Samoas Bars - Just Like the Girl Scout Cookies!

These bars are an easy-to-make copycat version of the coconut/caramel/chocolate/shortbread Girl Scout cookie that seem to come less and less to a box every year... maybe it's just me... I LOVE these cookies - I have been an addict since I was in the Girl Scouts at age 5, and upon first bite I knew these bars and I would have a long, loving relationship (when I'm not at the gym frantically trying to elliptical away the evidence of my coconut-caramel love affair). :) NOTE: Prep time includes cooling time. -- posted by Greeny4444

Corn and Black Bean Macaroni Salad - Tex Mex

Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
I opted for yogurt and smart balance for better health. But you can use sour cream and mayo. -- posted by ~Rita~

Crusty Portuguese-American Yeasted Cornbread (No Knead)

An easy no-knead recipe for "pao de milho" is from Nancy Baggett's wonderful new cookbook, Kneadlessly Simple: Fabulous, Fuss-Free, No-Knead Breads". The large, homespun loaf has a mild, go-with-anything flavor and a delightful crusty-chewy top. It has a finer, moister crumb than most cornbreads, the result of the cornmeal being combined with boiling water and turned into a mush first. This simple, seemingly unimportant step makes a big difference in taste, too: Due to chemical changes that occur as the cornmeal begins to cook, the bread is noticeably mellow and sweet, even though no sugar is added. Serve it with meals, along with butter, toast it, or grill it and use in all sorts of hearty meat, cheese, and roasted vegetable sandwiches. This bread is very easy to make, but due to the slow rise, no knead method, you must start this bread a couple of days in advance. -- posted by blucoat

Vampire Cookies

These are fun cookies for Halloween or a vampire genre party. The cookies have a light vanilla and butter flavor to them, and are the perfect color to really set off the red of the filling. The have a slightly crisp edge and a soft, chewy center. When you take a bite and expose the jam, they really do look like they’re bleeding! They are baked at a slightly cooler temperature than some cookies, so they don’t really brown during baking. Best if served the same day. I found this recipe on one of my favorite blogs, Baking Bites. -- posted by tammy dalton

Chocolate Chipotle Cookies

I found this recipe on a baking blog that I frequently read. These cookies have a Southwest flair that satify a chocolate craving with a little spicy kick!
Spicy Sausage, Peppers and Onions (Crock Pot)

Spicy sausage, pepper and onions. Takes very little prep time and is great for potlucks. Inexpensive and makes alot. Very delicious kids and adults both liked it is very filling. I first took it to a church game night that was just supposed to be snack food but knew I would want something a little more filling than chips had several requests for the recipe. Which made me have to think because when I first made it I used what I had in the house. This is what I remember using. I used Bar-S brand polish sausage which is just a cheap sausage a pack of 3 lbs is about $4 ( found in with the hot dogs in the refrigerated section lunch meats and stuff). Could be used as an entree ( just serve it on a whole bun) snack or starter for a party I think. -- posted by awmeme

Fudgy Chocolate Cupcakes (Or Cake)

There was an o.k. recipe here on Zaar that I have worked on and changed to make these truly amazingly rich and chocolatey cupcakes. Don't be scared of the tiny bit of coffee it only deepens the flavor of the chocolate. These don't require any frosting but the kids love it with frosting and some colored sprinkles so that's what I typically do. I like to use my lazy version of Recipe #19353 (a little bit of this, a little bit of that) and they always look and taste wonderful. As an added bonus this has no shortening, butter, or margarine (all those bad trans-fats) but amazingly enough they still taste fattening. -- posted by scancan

Seven Layer Guacamole Dip

The Best Salsa Ever

I like a thin and spicy salsa for my tortilla chips, eggs, tacos and more. This is a very simple version of something you might find at a salsa bar in a Mexican restaurant. If you like it chunky you might consider diced tomatoes and less water. Not bad for something you can make with a $1 can of tomatoes and some ingredients in the spice rack. For a milder version you can skip the habanero sauce and use your favorite hot sauce. -- posted by NorCal Will

Horsey Ham Casserole

It's not what you think! The "horsey" in this recipe is horseradish. When I was young, my mom would make this maybe twice a year, mostly for potlucks and family gatherings, and it was always (and still is) one of my favorite foods.

I RECOMMEND CUTTING THIS RECIPE IN HALF! As it is written here, it makes about 20 servings, but it CAN BE FROZEN. So, if you don't halve it, you can at least freeze half of the finished product and save it for a couple weeks later. -- posted by grungezombie

My mom and I created this recipe after having an incredible cabbage/ham eggroll appetizer at Destihl Brewery in Normal, IL. We've turned it into a wonton dish, but the result is just as pleasing. Can be made ahead and kept in the freezer--making the filling process something you can do when you have extra time.
Marmie's Really Tender Crock Pot Pulled Pork

I was fiddling around with trying to make a yummy Pulled Pork for my stepson Jesse's wedding rehearsal party. I did one butt in the oven without soda and one in the crock pot with soda. I had never used soda pop in a recipe before but I heard it was worth a try and YES it was! The Crock pot recipe turned out so tender, moist and delicious, (according to the thirty something guests...this was a real hit.) Well worth trying and very easy to make. A lovely outdoor or 'big game' meal served with a variety of salads and crusty buns. Oh, and beer.
Smoky Strip Steaks With Chimichurri Sauce

From: July Fourth, Published July 2007, on the Grill & Pairing of the Day: Big, Balanced Red Wines, July 2008, Food & Wine Magazine, Recipe by Laurent Tourondel. The chimichurri sauce made with parsley, garlic & olive oil is the ubiquitous accompaniement to grilled meats in Argentina; when serving steak, Chef Turondel often prefers its clean, sharp flavors to richer French sauces like bernaise or red wine sauce. The tang of chimichurri is especially delicious with his smokey steaks, seasoned with both smoked sea salt and smoked pepper. Make the sauce a day ahead - it will keep very well. :) -- posted by Manami

Sticky, Chewy, Messy, Gooey by Jill O'Connor is a wonderful book with some of the most delicious-looking desserts!. Found this one there too, the desserts are to die for! A sweet, crumbly graham cracker crust is topped with a dense, very adult, very rich, and very boozy chocolate cream ;).The combination of liquers here is by no means written in stone: dark rum, Grand Marnier, bourbon -- just pick two or three complimentary flavors.
Melanie's Chicken Chili

Years ago, I started experimenting with a Chicken variety of my mom's old basic chili recipe. I think I've made this Chicken Chili at least 100 times. Every time, I guarantee it is slightly different. The only time I ever wrote down the recipe (of how I made it that day) was for my mother-in-law who won a Chili Cook off with it.

So here goes - I'm attempting to officially put it on paper. Some measurements may be slightly off (especially the spices) but the overall target flavor is the same. -- posted by Melanie B.

Pumpkin Fluff Dip

This is a Midwestern classic apparently-- a school chum from Iowa told me about this recipe that's popular around fall and early winter, from having leftover cans of pumpkin from stocking up on sale but not wanting to make any more pumpkin pies-- they're popular for high teas, luncheon spreads, Superbowl parties, Thanksgiving and Christmas, or sitting on your can watching The Golden Girls. :D Since I didn't want to use actual marshmallow Fluff...this is my fluffy adaptation of this recipe that came out HEAVENLY. I could eat a drum of this stuff and not get bored of it! One 15 or 16 oz can of pumpkin works, or you can measure out 2 cups from a 28-oz can. You can also use 2 tsp pumpkin pie spice for the spicing but it tends to be overpowering, the subtler cinnamon and nutmeg is better. -- posted by the80srule

After making a couple batches and having them come out just as I remember as a kid, I decided I had to share it with the world. -- posted by Chef Curt

Pumpkin Cupcakes Cake

I needed something cute for our fall festival cakewalk at church this weekend and I found this recipe in the Better Homes and Gardens publication "Halloween tricks & treats". It was really easy; the hardest part was picking the orange and black M&M's out of the M&M's GHOUL'S Milk Chocolate Mix. If you live in a bigger city or can order online, you can probably order just orange and black ones to make this easier yet! -- posted by DeniseBC

Versatile Buttercream Frosting

This is a copycat recipe from another one I saw on here-- but not a duplicate, because this is intended to be made for frosting than for bonbons (though it certainly could be used that way.) By "extract", vanilla extract is the most commonly used one for traditional buttercream flavor. But this is a versatile recipe: you want almond-y buttercream? Use almond extract. Fruity buttercream? Try orange, strawberry, or pineapple extract. Why not chocolate extract or peppermint extract! Chocolate and vanilla extracts together taste great too. Frosts about 20-24 cupcakes or one 8" two-layer cake. -- posted by the80srule

This pumpkin recipe is just outstanding. It is a great change from Pumpkin Pie and it serves so many more people. Every time I serve it, even the pumpkin pie haters beg for the recipe and add it to their Thanksgiving menu the following year. Please try it, I know you will just love it!!!! -- posted by LizP

Down South Sweet Potato Pie

Whether from the North or the South, East Coast or West Coast, homemade sweet potato pie brings out the Southern drawl in all of us. The sweet potatoes provide this indulgent dessert a healthful boost of nutrients, especially beta carotene (forms vitamin A). This pie can be enjoyed not just during the holiday season, but all year long!

This is a very old recipe from Eagle Brand®. I thought I should post it in time for the American Thanksgiving. It has very few ingredients and takes very little time to make. And it's good! Enjoy! -- posted by Nif
