			<title>Mom's Perfect Roast Turkey</title>

			<description>This is the anti-saw-dust tasting, forget the pop-up thermometer bird cooker! Hence, we toss the thermometer altogether. Cooking the bird &amp;quot;upside-down&amp;quot; uses gravity and allows the juices to cook inside the breast meat, giving it a tender deliciousness that is hard to duplicate when cooking for a golden-brown-colored turkey breast skin. 

With my family, we prefer meat to skin and so after letting the turkey rest, carve in kitchen and set on buffet-style platter or large plate, removing fat and skin as preferred. 

This recipe is also great if you want a less-stress Thanksgiving as all it is is washing the bird, sticking it in a pan, and into the oven with a timer. Feel free to make other preparations while the bird is cooking for when the bird is out of the oven. Bird can be made up to a day in advance and reheated easily.

If you like moist turkey breast meat, use this recipe. 
Meant for any size or type of turkey.
No bags or basting, ever!

			<description>This recipe has been handed down by Pennsylvania Dutch farmers for years. I got it from my Mom who got it from her Mom, etc. It has few ingredients, zero fat, and has a texture akin to fresh fondant, literally melting in your mouth, not in your hand.
Almost limitless potential- flavoring could be anything, and depends upon ingredients on hand, mood, season, etc. (My mother used to use mint flavoring.) Whatever uncertainties may exist in the Senate of the United States, one thing is for sure: Bean Soup is on the menu of the Senate restaurant every day.  The origins of this culinary decree has been lost in antiquity, but there are several oft-repeated legends.

One story has it that Senator Fred Thomas Dubois of Idaho, who served in the Senate from 1901 to 1907 and sat as chairman of the committee that supervised the Senate restaurant, gaveled through a resolution requiring that the bean soup be on the menu every day.

Another account attributes the bean soup mandate to Senator Knute Nelson of Minnesota, who expressed his fondness for it in 1903.  In any case, Senators, and their guests, are always assured of this hearty, nourishing dish. It's great if you have guests or larger gatherings for breakfast or brunch as each pancake has 4-6 servings and, since it is baked, requires less work than regular pancakes.  This delicious and impressive-looking recipe is from Sarah Kate, of &amp;quot;The Kitchn&amp;quot;.  It was a Christmas breakfast tradition in her family.  It's also sometimes called a German Pancake and is quite similar to Yorkshire Pudding.  If you want a sweeter recipe, increase the sugar to 3 tablespoons and add 1 teaspoon of vanilla. 			<description>Come on,you know that sounds good!  I developed these after attempting to overcome an addiction to bacon and horseradish dip I developed on my recent trip to the States.  You can even make these vegetarian by using the Bacos bacon bits that are made out of soy instead of the actual bacon.  The recipe can be scaled up pretty easily for bigger crowds.  Also, this is one of those times when I am not totally clear on how to translate an ingredient from UK to US.  I used what is called 'horseradish sauce' here in the UK.  Which, I remember being somewhere in between prepared horseradish and horseradish cream in the States. I cut my own chops from a boneless pork loin so you can adjust the thickness to your liking. Instead of salt and pepper I used seasoned salt and added 2-3 tablespoons of honey mustard to the sauce for extra creaminess. Oven cooking will depend on thickness of chops. 			<description>This is a simple, hearty comfort recipe that was based on whatever I had in the pantry last night.  It's called 'rough cut' because it is meant to be just a &amp;quot;rustic&amp;quot;, simple, easy, hearty, filling dish.  There is to be No tedious MINCING!!  :-)  Just put the ingredients in the cooker. ;-)

It's really easy!  Just put the ingredients into the cooker in the order listed, ending with the chicken.  You don't want to taste it after adding raw meat to it so adjust your seasoning as nearly as you can before the chicken goes in.  You can adjust the flavors further after it's finished.

Ours came out with a LOT of juice so, if you don't like it that way, consider draining the tomatoes, cutting the stock and using bouillon cubes instead.  Or cook as directed and removing excess juices to reach the consistency you prefer.

I ladled off about 4 cups of the liquid after all the seasonings married in the cooking process.

I served it over rice.

I thought about adding ground cayenne or red pepper flakes after cooking for a little added heat.  Or just having them in ramekins on the table for those who'd like it.

Consider substituting 2 LBS of ground turkey or chicken for the thighs.  I'm going to try duck or venison this winter.
