Citrus-Marinated Mushrooms (Cooking Light)

This is a really easy and delicious recipe. Fresh citrus and sweet, sour, and spicy Asian flavors put a new twist on mushroom salad. If mushrooms are very large, quarter them. Marinating overnight intensifies the taste.
Hy-Vee Cheese Stuffed Mushrooms - My Copycat

Ahhh.... I LOVE these mushrooms!!! When I attended college in the east part of South Dakota, these lil guys were almost a tradition to have for supper!! Well, now, since i live on the west side of the state, there are NO Hy-Vee Grocery Stores over here... NONE!! I was craving these little guys sooooooo bad the other night and came pretty dang close (my boyfriend says mine are better!! :) ). I dumped stuff in and tasted as I went, so amounts are approximate. Not for the diet concious!! -- posted by Chef GreanEyes

Mushroom Pudding (Or Crustless Mushroom Quiche)

This is a delicious mushroom appetizer/side dish that pairs well with a variety of foods and is simple to make. I first tried the dish at my mother-in-law's, and she adapts the dish every time she throws it together. Serve at room temp or slightly warm, and pairs deliciously with fresh spring onions/scallions on the side.
Mushrooms With Port and Stilton Sauce in a Bread Bowl

This recipe is adapted from the October 1991 issue of Gourmet magazine. This makes a great appetizer course or a lunch or late supper with a crisp green salad. I suggest simply using plain old button mushrooms for this due to the distinct strong flavours you acheive from the sauce. You will need to flame the port in this recipe. -- posted by Chef Regina V. Smith

Hoosier Fried Mushrooms

Every spring the morel mushrooms pop out in woods of the midwest seemingly overnight. Half the fun is finding them, but once you have a batch, the real fun is eating them. I'm a morel purist and the best way to eat them is to flour them and fry them. Adding them to anything else just dilutes the flavor that is the morel mushroom delicacy. -- posted by Chef Curt

Grilled Portabella Mushroom Caps

Want an impressive side for a summer BBQ? This is the way to go. Very little prep time and really no fuss. You can even serive it as an appetizer. I deliberatly use dried spices so I know I've got what I need on hand. My husband doesn't eat dairy, but I imagine topping with a gorgonzola or even a hard cheese like parmesan or romano would be a great addition. -- posted by Shandobando

Setas - Wild Mushroom and Garlic Tapas

"This seasonal mushroom dish, made here using wild setas, can actually be adapted to make a great tapa all year round." From notesfromspain.com Posted for ZWT 5.
-------------------------------------------------------------------------------------------------------------
If you want to try adding even more flavour to this dish, you can fry some bacon or ham (serrano or parma) in the oil with the garlic (remember that the garlic will need less time than either of these ingredients.)
If you can’t find wild mushrooms that you thing will be suitable, standard or button mushrooms will do just fine -- posted by ThatSouthernBelle

Baked Polenta and Roasted Vegetables

I love recipes to get ideas on how flavors go together. Much to my family's dismay, I hardly ever follow them. I saw something like this in our local paper but didn't want mushy polenta. I always have a fridge full of leftovers and this was created with what I had on hand. It has a few short cuts- like buying pre-made polenta but you can make your own. Experiment with other veggies, cheeses, spices... Enjoy!

I salted the eggplant then reconstituted the polenta and put it in the oven before prepping the rest of the veggies. This give the eggplant time to weep and to bake the polenta. And to have a glass of wine. -- posted by MushroomPrincess

Serve these nice and hot, or let them cool to room temperature. If you'd like to make this a little more contemporary, you can add a dash of balsamic vinegar to the red peppers and scallions as they cook. In true Italian-American style, these are topped with butter, but in Italy, we would use olive oil. Best yet, top them with butter, "bless" them all with a little olive oil. -- posted by Brookelynne26

Stuffed Mushroom Caps Deluxe

Stuffed Mushrooms are one of my favorite appetizers and these are a hit any time I serve them! Make some up and freeze them, then you can pop them in the microwave and defrost, then bake them up in no time at all! I love lemon squirted on mine just before serving. Please add the salt, pepper, garlic powder and crushed red peppers to your liking. Some people like less salt some like more and so on, so I leave it up to you as to how much you put in/on yours. -- posted by Linda's Busy Kitchen

No Stuffing Cheesy Stuffed Mushrooms

These are a nice easy appetizer, simple store bought biscuits, cremini mushrooms and then stuffed with cheese and baked.
It is the easiest dish around and always a show stopper and so good. Just gooey and the perfect flavor it can't get much easier.
If you want mozzarella and parmesan or swiss and monterey jack, that is fine. You can use any of your favorite cheeses for this. -- posted by SarasotaCook

Mozzarella Stuffed Portobellos

These are very simple, elegant and OH SO GOOD! I added the chopped mushroom stems to the stuffing. Please try to use the sea salt, makes a big difference in this dish. I have also used Panko bread crumbs instead of the fresh bread crumbs with great results. Mine took a bit longer to cook, about 20 minutes. Next time I will try grilling them, I think that would add a great dimension to the dish. This is adapted from Food Network, Easy Entertaining with Michael Chiarello.
Mushroom Garlic Cream Tarts

This is a recipe from Pillsbury.com. l always have to double the recipe because they get eaten up so fast. People can't believe it only take 15 minutes to throw these little gems together. If you end up doubling the recipe, I suggest using just 3 Tbsp butter and 3/4 cup cream. Otherwise the filling can get a little runny. This is a very easy recipe to change according to your tastes. Substitute olives for mushrooms, use chives, chopped nuts, even artichoke hearts, whatever you like. I also generally use margarine, light cream and low fat crescent rolls and they're still delicious. You can't go wrong with this recipe. Enjoy!! -- posted by quiet603

Sausage-Stuffed Mushrooms - Barefoot Contessa

This is a GREAT addition to the holiday feast...or for anytime! They are crusty on top and juicy on the inside. The Panko crumbs give them a very nice crispness. You can use any type of sausage, mild or spicy, or mix them up. Try to get a good Italian Mascarpone cheese, I find it makes a difference. I also drizzle any leftover Marsala mixture over the top of the stuffing before adding to the shrooms. I may try shallots instead of the green onions, but it is DIVINE just as it is.This is adapted from FN- Barefoot Contessa. Hope you enjoy! -- posted by Scoutie
