Broccoli-Cauliflower Salad

This is one of my favorite recipes. It is always requested at family get togethers, even by people who don't like broccoli or cauliflower. It is best if made a day ahead. I try to watch calories so I usually use Splenda, fat-free Miracle Whip and fat-free cheese. It looses nothing with these substitutions. -- posted by Nane

Giardiniera Angelina

I love the flavor of these marinated vegetables! The salt and juices from the veggies creates its own sort of "brine" without being overpowering, and makes the recipe a little different from those that use vinegar. This giardiniera is best served slightly chilled or at room temperature. The heat of the serrano peppers can be adjusted (or use milder jalapenos), and the preparation time includes two days of marinating. -- posted by EdsGirlAngie

Colorful Vegetable Salad

This is my favorite salad to make for family gatherings and potlucks. It's very easy and so much healthier than potato salad. It can be made ahead--in fact, it's at its best after about 12-24 hours of marinating. It keeps well in the fridge for about 2-4 days before it starts to deteriorate in quality. Prep time is estimated; you can buy pre-washed broccoli florets and cauliflowerettes to speed preparation. Cooking time is minimum marinating time. -- posted by Halcyon Eve

Sunny Vegetable Salad

This is hands-down my favorite recipe to make for any family dinner. Sunny vegetable salad is too good for words, you'll see when you make it. It does take a bit of work doing everything from scratch (particularly the broccoli and cauliflower), but I guarantee you'll run out every time because everyone goes for seconds.

I posted this recipe as it originally was, but my family always makes it with 1/3 cup instead of a 1/2 cup sugar and it's just as good. -- posted by Jeff Hammer

Marinated Avocado Cauliflower Delight

Being a person who tends to make do with what I have on hand, I came up with a new twist on a cauliflower salad the other night. My inspiration? Coop day is coming around again in a few days, and I had a head of cauliflower and several avocadoes I needed to use. Though I enjoyed the tartness of the salad, I also thought it would be good with a bit of sweetener to make it a sweet/sour dish. I used onions and tomatoes from my organic coop which I had dehydrated myself, which was fun.

As my husband and I are experimenting with vegetarian and vegan meals, we simply had this salad by itself for supper. -- posted by Chef #962323
