			<description>Not sure where I found this but it was on my computer and still looks good to me.  With summer coming salad entrees that require little or no cooking work especially well.  Cook some barley one night for dinner and reserve some to make this the next day.  Though this is good after a couple of hours, it's even better the next day as the dill flavor really infuses the dish and the tuna flavor mellows. (Please don't eat this right away, not very tasty.) For WW followers, this is Core or 3 points for Flexers. 			<description>Wildly decadent, very rich terrine.  The quantities given are suitable for a main course for 8 people - cut each slice in half if serving as a starter, in which case the recipe will serve 16.  Very good with a simple watercress salad (dressed with walnut oil and wine vinegar) and some fresh, crusty bread, perhaps with a little onion marmalade or some other sweet chutney on the side.  This recipe originally came from a fabulous vegetarian cookbook called &amp;quot;Food from the Place Below&amp;quot; by Bill Sewell.  I am not sure if I have modified it over the years, but this is the version I currently make, and I think it's great! My husband and I went to French Polynesia and this was a base dish at many meals. We never had a recipe for this but we paid attention when it was being made. As a result of having this dish my husband learned how to open fresh coconuts with a stick and a rock.

Tip: If you do not want to go to all of the trouble of shredding a fresh coconut use the store bought can of coconut milk (make sure you shake well before adding to the tuna). I served it at a party recently with shrimp in it and everyone loved it!

I searched high and low and finally found a woman on a message board that used to work the deli counter in the late 80's at a K-mart in Dayton, Ohio. This was one of the same stores that my Mom would take me as a kid to get one of these wonderful sub's and a frozen Coke! I used to stand in front of the counter and watch them make these sub's and remembered all but one of the ingredients. This is very filling even as a vegetarian salad without the chicken or shrimp; at Smokey Bones they give you an unrealistically huge portion - making this recipe only serve four.
