			<description>This is a tasty, healthy muffin that both kids and adults will love.  I got the recipe from a whole foods cookbook published by La Leche League.  The ingredients list looks lengthy because many things are included in both the muffin and the topping so I just have two bowls ready and measure for both at the same time.  To give an extra nutritional boost, I cut the oil to 1/4 C and add an extra 1/4 C of pumpkin. 			<description>These muffins are great for breakfast, snack, or any time!! Really moist, deliciously spicy, and lightly sweet -- they are filling yet not heavy at all, and they have such a nice crunch from the sliced almonds. Healthy and yummy. They received an emphatic stamp of approval from the Picky Sibling Taste-Tester Association (though one of the extremely persnickety members did ask that the nuts be ommitted next time). :) The original recipe is from The American Country Inn and Bed &amp;amp; Breakfast Cookbook, and the book's authors got it from the Havenshire Inn in Hendersonville, NC. The batter keeps well in the fridge, and baked muffins freeze well. 			<description>This recipe has been on my BF's wish list for some time. I finally made them today as a Sunday breakfast muffins and the second batch is still in the oven. We really like them and we're quite happy that we didn't halve the recipe. The recipe makes 20, but hey, muffins freeze beautifully. I wrap them individually in foil before freezing and take one out before I leave the house for work or university. By noon it will be ready to eat. If you want them for breakfast just take them out the evening before. You can omit the nuts and use one cup of raisins if you like. Instead of preparing the muffin pans with cooking spray, I use recipe #78579 #78579 here at zaar to grease my baking pans. Works for all kinds of baking and other cooking pans, and keeps for a long time in the refrigerator. The final result is a touch crumbly but still tastes WONDERFUL.  If you would like to, you can omit the oatmeal and increase the coconut by the 1/2 cup. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other &amp;quot;Hawaiian&amp;quot; treats.  I also use valtrompia bread tubes in different shapes and then slice.  The slices look so pretty on a plate.  If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins &amp;amp; likely need a slightly shortened cooking time. Should be getting about 11 grams of protein &amp;amp; 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds &amp;amp; canola oil.
