State Fair Deep Fried Candy Bars

This is a recipe post more for laughs and shock value than to really home-make. It's definitely not healthy! But you recreate the deep-fried magic of state/county fairs and trips to Seaside right in your own kitchen! And it's not so horrible on the cholesterol level if you share it and only have maybe once a year ;)

This is enough batter to coat two candy bars, maybe a third one. Milky Ways are the best for this but Snickers, Mars Bars, and 3 Musketeers also work-- pretty much anything with a gooey center that you can poke a skewer through, hard chocolate won't work. -- posted by the80srule

Gorgeous Mashed Swede (Rutabaga)

Forget mashed potatoes! I was never a huge fan of swede, I usually find it quite bland if not rotten tasting, unless perhaps if mashed with carrots. I'm glad I've found a way to love this cheap and wholesome vegetable, great texture, great flavour and good enough to eat on its own. A can of stewed steak in gravy turns this into a cheap and nutritious simple meal for 2. -- posted by robd16

Pumpkin Smoothie

I came up with this when trying to adapt my smoothies to something more "fall-ish"... I absolutely love it, as does my husband! You have to separate and freeze the pumpkin in advance but it's fine to just do that in sandwich baggies. I prefer freezing the pumpkin to using ice cubes because I feel they will water down the delicate flavor of the pumpkin. -- posted by AnnieGirl

2 Way Baked Kumara (White Flesh or 'bush Bok' Sweet Potato)

These are so good! Tesco's are selling these under the name 'bush bok sweet potatoes' in the exotic veg section. White fleshed sweet potatoes are not always easy to spot as they look so similar to the orange fleshed variety. They have a lovely sort of chestnutty flavour. I find the white ones have a more purpleish edge to the skin. You can always scrape a bit of skin from the corner of 1 to find out. They really are worth hunting out and are best eaten plain with butter salt and pepper (Don't bother with any fillings) and perhaps some salad, or as they do in Mexico for a sweet snack, with butter condensed milk and cinnamon. Gorgeous! -- posted by robd16

Rachel's Super Easy & Fast Home Fries

Time-consuming home fries on my watch? Never! I had leftover potato "meat" from making potato skins so I made home fries with them, from 8 small potatoes without skins so that probably equals about 4 regular potatoes and 6 small ones. If you plan ahead on making home fries for breakfast, then you can pre-bake potatoes for this. Please note that cooking time does not account for baking the potatoes! This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes. NOTE: The amounts shown aren't an exact science, more to give you an idea and show that home fries can be made quickly :) -- posted by the80srule

Mango Milk Crush

A really refreshing and different way to eat mango. I was served this drink on the beach in Rio one time and turned my nose up at it (I'd asked for mango juice and don't really like milk drinks) but I was pleasantly surprised to find how well the sweet creamy milk went down with the loose crushed slippery mango. Don't think of this as a drink though do serve it in a glass. This is more like eating peaches and cream.
Vegetarian Western Bacon Cheeseburger

I know, this sound weird. I've been a vegetarian for 5 years and there are some items I missed from my meat eating days. I was having a craving for a Carl's Jr. Western Bacon Cheeseburger one day and decided to vegetarianize it. This is super easy to make and tastes very much like the original. To save time and to make it taste more authentic, use onion rings from a fast food restaurant like Sonic. I prepared the burger while I send my boyfriend down the street to Sonic. Also, slightly burning the Lightlife Smart Bacon is what makes it taste like real bacon. -- posted by danakscully64

Lower Fat Chocolate Cake in a Mug

This is a composite of several recipes in hopes of making a version that is less fattening, but still satisfying. There are other versions that use 2 tbsp fat free sour cream instead of the banana. There are many types of flour that have been cited, including rice flour for gluten free. Also different sweeteners available such as sucanat. Egg beaters can be substituted, and oil can be left out all together, substituted with apple sauce. -- posted by Chef #1450658

Pasta With Lentils

A couple of notes about this recipe.
First of all, this is a recipe for one person. I know that doesn't seem true, but the 4 coups of water boil down really fast.
Secondly, I usually soak my lentils beforehand because it makes them cook quicker.
Third, I put "2 oz" of pasta, because that's usually the serving size for one person for pasta... sometimes it's 1/4 of a cup, and sometimes it's more. Just go with what the box says, or whatever you feel is good for you.
Also, you can do it with rice instead of pasta if you so desire! It's equally as yummy! -- posted by michelle!

Alright, I'm a big fan of one-pot meals, and most of my meals I make for one person, because I live alone. So you can always make more if you want to! This one is really super easy though. Also, I'm talking about the SMALL bullion cubes, NOT the big ones!
Broccoli and Stilton Cheese Soup

A classic winner, even those who don't really like blue cheese or indeed broccoli are normally won over by this one. Use Danish blue or Gorgonzola or whatever you cheese you have in. Stilton works best though, so try to stick with that. For those who really despise blue cheese, I'm sure white Stilton would work well too. The bay leaf and lemon juice are not essential but I find they heighten the taste slightly -- posted by robd16

I haven't made this yet but it sounds yummy to me. Recipe comes from The old Farmer's Almanac. It was submitted by Mrs. Henrietta McClellan.
Originally found on Epicurious, great easy recipe. Few ingredients, big payoff: Large "steaks" are cut from a head of cauliflower, sautéed until golden, then baked until tender. They're served over a simple puree made from the cauliflower florets. An impressive first course, this can also be a lovely side.
Meyer Lemonade (Sugar Free)

I came up with this after buying some meyer (sweet) lemons. It is basically water with a combination of meyer lemon juice and regular (sour) lemon juice. Sometimes I add a little Truvia. You don't need a sweetener but can add your sweetener of choice if you like. The amounts are very inexact and depend on your taste. I generally use the juice of one meyer lemon with a smaller amount of the sour lemon juice. I am giving the directions for one serving. -- posted by coconutty

Super Thin Pizza Dough

I experimented with a great recipe for dough, #70165, I use both now because sometimes I want my pizza "super" thin and other times just thin. Special note, I learned that when dealing with yeast it is important to have everything at room temperature, or slightly warm. This includes all ingredients, utensils, and bowls. I also use a great pizza sauce recipe, #114392. (It calls for tomato paste but I sometimes use just all tomato sauce.
Flexible Risotto

This is my basic rice recipe. I like it because I can throw whatever's in the cupboard in or just make it with onion.
You can add about a 1/4 cup of any kind of veggie you like to the onions when you sauté them to add flavor. I’ve added mushrooms, carrots, broccoli, bell peppers et cetera to the onions. It can be made with cheese or without. I like to use Parmesan but have used cheddar, provolone, or mozzarella in a pinch. I find it’s creamy even without any cheese. Careful not to over salt, you’ll ruin it. Using broth made from bouillon is way too salty for me personally. Enjoy! -- posted by ohNeiko

Smoothies are a great way to get your daily servings of fruit, vegetables and dairy. I have one of these with a veggie-laden breakfast bagel, and another one after dinner. Mixing up which types of fruit you use ensures a great variety of flavors as well as your full range of vitamins, so these things never get old! Try berries for your frozen fruit and something tropical for your fresh fruit, or use cherries and an extra banana with chocolate milk for a treat every now and then. -- posted by Alexander Mar

“guilt-Free Ice Cream Wannabe”

This delicious low-calorie dessert is a great way to satisfy your craving for a big bowl of chocolate ice cream without blowing your diet. The thickness of the Greek yogurt provides the creamy texture of ice cream for just a fraction of the calories. Also, by using frozen berries, the yogurt freezes as they are mixed in, giving the cool, frozen texture of real ice cream. The Fiber One cereal sprinkled on top provides a nice crunch and textural contrast - enjoy! -- posted by Chef #1453068

Smoked Salmon Scrambled Eggs and Chives on Pancakes

An indulgent and luxurious champagne breakfast or brunch dish that even those who don't like the texture of smoked salmon will love because it is cooked in with the eggs. I think the scotch pancakes (regular pancakes in the USA) are essential as the slight sweetness offsets the saltiness of the salmon perfectly. -- posted by robd16

To the untrained eye this doesn't look much cop but it's such a good dish you just gotta try it! The jalapeños are essential as is the sour cream and guacamole.
I found this recipe on the what_a_crock community on livejournal. It was posted by delwyncole and sounds absolutely yummy. I can't wait to try it. It is pan cooked pork chops in black beans. They didn't give exact measurements so I am guessing with this. I had to transform the rough recipe into something more like a formal recipe.
