			<title>Sweet &amp;amp; Speedy Breakfast Oat Bran Muffin (Microwave)</title>

			<description>Stir and pop into the microwave for an easy, healthy breakfast!

I mix it up, microwave, and eat it straight out of a ceramic mug. The batter sticks a little, but to wash cleanly, pour in hot water and soap and let sit until you do the dishes!

I was inspired by *Pixie* 's South Beach Muffin (http://www.recipezaar.com/South-Beach-Muffin-263983) but I didn't have the baking powder, yogurt, or flaxseed, so I improvised.

These freeze very well.  Either microwave for 20 seconds or just pull one out of the freezer before you leave for the day, and it will be defrosted and perfect in about an hour, just in time for a snack!. I added the bran to make them a bit healthier (LOL) but they are also very nice without it.  With no bran the top crust gets really crunchy - must be the large amount of sugar! I tweaked another recipe that I found posted here...omitting some fat and adding a few other ingredients.  They freeze well, too.  I used Quaker Natural Granola with Oats, Honey &amp;amp; Raisins because that is what I had on hand.  The slivered almonds are really yummy in the muffins. I've recently discovered the wonders of avocados, and have been trying to find new ways to enjoy their heart-healthy benefits. It was by far the most scrumptious recipe that I made. It could also be made into a bread, but I made muffins. This is definitely my new default banana bread recipe! Imade a double batch and ended up with 39 muffins. I made half with the called for maple syrup/pecan topping and half with a cream cheese topping. To make the cream cheese topping, I whipped 6oz cream cheese with 1/4 cup brown sugar and 1/4 cup maple syrup. *Could be baked as a casserole in a 9 x 9 pan. 350 F for approx 1 hour.

This is not a cake-y muffin.... it's lightly sweet and grainy.  It's great for breakfast... 2 of these and a glass of milk tide me over for hours.  I use Smart Balance Butter Blend because it has butter to give it real buttery taste and the Smart Balance has healthful benefits that butter lacks.  The best thing about Smart Balance Butter Blend is that it doesn't sacrifice taste!  You could choose to use the same amount of olive oil, applesauce, or even non-fat yogurt instead of butter for even more health benefits, but it may sacrifice the taste.  You can use any kind of sugar but dark brown sugar has a lower glycemic index than white sugar.

Never ever use margarine in these!  Margarine is loaded with trans fats (partially hydrogenated oils), even when the label says 0g trans fats on them.  If a serving has less than 1g  of trans fats, they can legally label them as &amp;quot;0g trans fats&amp;quot;.... which means there could be .99g of trans fats per serving.  Trans fats consumption leads to the hardening of arteries (atherosclerosis), which can lead to heart disease.  Also, do not substitute in Splenda for sugar.  Splenda (sucralose) is chlorinated sugar (sucrose), which is highly reactive in the body!

			<description>Finally! A moist, gluten free muffin without any odd plant flavors or mysterious zing. The recipe calls for extra finely ground rice flour which at this time I've only found from Authentic Foods. The extra fine grind prevents the gritty texture often found in gluten free baked goods and gives the muffins a light crumb. I've listed individual flour ingredients for bakers with a stocked gluten free pantry but you can cheat and buy this flour blend premixed from Authentic Foods as GF Classics Blend.
