Sandys Gourmet Mushroom Soup

This was given to me by one of my husbands gym buddies, I did make it and it was indeed very good, although I'm not a great lover of mushrooms. I don't know if it was her own recipe or if she found it somewhere, but here it is, I thought it was worth sharing! She specified brown mushrooms, I used button mushrooms. -- posted by Karen Elizabeth

Slow-Roasted Stuffed Swiss Brown Mushrooms

I love mushrooms: could eat them every day! And love this recipe, adapted from one by Nino Zoccali, that I found in the September 2009 issue of the 'BBC Australian Good Food' magazine. Nino comments that he never peels the skins from mushroom caps "unless they are damaged or stained and (that) unlike many chefs (that he likes) to use the mushroom stems - as long as they're tender." Ah, great, I thought, before trying this recipe! Perhaps it's uncool, but I only peel mushrooms if the recipe persuades me of the need to do this, and I generally use the stems. As Nino says "I think they taste great." Some conversions: 15 grams = 1/2 ounce; 60 grams = 2 ounces; 80 grams = aproximately 3 ounces. -- posted by bluemoon downunder

Easy Oven Roasted Vegetables

This recipe was a quick side dish to my Tuna Casserole. I felt like I needed more veggies on my plate, so I raided my fridge for whatever I could find. The baby bella mushrooms I used added a nice meaty texture to the dish, and absorbed the flavour of the dressing nicely. Use whatever vegetables you have on hand; zucchini, carrots, and even corn would make a nice addition. This fast side dish recipe could also be used over pasta or rice for a complete meal. -- posted by BrittanyS

Mushroom Walnut Loaf(Vegetarian Meatloaf) Copycat from the Spot

I was a vegetarian about 10 years ago and I was always trying to find good creative vegetarian dishes. My husband took me to this vegetarian restaurant called The Spot in Hermosa Bch., CA. The food there was AWESOME! They had a cookbook and I bought it! This is one of the recipes in it. I made it years ago and it was FAB! Serve this with the Mushroom Walnut Gravy that I will post next. You don't have to be vegertarian to enjoy this dish! Actually I prefer this over regular meatloaf. =) -- posted by SoCalCookerGal

California Mushroom Tart

A meatless main course or delicious side. Or cut in smaller slices as an appetizer. Uses humble, button mushrooms. Looks tricky, but is very simple once you have the veggies sliced. Depending on your cheese, you may want to use a different herb than basil. Note: do not try to substitute frozen spinach for fresh - it will be too wet, and make your tart soggy. -- posted by dianegrapegrower

Vegetarian Portobello French Dip Sandwich

This incredible sandwich is the signature dish at the much-loved Seattle restaurant, Café Flora. The recipe is printed in the "Café Flora Cookbook". It's really a delicious sandwich and will please vegetarians and carnivores alike. It's easy to make vegan too. Start by preparing the mushroom essence (which can be made ahead of time). Unused French Dip Spread can be frozen. The mushroom essence (basically a reduced mushroom stock) can be made to add intense mushroom flavour to risottos, pastas, soups... -- posted by blucoat

Mushroom Kebabs for the Grill

I tasted these first at a Saturday Farmers' Market at Stellenbosch (near Cape Town). The lady who sold them had several types of mushrooms on her skewers and grilled them over coals -- so use as many types of mushrooms as you can get -- or one type only, they'll still be good! Having enjoyed them once again at the Market, I imitated them, but I think my marinade is better than hers!! Quick and easy, and grill along with the meat. On hot coals or charcoal this takes only a few minutes -- do not try and get them to be soft, as they'll break up. Put them on with the meat, and turn them gently with tongs, as they shrink and can slide off the skewers easily. If they catch here and there, no matter. Delicious!! -- posted by Zurie

This recipe came into being one night when trying to use up the last of my somen. Easy and quick to fix, very little clean up time too! For those that don't like tofu, use a firm tofu that has been frozen at least 24hrs and then thawed (this will give the tofu a more "chewy/meaty" texture). Also, if you don't have chili oil, use a tiny pinch of cayenne pepper instead. -- posted by blueyedwineaux

Vegan Spinach-Mushroom Quiche

My friends and family are always getting on me to publish my recipes; I don't really use them, nor do I regularly remember even what I put into my dishes. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used ½ cup of blue corn meal, and ½ garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower. Finally, I really recommend using sesame oil, but realizing it is expensive, olive oil will work. -- posted by Starvin' Vegan

This recipe is for one, just multiply ingredients by how many people you are serving. -- posted by Dee Licious

Vegan Potatoes

A simple recipe for people who are vegetarian and/or transitioning to vegan. Theres not a lot of vegan recipes on here, so I decided to post it. It's something simple that's a good thing to have for lunch or even as a side dish. It gives a lot of nutrients and you really cant taste them in with the potatoes, for those of you who are picky eaters like me. I left his really open, I put in peppers and mushrooms, but this recipe is very easy to turn into a "Clear Your Kitchen Of Unwanted Or About To Spoil Veggies" recipe. And it's good because it's healthy, filling, and uses no meat and or animal products. Enjoy. -- posted by Mariah Me
