Spicy Sweet Cornbread

Well, love peppers, and cheese, and well sweet cornbread. How can you go wrong. It's cheap, easy, and delicious! Great with chili or even a hearty bean soup. Also I usually make this amount to have left overs. It's wonderful by itself just smothered in butter. Surprisingly it is not that hot..a little spice with a little zing from the peppers being pickled -- posted by Carrie A

Ham & Cheese Muffins

This recipe came from a Stonyfield Farm Yogurt cookbook. The yogurt makes 'em moist, the ham and cheese makes 'em awesome. I've made these twice in the last week, my husband likes them so much. Prep time does not include time needed to cook ham if you use the country ham such as I did. -- posted by Kay Demonbren

Cheesy Garlic, Herb, Paprika & Tomato Muffins

This muffin recipe is very simple, and produces a heap of tasty muffins that can be served either hot or cold. I prefer them hot, 5-10mins after they are pulled from the oven. They are perfect as a snack, lunch, brunch, afternoon tea, etc., and also particularly good for picnics (e.g. used as a substitute for bread, served alongside salads and cold meats). This recipe has by and large been taken from Alison Holst's cookbook "Meals Without Meat," however I have tweaked it here and there to improve the flavour :) Enjoy! -- posted by wildschwein

These little mouthfuls are perfect to serve with drinks, canape style. Sandwiching them together with creamy Boursin adds flavour and is a pleasing contrast to the crumbly texture of the muffins. -- posted by English_Rose

Grilled Cheese Muffins

Bubbling cheesy goodness for the kids, wheat germ, carrots, and sweet potatoes for their bodies. This is adapted from the book "the sneaky chef" filled with all kinds of ideas on adding vegetables, fruits, and fiber into the diet of children and other picky eaters. If you end up baking often, it would pay to make a batch of the white flour, whole wheat flour, and wheat germ for faster baking. This uses Orange Puree, a blend of cooked carrots and sweet potatoes. If you are short on time, you can use jarred baby food instead. The texture of the puree is essential in hiding the texture of the vegetables in these muffins. Feel free to use low fat cheddar cheese in this recipe. -- posted by gourmetmomma

Auberge Cheddar Cheese and Ham Breakfast Buns - Muffins

These are what the French call "cakes" - they are little savoury buns or muffins - and are always requested for breakfasts in the Auberge. They are delicious split and spread with herb and garlic cheese when warm - or serve them alongside hot soups, stews, chilli or casseroles! I have also made these with grated Gruyere cheese as well as Emmenthal....the trick is to use a mature and strong tasting cheese. I have suggested using smoked ham in this recipe - it just gives a wonderful extra flavour to these delicious buns/muffins. They freeze well and are easily reheated, if you have any left! We often have these for Christmas morning breakfast or brunch with the optional chives added, and then spread with smoked salmon butter - divine! -- posted by French Tart

Savoury Barley Muffins With Rosemary and Parmesan

Adapted from Lorna Sass' Whole Grains, Every Day, Every Way. Really REALLY good LIGHT, MOIST and FLUFFY 100% whole grain muffins! Note: Both metric weight and cup measures included. Personally I prefer weight measurement- no need to dirty more than 2 bowls and 2 forks for mixing :) The combination of flours give it a tender, delicate crumb that is "sweet"- no bitter whole wheat flavour and the EV olive oil lightly perfumes it with a deliciously fruity scent. This combined with the aroma of the rosemary and the salty crunchy parmesan crust makes it an UNBEATABLE breakfast.
Shortcut Corn and Cheese Muffins

This healthy recipe livens up a corn muffin mix and adds protein to make a substantial breakfast or snack (that's perfect when you are on the run). One of these muffins and a bowl of soup makes a lovely meal. The cottage cheese adds extra moistness. Use a non-stick muffin pan as these muffins stick to paper liners.
Grandma's Special Dutch Apple Cheese Muffins

Orange Cream Cheese Muffins

I love this recipe because it uses an entire half orange, peel and all, and tastes like a cross between a cheesecake and a pound cake! This recipe is adapted from "Great Coffee Cakes, Sticky Buns, Muffins and More" by Carole Walter. For an optional Orange Glaze: Combine 1 cup powdered sugar, 5 tablespoons fresh orange juice, and 1 ½ tsp light corn syrup. Whisk until smooth and pour over muffins.
