Star Gazy Pie is a dish unique to Mousehole (a fishing village in West Cornwall with a most beautiful harbour). Prepared in the Ship Inn, eaten on 23rd December (Tom Bawcock's Eve). Long ago, winter storms had prevented the fishing boats putting to sea. In a lull of the bad weather, one fisherman (Tom Bawcock) managed to catch enough fish to prevent the village from starving. I just made some yesterday, chilled it overnight to marry the flavors, and am SO looking forward to tasting it for dinner tonight!  You do NOT have to rest it OVERNIGHT.  It can be eaten as soon as ready!

Cure time will vary according to the humidity of the curing area, but don't count on using any of this for at least a month.  With soap, the longer it sits, the better it gets (within reason)!  NOTE:  All measurements are weight, so use a scale and not measuring cups!  Use of a candy thermometer is recommended for ease of preparation and best results.  Also, please read the directions prior to making this.  Don't be put off by the length; my degree in English is often a curse. Great for the Fall with hard or mulled cider!  So titled because my brother created the cranberry jalapeno sauce, and I created this pizza.  We're the black sheep of the family.  You won't believe me, but this is a great flavor combination.  It was popular with everyone, including my 3 yr. old and 1 1/2 yr old.

To make all of it at once might have been a little more time-consuming than I would normally tolerate.  But the sauce keeps very well in a ziploc in the freezer, and you can break off bits to use when you need it.

			<description>This sticky, spicy chicken curry is deliciously sweet and packs just the right amount of heat. It is to be scooped up with warm, chewy naan, then licked off of fingers.Your first step is to hunt down some curry leaves. Their flavour is irreplaceable in this dish - a bit nutty, warm, and citrusy. Used a lot in South Indian cooking, they have nothing to do with curry powder which is a blend of spices.Start by browning the chicken in a heavy skillet - make sure the oil is good and hot and the chicken has been patted dry before you put it in the pan. Dont flip it until it releases easily - if it is sticking, leave it - it will tear if you try and turn it before it is ready. Next, cook the onions gently over low heat for about 10 minutes to coax out the sweetness. Then add the spices to the pan to saute before the liquid is added. These three steps have a big flavour impact.
As far as curries go, the ingredient list is very short. Which makes it a great curry for beginners, if you can track down some curry leaves at an Indian grocer. I casually sprinkled the thick-cut Hemplers bacon with cayenne before frying to a nearly blackened crisp. Once the caramel had reached its perfect molten temperature I stirred in a handful of the bacon then reserved the rest to get sprinkled on top. The caramel set beautifully. Some were cut and served as is while a select few were covered in tempered dark chocolate. All of them were devoured.

			<description>If your've never made your own vanilla you've got to try it.  It's nothing like the store bought kind, not even good quality pure extracts (and it's way cheaper).  People will wonder what happened to your baking.  It goes from average to incredible as soon as you start using this vanilla.  You can use more than is usually called for in a recipe because there isn't any of that bitter after taste.  Just make sure that if you're using lots you cut back slightly on some of the other liquid.  It also makes a good Christmas present.  You can try it using any sort of hard liquor you want, I've simply listed my preference.  Also, Make sure you're using Vanilla beans from Madagascar, the cheaper ones from Mexico aren't true vanilla beans are actually toxic.  You can reuse the beans up to three times (just let it steep a little longer each time) and once they've been all used up you can dry them and add them to your sugar.  They'll still release flavour.
