It has become a Watson favorite with a few of our personal changes. The recipe calls for porcini mushrooms, since I can't find them here, I use fresh portobello mushrooms. 			<description>I have a recipe for a more traditional chicken marsala, that we enjoy but thought I would play around a bit the other night and came up with this one. It turned out really well and whilst I probably still prefer the more traditional recipe this make a nice change. I made this for just 2 of us but the sauce ingredients would make enough for 3 people and would probably stretch to 4 servings if you do not like things very sauce as we do. 			<description>I've used this recipe for years....unfortunately I've forgotten the original source. It's a great dish to offer at a barbecue instead of the same tired old veggie burger. The marinade is very tart and makes a lovely grilled portabella sandwich, but it would also be delicious sliced and placed on top of a nice leafy green salad. I'm posting the recipe as copied onto a piece of paper years ago, but you'll notice the dressing instructions are incomplete - sorry! I marinated my mushrooms for about 30 minutes and they had great flavor.  I used Emeril Essence (left over from another recipe) as the Cajun seasoning.  My only suggestion would be to cut the mushrooms very thin so that they aren't rubbery after cooking. The customer noted he is a first generation Hungarian-American, who for twenty years has been searching for a goulash recipe that even remotely resembled his beloved grandma's... &amp;amp; this is it. Not only does it reheat well, it actually tastes better the next day - another one for the brown bag wide mouth thermos. BTW - pork shoulder works fine too - just trim either of excess fat &amp;amp; shoot for a pound and a half of meat to cube. 			<description>My friends and family are always getting on me to publish my recipes; I don't really use them, nor do I regularly remember even what I put into my dishes. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used &amp;frac12; cup of blue corn meal, and &amp;frac12; garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower.
