			<description>I fell in love with Chilaquiles while on a trip to Cancun. I recently found this recipe from Rick Bayless, and I am thrilled to have it!  I haven't tried it yet, but I'm sure that it is to die for like everything else he does. I've posted it here for safe keeping.  When I do make it, I will probably scale it down for just the two of us.
  update; This was amazing!  Just like I remembered! I made this today and used 1 jar of the salsa and 1 cup of chicken broth. I also bought a package of refrigerated corn tortillas. I cut into 9ths pizza style, and fried them in oil. I used 18 tortillas. I used a mexican queso fresco, a mexican crumbling fresh farmers type cheese for the garnish.  Totally delish! 			<title>Smoky Chicken and Chorizo Mexican Enchilada Baked Casserole</title>

			<description>This recipe was made from leftovers and has been requested again ALREADY by Malcolm, my husband! Cooked chicken is mixed with smoky, hot chorizo sausage and folded through a chipotle chilli tomato sauce..........sounds too hot?! I then added some sweet corn, sour cream and a jar of mild salsa to calm it down a bit, but please DO use hot salsa if you like a little spice in your life! I topped this with a dollop of sour cream and dressed it with chopped jalapeno peppers, parsley and a little chopped coriander (cilantro) for a perfect cold weather lunch. I devised this recipe especially for the Two for One Leftovers event in the Cooking Photo's Forum. Please adjust the chilli powder to your own requirements. I like spicy food but Malcolm does not, so I topped mine with loads of chopped jalapeno peppers and a sprinkling of chipotle chilli powder!! NB: I used Spanish chorizo sausage, which is cured; if you are using fresh chorizo sausage, it needs to be browned beforehand.(I made this original recipe with leftovers from KissKiss's Recipe #368069. 			<description>Having run through a range of biscuit recipes, this has become Kimberly's favorite way to have them.  I'm not going to complain, they're lovely and fluffy, and if I have to make them, it's easy as pie.

They're a little crispy on the edges, top and bottom, deliciously soft on the sides, and almost impossible to get wrong.

			<title>Easy Beef Stew Baked in a Cast Iron Dutch Oven</title>

			<description>This is in the oven right now and it smells so good, we can hardly wait for it to be done!  No browning necessary.  Company coming?  Toss in another potato and carrot - this recipe is forgiving!  Serve with Recipe #348286, hot and buttered.  My youngest brother would find out I was making this stew and biscuits and he would invite himself over and eat me out of house and home.  His favorite way to eat this stew was on top of buttered biscuits.  I think with a salad and dessert this would serve about 6 but around here I would say it serves 4.    ***UPDATE***  This recipe is for a cast iron dutch oven with a heavy tight-fitting lid.  I've made this a million times and have had left-over gravy for noodles, rice, etc.  Make sure you don't bake at any higher temperature than 300* and you don't use corningware or any other casserole. 			<description>This gluten free, dairy free, vinegar free recipe is one of my favorite to fix for any company and to have around during the work week. It has great, easy to find and healthy ingredients.  Made in the crockpot.  Can be ready for you to come home to (and smells incredible).  Just pay attention to the canned/stewed tomatoes you pick up to make sure they are vinegar free.  Also if you are concerned make sure there isn't any high fructose corn syrup in those canned tomatoes also.  The more natural the better.  This is great even with gluten free cornbread. Destined to become a family favorite because kids love it and parents love the simplicity of this oven-to-table meal.    I had a great result making this with bone in chicken leg thigh quarters.  I had one piece that was skinless, and we discovered that using skinless does allow the flavor of the glaze to permeate the chicken better.  This was a hit with my whole family - including my hard to please 3 year old.  
I used ketchup, reduced sodium soy, and lite maple syrup.  Ingredients I happened to have on hand.  This could NOT be easier.  Adjust cooking times as needed for bone in cuts.  Great with white rice and steamed broccoli.

The key to this recipe is getting GOOD enchilada sauce - you won't be happy with the normal, Americanized El Paso brand, etc.  Go to the Mexican food aisle and get some of their sauce.  Additionally, good corn tortillas are also very, very important, and the cheaper ones are rubbery (mission brands aren't good).  

All spice amounts are general, and should be modified to taste ( you should start with less and build the sauce up to the taste you like with these seasonings). Side Note: Many people use &amp;quot;Splenda&amp;quot; as a sugar substitute, if you get an icky aftertaste try Stevia, like &amp;quot;Truvia&amp;quot;.  I personally prefer &amp;quot;Sun Crystal&amp;quot;, a mix of natural sugar cane and stevia.
