Banana Oat Muffins

Adapted from Recipe# 156338. Went to the pantry and saw that I was out of whole wheat flour. Then I felt creative and wanted to add other things... This was the result. I still was planning to play with the receipt a bit more and add whole wheat flour or something, but the family liked these so much and ate them so fast, I changed my mind. Instead of rice flour I would think another flour would work fine, such as all-purpose, whole wheat, whole wheat pastry or other. I made these small and got 18 muffins, but I like them small. Then I can have two. ;) -- posted by MathMom.calif

Banana-Macadamia Nut Muffins

A moist and flavorful banana-nut muffin with a distinctly tropical twist. If you really want to splurge, omit the applesauce and increase the butter to 1 stick (1/2 cup). This recipe is very versatile. Add chocolate chips instead of the nuts. Use pecans or walnuts in place of the macadamias or add in coconut. -- posted by Juenessa

Cinnamon and Whole Wheat Banana Bread

This is a delicious banana bread that is not too sweet. Carry a copy of the recipe if you take the bread with you anywhere, because people always ask for it.
Using whole wheat pastry flour gives this a ligher texture than regular whole wheat flour. This mix also make great muffins.

Kittencal's Extreme 1-Gram Low Fat Banana-Blueberry Muffins

Less than 1 gram of fat in each muffin but you wouldn't even know they are low-fat, these are even better the next day, and are just as delicious without the berries, of coarse you can use full-fat sour cream or yogurt, flavored yogurts only add to the taste of these muffins, I like to sprinkle a sugar/cinnamon mixture on top of each muffin before baking but that is optional, see note on bottom for doubling the recipe. For greasing see recipe#78579 -- posted by KITTENCAL

Blueberry-Banana Muffins

This recipe is adapted from Stephanie Jaworski at JoyOfBaking.com. I absolutely love it because it combines two of my favourite fruit into an original-tasting breakfast or snack food.

Frozen blueberries are easier to work with. With the banans, I like to mash them with a potato masher in a flat-bottomed bowl. -- posted by Muffin Head

Cherry Banana Muffins

These are my own creation, full of flavor and healthier without the butter! As soon as you bite in you get a burst of cherry and banana and they are pretty moist, though firm. I hope you enjoy them! I made half with the coconut on top and half with the pecans and couldn't decide which was better. To get the mandarin orange juice I pureed a can of mandarin oranges (drained of syrup) and just drained them in a sieve. (my son gets the oranges for lunch) -- posted by CulinaryExplorer

Triple Banana Chippy Bread or Muffins

I was playing around in the kitchen this weekend trying get rid of some bananas and ended up with this concotion.
It made 1 loaf of bread and 6 large muffins. I'm sure you could make 2 loaves of bread or 12 large muffins, or probably 24 smaller muffins.
The taste is REALLY great and my kids and DH are already asking for more. -- posted by Sherrybeth

Healthy Harvest Breakfast Muffins

Yummy muffins pack a nutritious punch in the morning, great for a healthy grab-n-go breakfast. You can alter this recipe any way you like and with what you have on hand, very versatile. I started with Recipe # 8845 from Kathy-Lynn and tweaked it so much it turned into something else. Recipe includes a brown sugar & nut topping. I used almonds and walnuts, but any kind of nut would be good with this. -- posted by QueenAstroPirate

From Hungry Girl: "Go Bananas!
Banana bread typically has pretty horrific nutritionals, so we set out to create a guilt-free version. And (tada!) here it is. FYI, if you're looking for a cake-tastic sweet treat with a POINTS® value of 2*, a fat slice of this stuff topped with Cool Whip Free is the way to go..."

NOTE: On 3/1/2009, I decided to make these into muffins instead of bread. The batch made 9 muffins which I baked for exactly 28 minutes.
Hawaiian Tea Bread

I love this bread. It's so moist and versatile. I make it for breakfast, brunch, tea parties, and even desert. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other "Hawaiian" treats. I also use valtrompia bread tubes in different shapes and then slice. The slices look so pretty on a plate. If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. I learned this recipe when I used to be a consultant for Pampered Chef. -- posted by JeanieK

A delicious, nutritious and satisfying muffin from "Cooking Light Magazine (July 2007). You can definitely play around with this recipe- it does well with substitutions. These freeze very well. Either microwave for 20 seconds or just pull one out of the freezer before you leave for the day, and it will be defrosted and perfect in about an hour, just in time for a snack!. If you want, you can fold the flax into the batter, rather than sprinkling it on top. -- posted by blucoat

Avocado, Banana and Mango Muffins

An unusual combination, to be sure, but one that looks so good I just had to share! I've recently discovered the wonders of avocados, and have been trying to find new ways to enjoy their heart-healthy benefits. Though I haven't yet tried these muffins (from the Kiwi Gardens B&B in Kailua-Kona, Hawaii), I will certainly do so the next time I have some extra avocados on hand.
Banana Maple Pecan Bread Muffins (Gluten-Free)

I bought a 20lb bag of bananas at Krogers for $1.00 and have been trying to use them all up. This is one of the recipes I made in the process. It was by far the most scrumptious recipe that I made. It could also be made into a bread, but I made muffins. This is definitely my new default banana bread recipe! Imade a double batch and ended up with 39 muffins. I made half with the called for maple syrup/pecan topping and half with a cream cheese topping. To make the cream cheese topping, I whipped 6oz cream cheese with 1/4 cup brown sugar and 1/4 cup maple syrup. These were absolutely heavenly fresh out of the oven. *For the gluten free flour, I used Bette Hagman's mix: 2 parts garfava bean flour, 1 part sorghum flour, 3 parts cornstarch, and 3 parts tapioca flour. -- posted by Andrew Mollmann
