Caribbean Style Catfish

Caution: This recipe includes Almonds; anyone with a nut intolerance should eliminate this product entirely from the recipe. Farm-raised catfish is reported to be naturally low in overall fat and high in protein. Suggested serving with a plain green salad, (olive oil and balsamic vinegar dressing); steamed corn on the cob. A lovely, thick-meat fish, enjoyed frequently by our household. A recipe brochure by DELTA PRIDE, picked up at the supermarket, added to my files and referenced frequently for quick cooking meals. -- posted by TOOLBELT DIVA

Catfish With Spicy Tomato Sauce and Pecans

This is a great, quick meal that's wonderful for doing after work. Any white fish fillet will work with this recipe and when you can get good, summery, red tomatoes you can sub them for the canned. I serve this with a white and wild rice pilaf but it's probably good over pasta as well. -- posted by Hey Jude

Catfish Stuffed Pistolettes

A piquant and delicious way to use up any leftover fish (although this IS worth cooking the fish for) courtesy of Great Cajun Cooking. Pistolette rolls are palm-sized, brown and serve bread rolls. If you can't find them at your local market, use a good French type bread roll. -- posted by Molly53

Spicy Oven-Baked Catfish

The egg whites keep the moisture in the fish, I strongly suggest to serve this with creamy lemon sauce (recipe below) it is what makes this extra special and the sauce takes only minutes to make, it can be made up to 1 day ahead if desired, using low-fat sour cream for the sauce will reduce the some of the fat content, using fat-free sour cream it will make it almost totally fat-free, although I have never used fat-free sour cream I cannot say it will be okay, you can of coarse use full-fat sour cream if you wish! Adjust the cayenne pepper to taste. -- posted by KITTENCAL

Memphis Pecan Crusted Catfish

Yes, I admit it, I watch “Survivor.” *wry smile* The season that had chef Keith Famie in the Outback was one of my favorites. Now he has his own cooking show on FoodTV, and this is one of his recipes that I’ve tried and adapted a little. It’s easy and quick to make, and he served it with sautéed mustard greens on the “Memphis” episode. From my Saturday, January 26th, 2002 LJ entry. -- posted by Julesong

Restaurant-Style Fried Catfish

Plan ahead there is a 1-1/2 hour refrigeration time for the fillets, you may omit the cayenne completely or increase to suit heat level --- for best flavor I use peanut oil for frying but vegetable oil will do fine I have even fried the fish in olive oil :) -- posted by KITTENCAL
