Cherry Ripe Crackles

Cherry Ripe is an Australian chocolate bar. It consists of a cherry and coconut mix covered in Old Gold dark chocolate. It is similar in many ways to dark chocolate Bounty bar. Please note that I had to use the description of 'dark chocolate chips' as Recipezaar doesn't identify Cherry Ripe Chocolate bars. You will need to change the 'dark chocolate chips' back to Cherry Ripe Chocolate Bars for this recipe. Also our cup measure larger usually 250ml. Desiccated coconut is coconut that has been dried and very finely chopped. I haven't tried this recipe yet but wanted to post it here for any Aussies out there that love Cherry Ripe Chocolate Bars :) -- posted by Jewelies

Rhubarb or Apple Cake

This is a family recipe, and yes the ingredient amounts are correct. I got this recipe from my gran who got it somewhere else (i like to make it my own by adding 300g light brown sugar and 80g dark brown sugar). I have made it on numerous occasions and the reviews every time have been outstanding and i have had many comments such as the best cake i have ever eaten. Today our neighbour came around and tried it and said it is everything in one - moist, chewy, crunchy, soft, - she went on and on. -- posted by Perfect Pixie

Auntie Heather's Awesome Picked Beetroot / Beets

My Auntie Heather in New Zealand, has been making this recipe for as long as I can remember and people have been demanding the recipe for that long too... Now it was my turn to request this treasure, because it's my most favourite beet / beetroot recipe ever. The SECRET of this recipe is simple and is the "cup for cup" rule, so for every cup of the boiled beetroot juice used, you *must* use one cup each of the sugar and vinegar. I have given the recipe for 1 cup of beet juice and depending entirely on how big a quantity you are doing at a time, you will need to increase accordingly on a per cup basis. Yield/serve size is therefore variable. How easily magic is made! There are other recipes with added extra's but this one relies on the full taste of the beetroot juice and never needs to need anything else. I searched all 20+ pages of beet / beetroot and didn't find one exactly like this. Good for salads etc but beetroot lovers have permission to just take a fork and eat a whole jar. Thanks Aunty Heather!

Mum is not sure where she got this recipe, although she and my aunty are certain it was from their aunty may. This is such a yummy pudding.
Snowballs

This recipe comes from one of Mum's old local cookbooks and was contributed by Mrs Murray Taylor. Mrs Taylor had a pretty good reputation as a cook and these are very quick and easy. I loved them as a kid and my kids happily demolish them too.
The recipe is very forgiving too. I've used the sizes of my local tins of condensed milk and packets of biscuits and its basically one of each.
These are also excellent if you are asked to bring a plate anywhere. They disappear in no time! -- posted by Missy Wombat

So Simple Chili Con Carne

Being a Kiwi my favourte baked beans are Watties! Cabanossi can be used instead of salami. For anyone that doesn't know Cabanossi is a type of dry sausage, similar to a very mild salami. It is made from pork and beef, lightly seasoned and then smoked. It is commonly cut into bite sized chunks and eaten cold as an appetiser or snack, often with cubes of cheese and crackers. Sliced cabanossi is also a popular pizza topping. -- posted by Jewelies

Great served with "Emz Fantastic Felafels", but is also delish with sauteed vegetables (especially egg plant).

Pavlova With Whipped Cream and Fresh Fruit

Pavlova is a traditional to Australians and New Zealanders that was apparently created in honour of the ballerina Anna Pavlova, when she toured in those parts. It is basically a delicate mountain of whipped meringue. After being baked under low heat, the outside shell gets crunchy, the top gets browned, but the inside stays chewy and soft - like creamy fresh marshmallow. It then gets piled high with softly whipped cream and fresh fruit. The result is dreamy, with the consistency of a cream-smothered cloud. -- posted by Chef #1008075

I found this recipe for a healthier Anzac Day biscuit on the New Zealand Heart Foundation website. It comes from a program they have done aimed at schools.
