Fannie May Fudge Cloned

This recipe comes from a Texas cookbook called The Texas Experience. I've lost the book since moving, but had some favorite recipes written elsewhere. I make this every year at Christmas as it is so good.
I use toasted, chopped pecans or walnuts.
Cooking time does not include cooling time. -- posted by Chef #580861 Nesbitt

Whiffletree Chocolate Chip Pie

I snagged this recipe from my mother's recipe box This is by far and away my favorite dessert my momma made when I was growing up. A word of warning: the recipe says 6-8 servings, but I'd suggest 10-12 servings because it's soooo rich!

Here are my mom's notes & the recipe.

January, 1985 - Bon Appetit
Page 8 - RSVP

I think I have finally tasted the ultimate chocolate chip cookie; funny thing is, it is not a cookie at all, but a pie - the chocolate chip pie served at the Whiffletree Inn in Ilion, New York.

I would be willing to bet that I am not the only Bon Appetit reader who woud like to know how this dense and chewy treat is prepared. -- posted by Jen Wiehl

This is my version of the Buffalo Fries served at the Tommyknocker Brewery in Idaho Springs, CO. They are sooo good! This recipe can easily be doubled or scaled down for one. I like my fries drenched in the hot sauce and blue cheese, by all means don't add as much as is called for if you prefer.
Southwest Chicken Salad

This is a copycat from McDonalds..I went in a hunt for this recipe since I became obsessed with it. My obsession started because I added a chopped avocado to my McDonalds purchased salad and it was heaven. I got this from recipelink.com, the avocado is optional since it's not in MD's salad but sooo recomended. The dressing that the salad comes with is Paul Newman's Natural Southwest dressing, so sub that if you find it at the store if you don't want to make it from scratch. -- posted by Kitty Kat Cook

Caramel Macchiato Coffee Chez Kathy

"I like YOUR coffee best" insists DH. I developed this mixture as a copycat of Starbuck's Caramel Macchiato, but using my half-caffeinated, half-decaffeinated coffee mix (I use Chock Full O' Nuts decaf and ground Starbucks French Roast). I buy Swiss Miss No-Sugar-Added Cocoa in bulk when Costco puts it on sale at the end of the season. I squeeze the caramel topping for 5 counts for DH and 3 counts for me. When I can't find hazelnut flavored syrup, I use the vanilla flavor; we miss that flavor accent if I omit it. This recipe fills one 18-to-20-ounce travel mug. You can top with whipped cream if you wish to make a special presentation (that may be how we made it past our third date!). -- posted by KateL

Chikfila -Type Chicken Nuggets

These taste alot like Chik Fil A nuggets, but without the use of a pressure cooker. The peanut oil is essential....it helps with the flavor. Also, "Chicken base", if you don't know, can be found near the soups and boullions. I use one called "Better than Boullion". Base is essentially a very condensed broth...it's VERY salty, so don't add salt to this recipe when you pepper the chicken! -- posted by DragonFly2

Chipotle Mexican Grill Barbacoa Burritos

I received an email today from Ron from RecipeSecrets.net and here is what he had to say:

Ron here from RecipeSecrets.net - hope all is well.

When I used to work in NY city, I would eat lunch at Chipotle
Mexican Grill at least twice per week. I simply loved their
burritos and I was not the only one. The line would literally be
out the door starting at 12:30pm. We would fax in our orders in
advance to avoid the ridiculous lines - that was until other people
caught on and began faxing in their orders also :-(. Even so, it
was always well worth the wait.

Here's a recipe from Chipotle which I'm sure you'll love. Special
thanks to Kaci for posting this on the Secret Recipe Forum. -- posted by senseicheryl

Campechana: Mexican Seafood Soup

Campechana is a Mexican seafood cocktail usually made of oysters, baby octopus, mussels, shrimp, squid and scallops. The seafood mix is prepared in its broth with vegetable juice, lime juice, ketchup, cucumbers, tomatoes, onions, avocado and cilantro. Of course, jalapenos for the spicy kick (I only use 2 SMALL ones for flavor)! Tried this in a restaurant for $20 a bowl!!! I was able to find all these ingredients at Wal-Mart for under $35!! What you can't find in the mix purchase separately (my mix didn't have oysters, mussels or shrimp so I bought canned oysters, skipped the mussels and got frozen shrimp). This is in one word: SUBLIME. -- posted by Misses Wilson

This is posted in tribute to Bob Petrillose, its creator who passed away last month. I had the honor of eating way too many of these pizza subs during my college days.

I REALLY like California Pizza Kitchen's Greek Pizza. It's light, refreshing and I found myself thinking about this pizza so much, I had to find a way to make it at home.
This recipe is a work-in-progress and would love to hear your suggestions. I'm basing this recipe off of some of the information found here: http://answers.yahoo.com/question/index?qid=20080930103528AA7XB96
I obviously made tweaks here and there. CPK doesn't use Hummus, but I personally thought that would be good and was pleasantly surprised that it worked! You can obviously use Bread/Pizza Dough, but I don't have that kind of time after work so I did use store bought Flatbread/Pitas and Hummas.
The Chicken can be marinated in the rub and/or cooked before hand. The Prep Time can also be reduced by chopping the veggies and making the Tzatziki sauce the night before.
Serving size is negotiable. 2 6" pita pizzas is a serving in our house, but if you serve this with a salad you could probably go one each.
Can be veggie just by omitting the chicken. -- posted by Tarteausucre

Chevy's Watermelon Fresh Fruit Margarita (On the Rocks)

Top Secret Recipe Version, from Todd Wilbur. You will need to puree fresh watermelon in a blender for this recipe. First, cut some ripe seedless watermelon from the rind, and then coarsely smash it in a bowl with a potato masher or large fork (this gives the blender something to grab on to). Pour the melon from the bowl into a blender and blend on high speed for 10 seconds or until it is pureed. -- posted by AmandaMcG

Primanti Bros. Style Sandwich

My tasty take on a Pittsburgh Original. I live just north of Pittsburgh, and not far form a Primanti's. We go there quite often, but when I want to save money or am really craving a sandwich, I just make one. Or course it's not as god as the original, but pretty darn close!
For the recipe I put corned beef as my meat, but you an use any meat you prefer. Primanti's offers up Pastrami, Ham, Cappicola, steak, fried egg, turkey, and much more on thier sandwiches. This recipe is for two sandwiches. -- posted by Kitchen Wytch

County Fair Kettle Korn

Don't you just love that kettle cooked popcorn available at county fairs? It's sweet; it's salty; it's deliciously crunchy. It's usually pretty expensive too! This is a great, SUPER EASY recipe to make it yourself - just like you enjoy at the fair - with only 3 ingredients! I ran across a similar recipe years ago online and tweaked it a bit... in other words, perfected it.
Vegetarian Western Bacon Cheeseburger

I know, this sound weird. I've been a vegetarian for 5 years and there are some items I missed from my meat eating days. I was having a craving for a Carl's Jr. Western Bacon Cheeseburger one day and decided to vegetarianize it. This is super easy to make and tastes very much like the original. To save time and to make it taste more authentic, use onion rings from a fast food restaurant like Sonic. I prepared the burger while I send my boyfriend down the street to Sonic. Also, slightly burning the Lightlife Smart Bacon is what makes it taste like real bacon. -- posted by danakscully64

Copycat Cracker Barrel 40th Anniversary Double Fudge Cola Cake

Cracker Barrel brought back their famous double fudge cola cake for their 40th anniversary and I was able to give their version a try.
