

Cranberry Quick Bread With Variations

This is an easy, moist and very flavourful quick bread. You can substitute the cranberries with equal amounts of blueberries, rhubarb or chopped apples. There is even room to add pecans or walnuts. You may want to substitute vanilla or lemon extract in place of the orange...or not. :) For a quick 'out of the freezer' snack, slice before wrapping in portions of 4 or 5 slices each. Great for unexpected company. Servings will depend on how thickly it it sliced. Note: You can use fresh or frozen cranberries. I've not tried it with the dried sweetened variety. -- posted by Diana #2

Tropical 7 Layer Twist Bars

*After making 7 Layer Bars for a bake sale at work, I started thinking about how well white chocolate chips and macadamia nuts go together. Then I thought, "Hey!!! What would happen if I threw them together with some pineapple and coconut?", and this is what I came up with ... A refreshing tropical twist on an old favorite.
Depending on how big you cut your pieces, you can get about 12 to 16 bars.
I also plan on making these in a mini muffin pan, to get some little "tropical tarts" -- posted by "Ratalouille"

Quaker Homemade Oat Treats

I found this in a Quaker Oats flyer - it's so delicious!! I'm curious to try it again as the first time I made it, it didn't stick together in bars as I expected, it was more granola-y in clumps, but I have to try it again to make sure my measurements were correct. It's so delicious, a co-worker who doesn't like granola actually asked for the recipe because she liked it so much! I did use dried blueberries instead of the raisins. -- posted by Katzen

Shrimp Bites Wrapped in Greens

Isabel Cruz's Spicy "Shoestring" Party Menu for a Sultry Late-Summer Night - CBS Morning Show, 09/01/2007. The San Diego-based chef likes to marry the tastes of Latin American cooking she grew up with to the Pacific Rim tastes she's come to know as a Californian. But most of all, Cruz likes to keep her cooking clean, fresh, flavorful and healthy - she likes to go for flavors that pop and offer contrast to one another. She has 5 restaurants on the West Coast, from Portland, Ore. down to San Diego, Ca:). She has also published a cookbook "Isabel's Cantina."Growing-up, Isabel's friends were Puerto Rican, Cuban, Peruvian, and she also spent time with her Asian friends learning Japanese, Chinese and Korean cuisine. Thus, was born her fusion of different flavors. "This is a Thai appetizer of shrimp wrapped with coconut, peanuts, and chiles in a leaf. She likes to use raw collard greens as wrappers for these spicy little snacks, which she drizzles with a little guava sauce to complete the hot-sweet Thai flavors while also bringing these bites further into the Latin realm. Prepare these ingredients in advance, and then assemble these at the last minute." She was given a $60 budget to create a dinner menu for 6 people - thus: Chef on a Shoesting. -- posted by Manami

Mani's Bakery's High Protein Muffin

This recipe comes from the LA Times Food section's SOS column posted in response to reader pleading. It is an adapted recipe from the bakery. You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins & likely need a slightly shortened cooking time. Should be getting about 11 grams of protein & 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds & canola oil. Just the thing for hiking, fishing or hunting - easy to eat & needs no fridge! -- posted by Buster's friend

Crab Balls With Grapefruit Salad

Crab Balls with Grapefruit Salad Recipe by Jean-Georges Vongerichten The crab and grapefruit in this dish first appeared at the restaurant Spice Market tossed with cold glass noodles. Jean Georges Vongerichten decided it was a "messy pile," but liked the flavors, so he reconfigured them into crab balls rolled in panko (Japanese bread crumbs) and sesame seeds. The side salad is a fabulous mix of tart (grapefruit), spicy (Thai chile) and sweet (ginger syrup). ;) F&W Magazine, From: Jean Georges's Best Small Plates, Published, July 2006 edition. 2 hr 20 min freezing and thawing time. -- posted by Manami

This recipe came from the back of a box of Quaker Oats. I have not tried it yet but thought it looked tasty with lots of vitamins and fiber. I will be trying it with butter instead of margarine and I think I might substitute chopped dates for the prunes as well. The pumpkin and spices make think of Fall. -- posted by MN*Kelly

Coconut Date Granola Bars

This is a wonderfully satisfying treat packed with oats, nuts, and fruits. When they first come out of the oven, they may be fragile and slightly crumbly. Make sure to let them cool before cutting, and they will soon become firm, chewy granola bars. -- posted by sszz

Whole Wheat Applesauce Cookies

My favorite cookie recipe! These are moist, chewy and delicious. Because most of the sweetness and the moisture comes from the applesauce rather than fat or sugar, not to mention the whole-wheat flour, I don't feel guilty about sneaking one or two of these for breakfast! -- posted by CorianneW

Crunchy Granola Bars

I love those nature's valley crunchy granola bars and I also like those sweet and salty granola bars as well as fruit granola bars! But notice how you can't seem to get everything you want in a granola bar without sacrificing the healthy aspects. Anyhow, these are great and easy adapted for whatever ingredient you fancy. -- posted by Dulcet Kitchen
