Tuna Cake With Pimento

This tuna cake recipe was just a last resort dinner. I was amazed at how simple it was and how cost friendly it was. Full of flavor and great consitancy. It can be made lower in fat simply by browning them instead of frying them. -- posted by NickleBoodle19

Grandma Linda's Thanksgiving Dressing

My mother has made this dressing for our family since I was a little girl. It is the only Thanksgiving dressing my family will eat. I would weigh 500 pounds if I made this dressing as often as I craved it! Although I know most people prefer holiday recipes that have been passed down in their own families, I hope you will enjoy this Thanksgiving dressing recipe that the McWell's have enjoyed for many, many years! My mother used Jiffy corn bread mix in the old days, then later switched to Marie Calender's corn bread mix. In this recipe, I am using the "sweet corn muffins" recipe on a box of Albers Yellow Corn Meal. Because I am using Albers brand corn meal, all ingredients up to "12 Tbs butter" are for this particular brand cornmeal. If using any other cornbread mix, follow directions on the box, then add ingredients beginning with "1 Lb bacon." This recipe is for Thanksgiving so it makes quite a large amount. Thanks Mom! -- posted by Mrs Cook

Chocolate Cheesecake - Caramel Macchiato Trifle

I Invented this for Thanksgiving dinner, and it got rave reviews! If you have more time to prepare, I would suggest substituting real whipped heavy cream for the Cool Whip. You can also use Kahlua instead of Starbucks liqueur if you prefer. Time does not include the preparation time for the brownies or mousse. I usually make them a day ahead to make things easy on the day I am serving the trifle. -- posted by Cooks4_6

Egg Salad Sandwich

I love egg salad. It's great when you don't have a lot of ingredients on hand. You can scale this down and just use mustard, mayo, salt, and pepper if you prefer. To prepare more quickly, I boil the eggs the night before. It's a quick 5 or 10 minute lunch with a little advance preparation. I like this with a nice sourdough bread, but you decide. I like to eat this open-faced. Recipe courtesy of The Complete Idiot's Guide to Comfort Food. -- posted by AmyZoe

Chili Powder That's Smoky and Spicy!

Rub on ribs, re-fried beans, taco sauces, or use chili con carne or stews, this chili powder recipe provides smoky flavor and aroma. Freshly ground dried whole peppers, spices and herbs.I used a mix of home grown and dried chilis. But do use your choice of large peppers like the Ancho chili’s are just the name used for smoked, dried poblano peppers, the pasilla, and the New Mexican chilis. Then mis with smaller peppers like dried cayenne peppers, chiltepins, habanero, piquins and chipotle peppers are smoke dried red jalapenos, and add a smokey complexity to this blend.
The actual level of heat and quantity will vary from batch to batch because of differences in the peppers. -- posted by ~Rita~

Moist Pumpkin Spice Bread

This may be the most delicious pumpkin bread recipe I've ever baked. I came up with this for my brother's 18th birthday and it has been devoured in just two days. I believe the applesauce in the recipe is what makes it so ooey-gooey moist. It's also low in fat as the applesauce replaces the oil that would normally be used. The recipe makes two loaves, one of which can be frozen or given to a friend. -- posted by EntirelyEmily

Thanksgiving Pumpkin Blondies

From The Best 50 collection of cookbooks. This is straight out of the Brownies and Blondies edition. A little of this goes a LONG way! Not really a blondie by my standards, but it passes off as an interesting bar-type dessert. PLEASE NOTE: Because most people are not really used to tasting molasses, it may take a few bites to fall in love with this recipe. I did not like it at all when I first tried it. But, after giving it a second bite, I found I can't get enough of it. This seemed to happen with EVERYONE who tried it. So, please, before giving an unhappy review, try it again. If you find that the molasses is just too much to handle, try cutting the topping ingredients in half. It really does make a lot of topping as it is. I hope you enjoy this! -- posted by the_cookie_lady

Tom Yum Soup With Vegetables

Thai Tom Yum soup is a delicious and aromatic Thai soup. I crave this soup ALL of the time. I have brought this to parties and people always rave about it. Now friends always ask me to make it whenever we're getting together. I made it completely from scratch for years. A few years ago, I started using the paste and prefer it. I find it to be more flavorful.
Tom Yum is distinctly known for it's hot and sour flavor. My version maintains the distinct hotness and sourness of the traditional soup but it also is slightly sweet and spicy. I make a side of jasmine rice and serve it with the soup.
I noted the ingredients and amounts I use however, I encourage additions, deletions and alterations. I don't care for the mushrooms and I love broccoli which may come as a surprise to some. Broccoli is not a traditional component of this recipe but it's healthy and I find that it goes nicely with the broth. Play and have fun! -- posted by Proserpine79

Sweet and Savory Squash Stew

This recipe combines some of the most iconic tastes of fall--butternut and acorn squash, sweet potato, apple--in a sweet and savory pot of deliciousness. I recommend serving with a dollop of sour cream. And cornbread.

All amounts for seasonings are estimates--I tend to season as I go and according to taste; I have a feeling these are underestimates. I will be sure to update the next time I make this with adjusted amounts. I used a smoked (pre-cooked) ham steak for this; I have also made it with other kinds of ham, with turkey sausage, and without meat altogether with positive results. -- posted by Tlharin

Seasoned Chicken in a Light Wine Sauce

This is a healthy way to add a little flavor to chicken without all the fat, and just a little salt. You can substitute or add any vegetable that sautes well if you don't like onions, but the mushrooms are a must. Pairs well with steamed veggies and/or rice. You could add a little cornstarch slurry while the liquid reduces to help thicken the sauce, but I like to keep it on the light side. Using a lid on the non-stick skillet is a key step to the recipe. It keeps the Chicken from drying out. -- posted by Cyril

Luxury Peppered Beef Steaks

Black pepper and steak, how great they work together! We all love peppered steak, but this version is so good, none of us bother to order it when we go out anymore as we know it just won't live up to this! Very Very Peppery, as a pepper sauce should be, and lovely and creamy too. The brandy is not optional in this recipe so do not dare to leave it out! You can make the sauce well in advance, so long as you remember to reserve some pepper to season your steaks with. Serve with chunky chips (fries) and perhaps some mushrooms and greens for a luxury Friday night meal. -- posted by robd16

Holiday Nut Roll (Americanized Croatian Nut Roll)

While similar to other nut roll recipes, this filling is unique because it uses no egg whites or lemon and includes a delicious "Americanization" of the Slavic recipe by adding--whiskey! It adds a fantastic additional flavor; feel free to split the filling before adding whiskey if you'd like to reserve some spirit-free for the kids (though it cooks off and I've never met a kid who didn't like this).

Originally posted on VegWeb.com by beep_i_am_a_robot. I haven't made this myself yet, but I want to get the nutritional breakdown. I plan to tweek by reducing the salt content (using Bragg's amino rather than soy and leaving out the salt), reducing the fat and increasing the tofu (several reviewers on VegWeb have done this and liked it). This is the original recipe, including typing and grammatical mistakes. Serving size is estimated. -- posted by I hate coming up with handles :)

Cranberry Orange Holiday Relish

There are many versions of this basic recipe. This little riff adds a little extra color and crunch to an already delightful side dish that is rich in both flavor and fiber. Add different fruits, and it becomes yet another kind of salad, beautiful in its ruby-redness, especially on a bed of greens. Note: the toasted pecans are nice added the day before serving, but as time goes on, they become less crunchy - but still add a great flavor. This relish can be held in the refrig for a week or so, and can be frozen as well. -- posted by MaryRich

I have never tried a lower fat version because I despise fat free mayonnaise & cream cheese but let me know if you try something & it works.

Thanks to the "boxed crushed graham crackers" I no longer had to crush the graham crackers between layers of waxed paper with a rolling pin.
Best Ever Cheesecake-Woman's Day Dessert Lover's Cookbook 1981

This recipe has been a family favorite since, well, 1981. I have hung on to this Woman's Day magazine since then mainly for easy access to this recipe. It is one of the few recipes for cheesecake with a short crust as opposed to a graham cracker crust. I suppose you could substitute the graham cracker crust if you must, but this is so good you probably won't want to. It makes a large cheesecake, so don't be alarmed by the 40 ounces of cream cheese it needs. It is worth every ounce. I am submitting the recipe as written, but we substitute canned cherry pie filling for the pineapple topping given here. Use your fruit topping of choice, please. Also, some recommend putting a pan of hot water in the bottom rack of the oven during baking to prevent cracks...please do that if you want to. We usually just top the cheesecake cracks with our fruit topping and go for it. -- posted by Chef #1122607

Best-Ever Cheesecake

This cheesecake has been the all-time favorite of my family since it appeared in the 1981 issue of Woman's Day Dessert Lover's Cookbook (magazine). We like it topped with ready-made cherry pie filling, but I have submitted the recipe with a pineapple topping as originally written. With 40 ounces of cream cheese, it is simply the richest, best tasting cheescake we have ever had. This recipe does not call for a hot water bath during baking, so I'll leave that decision up to you. Also, I have used a 10-inch springform pan with no problems. It still makes a nice tall cheesecake. Prep and cooking times are approximate and do not include cooling/chilling time. Because of the amount of time it takes to prepare, bake, cool, and chill, I usually make this the day before I need it. I hope you like it...enjoy! -- posted by Chef #1122607

Yes, this recipe was sent straight from heaven. They do take some time, but it is well worth it! I usually make one pan with walnuts and one without. This recipe makes a glaze instead of frosting. I didn't think I would like a cinnamon roll without the cream cheese frosting...but this is ten times better! -- posted by Chef #1458822

Lemon Cream Pie Cafe

I have been thinking about trying lemon flavor in coffee for a long time and finally tried it this morning. It Works! This coffee really does have a pie-ness to it. For this to work and taste lovely you need the sweetening and creamer. You can use more sweetening and creamer if you like but don't cut it back. -- posted by Annacia
