			<description>I'm not sure where I got this recipe, but it was hand written on a napkin and kept in my recipes. I do remember however, that it is one of the healthiest muffins as it was tucked in my low-calorie baking section. I recently found this again and had to make them over the weekend. OMG, looks like a lot of ingredients, but the texture and tastes was wonderful. A crumbly streusel topping made with a small amount of butter provides a delicious finish. No wonder I kept the recipe. 			<description>With an abundance of quickly ripening pears on the counter, and with a crowd of hungry little people to feed, I came up with these tender, lightly sweet, and surprisingly healthy muffins! They passed the Picky Sibling Test with flying colors. I modified a basic apple muffin recipe from a Pennyslvania bed and breakfast, making changes to make the muffins healthier and more unique. I hope you like them too! I used a mixture of apples and pears (two small Bartlett pears and one very small Pink Lady apple), but you could use just apples if that's all you have available. I also used white whole wheat flour (ground from white wheat), which is lighter than regular whole wheat (ground from red wheat). 			<title>Oat Bran Apple Pie Muffins (Everything-Free, Low-Cal and Vegan!)</title>

			<description>Fat-free, sugar-free, low-calorie, AND vegan!!  This recipe came about when I was looking for something a little different to do with some apple pie filling, and for a sugar-free muffin recipe that didn't have any added artificial sweeteners.  (Yes, the pie filling is sweetened with Splenda, but that wouldn't affect the texture of the final product the way adding Splenda would.)  I used a kitchen scissors to chop the apple slices from the pie filling into smaller pieces.  Try to get all of the &amp;quot;goo&amp;quot; from the pie filling in there, too -- don't just throw it out!  If you overmix, it will probably be tough; that's why I chose to mix it by hand, though of course you could use an electric mixer if you prefer. 			<description>Original recipe from a Taste of Home booklet, I've changed spices and added protein powder in an attempt to come up with something delicious AND nutritious for breakfast or snack.  I usually double the recipe in order to use a whole apple (and 2 medium-ish carrots).

If you don't have protein powder (available in the bulk section of most grocery and/or health food stores), then use 3/4 c. whole wheat flour, 1/2 cup wheat bran, and 1/4 cup all-purpose flour.
