If you don't have buttermilk, you can replace it with one cup of nonfat yogurt or make your own buttermilk by mixing one cup of nonfat milk with one tablespoon of lemon juice or vinegar.

Feel free to add in chopped nuts, unsalted seeds (sunflower, pumpkin) or other dried fruit that you like. Make these vegan by using soy milk. 			<description>Hard to believe, but you can microwave these muffins in just 2 minutes.  I know, I know, I didn't believe it either, and I've been baking semi-professionally for 15 years. Great solutions for midsummer baking, and children can bake their own!  The batter recipe is from the Enchanted Broccoli Forest by Mollie Katzen. I usually substitute whole wheat flour and a little flax seed meal for a portion of the white flour. 			<description>I couldn't sleep tonight, so I decided to get up and do a little experimenting in the kitchen. I've been wanting to make muffins, and have yogurt that needs used before it expires, so this is what I came up with. I used frozen strawberries that I partially thawed before chopping. I also didn't measure them, but just used up what I had left in the freezer, and guessed at it being about a cup. The first pan just came out of the oven, and they smell (and taste!) delicious, but when I took a bit of one, I found that the insides were slightly gooey, especially around the pieces of strawberry. I'm thinking they will be better once they've sat overnight, but if anyone makes these and has any ideas on how to remedy this, please let me know. I have a feeling that they may also benefit from an added tablespoon of butter, and more lemon flavor. 			<description>From The Herb Society of America: This is a wonderfully delicious and fragrant muffin; it is sweet like cake. The addition of blue corn is fun and tasty  gives a bit of added texture and the corn is sweet. If you aren't familiar with blue cornmeal, try it and you will find its earthy taste is good in cornbread, muffins, and blue corn pancakes. You can use yellow or white cornmeal if you don't have the blue. Use a combination of lemon and cinnamon basil for the fragrance and flavor; the citrus and the spice go well with the blueberries.
