Corn-And-Tomato Scramble (Gourmet Summer Salad)

A simple and delicious recipe from Gourmet Magazine (July 2009) that highlights delicious fresh summer ingredients. The corn is sautéed with scallions in butter, the tomatoes are lightly dressed with oil and cider vinegar, and then the two components are tossed together so that their flavors and juices mix into something new. The leftovers are great too! -- posted by blucoat

Easy Tri-Color Pasta Salad

Simple recipe for tri-color pasta salad. This recipe uses fresh mushrooms, onions, green peppers, etc. You can alter this recipe to suit your taste. Sometimes I throw in a chopped cucumber or broccoli florets. You can add diced pepperoni or baby shrimp. Great for summer picnics & BBQ's! Note: I use 1/2 to 3/4 cup of the prepared Good Seasons Italian dressing made in the cruet - depends on how many vegetables I add in on how much dressing I use. -- posted by BlondieItaliana

Tandoori-Style Chicken Burgers

To keep burgers juicy, resist the urge to press patties down during grilling. We made these with turkey and they were delicious! Served both types of yogurt sauces: cumin yogurt sauce and yogurt sauce with cilantro and lemon. - it was a 50-50 tie!
Asian Turkey Burgers With Sesame Mayo

Hoisin sauce gives these burgers a juicy texture, while ginger and garlic provide a burst of flavor and water chestnuts deliver an appealing crunch.
Serve them over toasted whole-wheat buns with a side of tender greens.
We used this tangy mayonnaise to enliven the burger even more or for a chicken sandwich or a dip for a platter of wonderful roasted vegetables or perhaps use it as a dressing for sliced napa cabbage with scallions.:) I had some Apricot Mustard left over from another dish and the combination was great - I served it on the side.
An easy and healthy recipe from Cooking Light Magazine (June 1999). It's also great if you add a little salsa to the wrap and the marinade works really well for grilled chicken breasts!

Tangy Guacamole

A refreshing lemon/limey guacamole recipe that is neither too spicy nor too tangy. Great for someone who cannot handle too much spice or heat. The lemon/lime mixture will keep the avocado from browning and give it a refreshing tart/tangy taste. This is a slight variation from a recipe a Texan friend shared with me. Great with tortilla chips. Enjoy! -- posted by Chef DNA1611

Celebrity chef Tom Colicchio serves this delicious mayo-free tuna salad at his New York restaurant ’wichcraft.
Wheat Berry Salad With Red Fruit

For this sweet and tart salad, wheat berries are blended with cranberries, apples and pecans and tossed in a raspberry vinaigrette—a winning combination. A perfect side dish to take to a potluck or simply serve it over a bed of peppery arugula for vegan lunch. Recipe from Eating Well March/April 2007. NOTE: cooking time is resting time. If you wish to sweeten your salad up a bit but don't have Agave, feel free to sub 1 T of honey. Also of note, using peaches and mango in place of the red fruit (thereby making this wheat berry salad with ORANGE fruit) would be delightful!!!! This salad is even better on day 2, so it's a great make ahead recipe. -- posted by JanuaryBride

Please Try My Sweet Potato Pie

Calling all pie lovers and seasoned bakers. I would love your opinions on this sweet potato pie recipe. It was my first attempt and I thought it came out really good, but I would greatly appreciate objective and honest comments and reviews. The "Basic Flaky Pie Crust" recipe came from another website and I didn't change a thing (in my opinion, the crust was perfect!) For the filling, I read several recipes, tweaked them each a tad and settled on a combination that I thought might work. So, please try my sweet potato pie....and let me know what you think. I value your opinions. -- posted by CookETC

Country Style California Olive, Thyme and Cheese Scones/Biscuits

This Californian olive recipe was sent to me by some lovely Bed and Breakfast guests (now good friends), who come from Temecula in California. They have stayed with us a couple of times now and love this part of SW France, and the food and wine! They grow olives and avocados, and regularly send me a selection of "California Growers" recipe leaflets, magazines and cookbooks, as well as a box of avocados every year! Always a treat! I have made these scones/biscuits several times now for appetisers and nibbles, as well as for picnics - they are delicious when eaten warm with fresh butter, mustard and ham. I make these with French olives, but I am sure my friends don't mind! -- posted by French Tart

Here's one to add to your bake sale repertoire--and they'll be just enough different [but still the same thing] to get the kids curious, and good enough that they'll sell like "hot cakes!" Save a couple for the home-folks, because you won't be bringing any home when you take these to the potluck or family reunion picnic! I use two bowls (recycle the first one) so I have everything ready to pour and mix--goes much quicker and no wasting time to measure when the stuff is hot! Again, the gals at Taste of Home get all the credit--Aug/Sep '09. -- posted by Debber

Wes' Super Awesome Pea Salad

I got this recipe from my buddy Wes which was a dish that his grandmother always made. People are sometimes afraid to try this 'cause the ingredients may seem strange, but I'm telling you, it's AWESOME! And once they try it they can't get enough. Also, don't be afraid of the canned peas, they really do work better than fresh or frozen. This recipe can easily be doubled or tripled for larger groups. I hope you enjoy! -- posted by Lovin' Life

Peperoni Farciti con Tonno e Acciuga, Lidia Bartianich's Newletter. The combination of sweet, meaty roasted peppers and well-seasoned oil-cured tuna is wonderful! Any fresh, meaty sweet bell-type peppers are suitable, different colors makes a nice presentation. Peppers always taste better when roasted at home but a jar of roasted red peppers can be substituted. The tuna filling is delicious on crostini or crackers: the sandwich, is out of this world!:). -- posted by Manami

Buffalo & Blue Cheese Double Dip (Meat-Free)

Vegetarians and carnivores unite! This side-by-side creamy buffalo and blue cheese dip is perfect for crackers, chips, pretzels, fresh veggies, and more. My sister cooked up some skewers of shrimp, chicken and onions over the weekend, and we found this to be a wonderful dipping sauce for them. If you like it hot, try the spicy buffalo side, or cool off with the blue cheese side. My personal preference is to dip a pretzel right in the middle for some of each. Or you can mix the two dips completely together. If you like, use light sour cream and dressing for a healthier dip. This recipe was inspired by a Wind & Willow dip mix. Makes 2 cups. -- posted by ItalianMama

Fresh Figs With Stilton and Walnuts in a Honey Drizzle Dressing

A new fig recipe for this year! Similar to my Recipe #250866 but with blue cheese and a honey drizzle dressing. I like to tuck a few fig leaves amongst the salad for colour........but please do wipe them first! Serve these figs with crusty bread, some mixed herb and salad leaves.......and a glass of chilled wine. Quantities for figs depend on the size; allow one or two large figs per person or, between three and six for medium to small figs. This makes a fabulous dinner party starter, or a light salad for lunch..........I sometimes serve this for the cheese course too, for something a little different. -- posted by French Tart

Tangy, Zesty Oil and Vinegar Potato Salad

The best potato salad you've never had. For when your craving that certain ZING from vinegar...I don't like regular potato salad.
This recipe comes from the LA Times Food section's SOS column posted in response to reader pleading. It is an adapted recipe from the bakery. You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins & likely need a slightly shortened cooking time. Should be getting about 11 grams of protein & 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds & canola oil.
Barbecued Shrimp BLT Sandwich With Lemon Butter Sauce

This is a Wolfgang Puck recipe and it is delicious! I found it again when I was surfing the net - as always, looking for something else, and voila I found it! I had eaten this a long time ago when a friend prepared it for us, my friend left for somewhere in Cuba -- never to be heard of again, more than likely she is very busy trying to build a house for her folks wheeling and dealing, so as to get what she needs -- she doesn't have time to write and then find someone that she trusts to deliver the letter to me! Anyway -- the recipe is truly wonderful! :) Wine pairing: If you're feeling adventurous try a full and oakey Chardonnay from Australia like Rosemount, Petaluma or Lindemans. This dish goes great with a number of the micro brews, such as Anchor Steam, Sierra Nevada or the most popular Samuel Adams. -- posted by Manami

Great as a snack, hot or cold!
I hope you like this as a variation as much as I do! -- posted by Chef #1534043

Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping.
Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice. -- posted by Southern Kitchen Gardener
