Pink Lemonade Cream Cheese Pie

Very simple, very tasty summer pie. Found it in one of my Gran's many, many notebooks, so I have no idea from where the recipe originally hails. Cooking time is time in the freezer (don't leave it in there too long!) plus time to finish in the refrigerator. -- posted by Morgorond

Almond Tofu

This is a very popular dessert dish in Asian countries. It's easy, simple, and refreshing! It doesn't actually use tofu, but it's white and cubed, which resembles tofu, hence its name. Give it a try, I have shared this with many of my non-Asian friends and they all loved it and gave rave reviews! -- posted by Cabnolen

Raspberry Chocolate Chip Frozen Yogurt

From Eating Well magazine. This is light and refreshing - a perfect summer treat! Not overly sweet, either. Regular chocolate chips work well, but mini ones are nice. The raspberries should be fresh or frozen, not thawed. -- posted by Patti599

Mom's Slaw

This is mom's coleslaw recipe. She is always asked to make the slaw at every family function because she makes the best. As a special note, I believe that the fine-ness of the shredding of the cabbage & carrots really can change the turnout of the coleslaw. My family really likes it finely shredded. Others may like it shredded much more course. -- posted by Jill R Q

Superfruit Smoothie

My absolute favorite smoothie - banana, kiwi, mango, peach, and clementine! When fresh fruit is in season, I like to play around with different combinations, but this is the one that I make the most. Not only does it taste absolutely amazing, but it is loaded with natural nutrition too; Vitamins B & C, potassium, dietary fiber, omega-3 F.A.s, antioxidants, calcium...much more wholesome (and yummier!) than a vitamin pill in my opinion. And because of the fiber and protein, it is filling enough to be a hearty snack or a meal substitute. Before you get too excited, a quick word of warning about the kiwi - if you eat too much at once it can make your mouth feel tingly and raw (yes... I've had this happen. I can't help myself!) I hope you like this smoothie as much as I do! :) -- posted by Oenophilly

Fruit salad is one of my go to favorites to take to summer events. Light fresh and easy, you can always please a crowd. The color contrast between the tropical fruits and the bright berries will be an eye-catcher with the addition of ginger, lime and mint giving it jazzy finish that everyone will remember.
Sylvia's Cucumber Tomato Salad

This is an amazing salad and an old family recipe from my MIL. This one is special...I promise! Once you try it, you'll be hooked. I'm not too keen on mayonnaise but I LOVE this salad. In the summer, you can make it with garden vegetables. If you're like me, you'll be tempted to leave out the sugar - don't! It brings out the flavor and juices of the veggies and transforms the dressing.
This is our chef' son's recipe. He had it published in the Aus magazine Country Style. I'm posting it here so I can share it with my sister. It's delicious as a starter on a hot day. White anchovies and sherry vinegar are available from continental delicatessens and gourmet food shops, micro herbs can be ordered from fruit and veg shops. Overnight soaking of almonds hasn't been taken into account in prep time. -- posted by JustJanS

Everyone loved it, but someone suggested it would be "over the moon" with a little chocolate. So next time, I'll probably replace one of the sorbet layers with chocolate ice cream or sorbet. Either way, it's easy and delicous as it stands. As written, it's 5 WW pts per serving.

Veggie Sandwiches A.k.a. Veggimiches

I used to make these all the time in southern Cali for my BF. Now that I've relocated to the far North, certain fresh ingredients are harder to come by, so I haven't been able to make this sandwich in ages. I'm not sure where the "m" stems from in "veggiemich," that's just what we ended up calling it. :) The reason for mixing the mustard and dressing prior to spreading on the bread is to avoid uneven spreading while keeping the calorie count down. Everything can of course be omitted or replaced to your taste; you can even make it Atkins-friendly by making a lettuce pocket and omitting the bread, hehe! We loved using a lot of pepper for a nice kick. You can make it a more filling meal with other additions, too! ^_^ -- posted by FuzzyKiwi

Peach and Cucumber Salsa

Low calorie, fat free vegan recipe from Whole Foods; it is highly rated on their website. They suggest serving it atop grilled fish but I think it would also be great with chicken or pork tenderloin. You can make it up to 4 hours ahead of serving, just keep it in the refrigerator. I think mango and a splash of OJ would be a great addition to this recipe as well! NOTE: I just made this recipe and I added the OJ for a touch of sweetness and added a couple drops of jalapeno sauce for more kick. I also didn't care for the mint, so I changed that to optional. . .the basil was nice I thought. -- posted by JanuaryBride

Rose Cottage Fragrant Old English Rose Liqueur Syrup

This is my mum's recipe for rose syrup - and the name of their cottage in England! Try to use old English shrub roses, as they are highly fragranced and impart a delicate flavour to the syrup. The correct word for this recipe would be a Shrub or a Ratafia, as it is fortified with brandy - however, Ratafia would also have fruit or almond kernels added; it would have been offered as a refreshing "pick-me-up" to gentile ladies - with water or lemonade added of course! This recipe is well over 100 years old and a bottle of this would make an unusual and delighttful gift. -- posted by French Tart

Auberge French Lavender Marinade for Beef, Lamb or Chicken

A wonderful marinade for beef, lamb or chicken; this marinade is suffused with the flavours and smells of summer, minus the sound of the bees buzzing! Allow the meats to marinate all day or overnight for a more pronounced flavour as well as being extra moist and juicy. Culinary lavender essence can be bought at specialist cook's shops online or at your local lavender farms. If you cannot get hold of culinary lavender essence, use a handful of lavender flowers, lightly crushed. -- posted by French Tart

Old-Fashioned English Summer Berry Jelly and Ice Cream!

Little wibbly-wobbly ruby red jellies with mixed summer berries, so cooling and great with ice cream. There is nothing I love more than taking a basket to the end of my garden to pick an assortment of ripe summer berries when they are in season! The sense of satisfaction at picking your own fruit is wonderful. Although I have called these little jellies “English” summer berry jellies, I DO make these in France of course - it's just that the berries remind me of my grandparent's gardens and picking the fruit when I was little…………...plus, the combination of berries is the same as a traditional English Summer Pudding recipe! I make these in little vintage metal moulds, they look so pretty served this way; you can of course make this recipe in a large mould, but DO allow extra time for the jelly to set. -- posted by French Tart

Korean Beef Salad

I got this from a Sunset magazine about 15 years ago and having lost it and found it several times, I'm finally putting it in here for sanity's sake! The recipe calls for sliced deli roast beef, but I've used leftover steak or roast and it's great. The veggies can be played with too--cucumbers, sliced bell peppers, halved cherry tomatoes, bean sprouts have all worked well. It's very refreshing and no cooking! Prep time doesn't include the marinating time. (I've marinated it for about an hour, and that's still enough time) -- posted by DeeCooks

Fresh Peaches in Sauternes Soak With Angelica and Lavender

This is a wonderful, light summery dessert, which never fails to please my guests, as well as my family and friends! Fresh peaches are soaked in sweet Sauternes with angelica leaves and lavender flowers tucked amongst them. Angelica is an interesting, aromatic tasting herb, and although I normally only use the stems to candy or crystallise (Recipe #248003) I have discovered that the leaves also make a great accompaniment when used with fresh fruit. Try to serve this fresh fruit salad in a large clear glass bowl for maximum impact; it just looks so pretty with the light shining through the fruit, juices and herbs! I find that the only thing that is needed to serve this is a good dollop of crème fraiche. I have also made this with apricots and melon for a slight change. I like to use a combination of white and yellow peaches for this recipe – but please use local and fresh peaches regional to your area. Prep time includes the minimum "soaking" time. I have not tried this with tinned peaches, but suspect that they may be too "soft" to hold their shape for prolonged soaking. -- posted by French Tart

Ensalada Taracita

Spicy and sassy, this Tex-Mex influenced salad tastes alive and looks alluring. The idea begins with a common go-to salsa salad, but my improvisations make it one of a kind. Have fun with flavors as you add and subtract your own favorite fruits, veggies, and dressings. I don't use a dressing as the fruit juice and pico de gallo usually add plenty of flavorful moisture. A mango vinaigrette would be nice though. -- posted by taradelyce85

Crabby Avocado Salad

This is from a South Beach cookbook, but I like it with imitation crabmeat a lot better. The original recipe also calls for the jarred roasted red peppers but I find I don't really miss it if I don't have them. One of my favourites and it's even good thrown in a tortilla with a little lettuce for a sandwich! I will say though, it doesn't keep that well - eat it the day you make it as it get kind of watery and the avocado gets a little mushy the next day. I also usually just wing it with the cayenne, depending how much spice I feel like and I add more cilantro sometimes because I love it! -- posted by Cadillacgirl

Lavender, Lemon and Honey Tea from Wolds Way Lavender Farm

A wonderful recipe that I discovered on a recipe card from Wold's Way Lavender Farm in North Yorkshire, England! This magical lavender farm is just down the road from my parent's house and is high on my "must visit" list when I go home to England. I have found that this tea is a miracle worker for headaches, head colds and colds in general........the soothing honey helps sore throats whilst the lemon contains essential vitamin C, and the lavender provides a calming and refreshing element to this herbal tea or tisane. Although this is mainly served hot, I have made this during the summer months as an iced tea, as it's perfect for hot, sultry days. -- posted by French Tart

Berry Yoghurt Smoothie

I got this recipe from Sarah Owen's book "The Top 100 juices", published by Lifetime Distributers, Castle Hill, Australia.
Sarah Owen says "The super-nutrient vitamin C is needed for more than 300 diferent processes in the body, but it is easily wiped out by smoking, pollution and stress. Found in abundance in berries, vitamin C and other antioxidants help to quash the damaging free radicals that are associated with many illnesses."
The original recipe calls for natural bio yoghurt to be used, but any yoghurt will do.
This makes a large amount of smoothie, and if you're making it just for yourself, I'ld recommend halving it.
I hope you enjoy this healthy - but still tasty - smoothie :) -- posted by TALIA #3
