Grilled Cheese Muffins

Bubbling cheesy goodness for the kids, wheat germ, carrots, and sweet potatoes for their bodies. This is adapted from the book "the sneaky chef" filled with all kinds of ideas on adding vegetables, fruits, and fiber into the diet of children and other picky eaters. If you end up baking often, it would pay to make a batch of the white flour, whole wheat flour, and wheat germ for faster baking. This uses Orange Puree, a blend of cooked carrots and sweet potatoes. If you are short on time, you can use jarred baby food instead. The texture of the puree is essential in hiding the texture of the vegetables in these muffins. Feel free to use low fat cheddar cheese in this recipe. -- posted by gourmetmomma

Peanut Butter and Jelly Muffins

This are filled with nutrition and a kid pleaser too! I've adapted them from "the sneaky chef" cookbook. In addition to the peanut butter and jelly, these have pureed carrots and sweet potatoes (orange puree). Because the puree is so smooth, the kids won't notice the extra vegetables. If you are short on time, use jarred baby food instead. If you bake often, it might be easier to make a large batch of the flour combo (white flour, wheat flour, wheat germ) than measure it out each time. Do not use jelly (jelled fruit juice) as it will disappear, use jam (pureed fruit). -- posted by gourmetmomma

Fat Free Chocolate Muffins

A wonderfully moist fat free chocolate muffin, and a sneaky way to get that nutritious beta carotene! My kids have no idea they are eating pumpkin! They actually ask for these babies. The pudding mix is optional, it adds some sweetness and moistness, but you don't need it.
30 Day Bran Muffins

You and your family can have these muffins every day for breakfast or lunch without any fuss as this mixture can be kept in the refrigerator for a month.
Microwave Blueberry Muffins

Hard to believe, but you can microwave these muffins in just 2 minutes. I know, I know, I didn't believe it either, and I've been baking semi-professionally for 15 years. Great solutions for midsummer baking, and children can bake their own! The batter recipe is from the Enchanted Broccoli Forest by Mollie Katzen. I usually substitute whole wheat flour and a little flax seed meal for a portion of the white flour. The yield was supposedly 12, but I've never gotten more than 8 or 10 muffins from it. -- posted by fluffernutter

Single-Serve Microwave Muffin

Okay, so this may not be *exactly* like a muffin, but it's pretty close, and was still pretty tasty! The taste and texture turned out to be a little more like that of a very thick pancake, but that's close enough, right? ;) Anyway, I was wanting just one muffin this morning, and decided to tinker around a little and make just one in the microwave. I'll probably play around with this a little more, but here are the basics. Really, you could probably add fruit or chocolate chips or whatever to this, and have yourself a tasty little treat in roughly five minutes. I'd love to hear other people's ideas on additions/changes to this! -- posted by qotw13

Moist Jumbo Banana Wheat/Oat Bran Muffins

Moist and flavorful these can be made with oat or wheat bran depending on what you have. You can put your choice of nuts (my fav is walnuts) or dried fruit and vary the amount of mashed banana and they still come out great. Since I started using this recipe 5 years ago, I have kept these muffins on hand in our freezer. I save my brown bananas, freeze them and when I get a good amount puree them in my cuisinart so I can triple the batch of muffins. You can also make these as regular size muffins. The batch would make 12 muffins and bake time would decrease to 15 minutes or so. -- posted by RussianMama

Moist and Fluffy Lemon Poppy Seed Muffins

Taken from 'The Canadian Baker' Blog. Absolutely the best texture I've ever had. Moist, fluffy, and light. Adaptable for blueberry lemon muffins, raspberry orange etc. I will add more lemon juice next time as I found it not zesty enough, and will cut back on the poppy seeds slightly. A simple lemon glaze makes this the perfect sweet treat for a cold day or an after lunch dessert. -- posted by Young Mom

Grandma's Special Dutch Apple Cheese Muffins

These muffins are the perfect combination of sweet, savoury, and tart. The presentation. with the sliced apples and glaze, is beautiful. The recipe, by Donna Bardocz of Howell, Mich., was the grand-prize winner in "Cook's Country" muffins contest. The tasters loved the combination of apples and cheddar cheese, and the cinnamon glaze was the crowning touch.
Note: Crisp sweet apples like Macon, Jonagold, Cortland & Empire are recommended. -- posted by blucoat

Mani's Bakery's High Protein Muffin

This recipe comes from the LA Times Food section's SOS column posted in response to reader pleading. It is an adapted recipe from the bakery. You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins & likely need a slightly shortened cooking time. Should be getting about 11 grams of protein & 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds & canola oil. Just the thing for hiking, fishing or hunting - easy to eat & needs no fridge! -- posted by Buster's friend

Blueberry Muffins à La Alton Brown (Good Eats on Food Net

We tried this recipe because I was craving having blueberry streusel scones (# 244646) again. However, I am trying to cut down on my saturated fat and cholesterol, so we looked for something to fill that baked goods craving without blowing my daily saturated fat limit, and Alton Brown is often a decent place to start. We used whole wheat pastry flour with some flax meal thrown in for good measure, frozen blueberries allowed to thaw slightly, and a silicon muffin tin. They were somehow dense and light at the same time, and had an interesting buttermilk note (we assume from the yogurt). Also, Alton says muffins are really more like pancakes than cupcakes! -- posted by Michelle from Central Time
