Quahog Chowder

The clam that Rhode Islanders call a quahog possesses an impressive variety of names, and even the word "quahog" has more than one spelling and a number of pronunciations: KO-hog, KWO-hog, and KWA-hog. Indians used quahog shells to make beads that were used as money (called wampum). Although quahogs can be found along the North American Atlantic coast from Canada's Gulf of Saint Lawrence to Florida, these clams are particularly abundant between Cape Cod and New Jersey.
Beef Vegetable Soup - Simple, Hearty, and Yummy

There's a chill in the air, the kids' cheeks are rosy, and the leaves have begun falling ... That spells SOUP! There's nothing better on those cold weather days than cozying up to a steaming bowl of home-made soup. If you love the taste, but don't think you have the time -- Think again. This flavorful 'cold weather chaser' can be on your family's table in less than an hour! Team it up with warm sourdough rolls and a fresh garden salad, and you have a satisfying meal any day of the week.

Cook's Tips: (1) Make the soup a day ahead of serving. The flavors will 'marry' and the soup will taste even better. (2) Double the recipe and freeze it in individual servings. -- posted by Feast Your Eyes!

Rice and Honey Pork Chops

A fabulous dish I made one night. I am helping to take care of my grandmother and she has mentioned that she feels like she gets the same meals all the time so I decided to try something new. I reached for one of her old cookbooks (Pillsbury Kitchens' Cookbook, Copy. 1979) and found something to make with what I had available in the house, tweaking it a bit.
The rice is divine with a tart but sweet flavor and the pork chops come out practically falling apart, I used boneless chops from the loin. I ommited the raisins and sherry but would welcome any feedback from those of you that decide to use them. -- posted by Sweets Princess

Sublime Clam Chowder

I am a super clam chowder snob. Roux has no place in clam chowder, unless you're trying to hide old gummy fish parts, but then, why would you cook it?
Easy Potato Candy Bonbons

This recipe has been handed down by Pennsylvania Dutch farmers for years. I got it from my Mom who got it from her Mom, etc. It has few ingredients, zero fat, and has a texture akin to fresh fondant, literally melting in your mouth, not in your hand.
Almost limitless potential- flavoring could be anything, and depends upon ingredients on hand, mood, season, etc. (My mother used to use mint flavoring.) Most often I bring this to church potlucks, or for Christmas and wedding occasions as it is easy to make and when people start eating it, they seem to never get quite enough. -- posted by Rubyscarab

The Authentic Bean Soup Served in the United States Senate!

this is from Senator Jay Rockefeller of West Virginia and he says...

Whatever uncertainties may exist in the Senate of the United States, one thing is for sure: Bean Soup is on the menu of the Senate restaurant every day. The origins of this culinary decree has been lost in antiquity, but there are several oft-repeated legends.

One story has it that Senator Fred Thomas Dubois of Idaho, who served in the Senate from 1901 to 1907 and sat as chairman of the committee that supervised the Senate restaurant, gaveled through a resolution requiring that the bean soup be on the menu every day.

Another account attributes the bean soup mandate to Senator Knute Nelson of Minnesota, who expressed his fondness for it in 1903. In any case, Senators, and their guests, are always assured of this hearty, nourishing dish. They know they can rely upon its delightful flavor and epicurean qualities. -- posted by carrie sheridan

Dutch Baby (Giant Baked Pancake)

These look and taste absolutely heavenly! It's great if you have guests or larger gatherings for breakfast or brunch as each pancake has 4-6 servings and, since it is baked, requires less work than regular pancakes. This delicious and impressive-looking recipe is from Sarah Kate, of "The Kitchn". It was a Christmas breakfast tradition in her family. It's also sometimes called a German Pancake and is quite similar to Yorkshire Pudding. If you want a sweeter recipe, increase the sugar to 3 tablespoons and add 1 teaspoon of vanilla. Batter needs to sit for a half-hour before baking. -- posted by blucoat

Gramercy Tavern Gingerbread Cake

This recipe produces an incredibly moist, dark, rich, sticky, dense gingerbread cake with a complex and spicy flavour . I've slightly modified the recipe based on the one Claudia Fleming, pastry chef, prepares at New York City's famed Gramercy Tavern. The original version is in brackets. Recipe was printed in "Gourmet Magazine" (Feb. 2000). Cake develops a lovely caramelized crust that can stick to the pan. Spray generously with cooking spray with flour or line pan with parchment paper (greasing both well) and allow cake to cool for 5 minutes before removing from pan. You can use part whole-wheat flour and, if you want to avoid alcohol, you can replace the stout with strong coffee. Recipe makes a 10" bundt cake (or springform); if you want, you can halve the recipe for an 8x8 square pan. Cake is even better the next day (so it is a good make-ahead dessert). Serve cake plain, dusted with confectioners sugar, with whipped cream, or with vanilla ice cream. -- posted by blucoat

Garlic Roast Chicken (Barefoot Contessa)

After seeing this on Food Network and trying it that very night, I'll never make a roasted chicken any other way. The vegetables alone are worth it, but the chicken is so unbelievably tender and juicy that you can't help but go back for seconds. I've made only very subtle changes to suit my taste, and I would recommend nearly doubling the veggies if feeding four grown people. Reheated leftovers are phenomenal (use medium power on microwave). -- posted by KissKiss

Dried Blueberries (Method)

I ripped this from a Thanksgiving book. The book said " today we store blueberries in the refrigerator or freezer. In the 1620's, Americans dried berries to preserve them for winter. The Pilgrims referred to these little, round, blue skinned berries as whortleberries or billberries...often Native Americans rehydrated or plumped up their dried berries by soaking them in hot water for 15 minutes before serving."

Griswold Inn Indian Pudding

The Griswold Inn, built in 1776 in Essex, Connecticut, has promised first-class accomodations to travelers since the stagecoach-steamboat days. This traditional molasses-rich dessert isn't as popular as it used to be, but it remains a very tasty treat. Despite the title, early New England settlers did not adapt this recipe from native Americans: 'Indian' refers to the 'Indian meal' used - cornmeal, as wheat flour wasn't available.
Boston Cream Pie

An ancient Good Housekeeping recipe that I religiously make every New Years day. If you've never made a scratch cake, you don't know what you're missing. Using cake flour is a must. See Lennie's recipe #87689. Be sure to properly measure your flour by lightly spooning into a measure cup until overflowing then using the backside of a knife to level off. Too little flour will produce a callapsed cake and too much will have wet spots with dense layers. Cake layers freezeable.

Prep time also includes assembly time. -- posted by gailanng

Creamy Maple Fudge Frosting / Icing for Cupcakes

The flavor reminds me of the Seaside fudge from my childhood! A nice creamy frosting that's great for cakes and cupcakes, but also would do nice for soft cookies. -- posted by the80srule
