			<description>Chakchouka is a style of vegetable cooking from the Middle East and the Mahgreb (the North African countries bordering the Mediterranean, such as Tunisia and Morocco). The dishes always contain onions and garlic, and usually tomatoes and peppers; very often, a veil of beaten egg is poured over during the final stages of cooking. Serve with freshly grilled pita bread. Variation: Replace the fresh chillies with a drop of Tabasco sauce or a small pinch of crushed chillies. This recipe is for two, but the quantity could easily be increased.  Essentially the only change I made to this recipe was to suggest sneaking in some wine, which is what I'll certainly do when I make it. If you cannot find Turkish bread, use pita bread or any crusty bread suitable for mopping up the juices. This recipe is a different version of making tuna patties and even though they are a little different to the normal tuna patties, they are delicious especially served with a nice side salad!

			<description>This recipe appeared in a local food magazine called MIX.  It was simple to prepare, but wonderfully different.  The spices blend together during cooking to make a wonderfully rich and deep flavor.  The dutch oven cooking produces a tender, falling-off-the-bone chicken.  

This recipe would originally be prepared in an earthenware cooking vessel, called a Tagine, which has a conical lid.  I'm sure most of us don't have one lurking in our cupboards, but the results from a Dutch Oven are wonderful. You will need a casserole dish that can be used on the stove top as well as in the oven. A dutch oven works perfectly. A large, deep cast iron or cast aluminum skillet would also work provided it is entirely metal (no plastic handles) and you have a lid (again, no plastic).

If you do not have stove-top safe casserole dish, you may use a frying pan for steps 3-6. In step 6, omit the chicken. In step 7, transfer to a large kettle. 			<description>This traditional method of cooking a tagine requires little preparation time, especially if you buy the meat already diced. Serve with steamed couscous, rice (or boiled potatoes) and a green salad, or as part of a larger Moroccan meal. 
Suggestions: For an excellent soup, add chickpeas, chopped onions, carrots, celery, turnips and plenty more water. 			<description>I have another recipe for Moroccan lamb shanks that we really enjoy, but I thought I would experiment a bit more the other day with some more flavours. We really enjoyed how they turned out and for us the flavour had just the right amount of spice. I cooked ours on the stove top on a really low heat for about 4 1/2-5 Hours and the lamb came out falling off the bone as lamb shanks should. 			<description>Love the firy spice with shrimp, fresh surprised looking shrimp. The recipe from the LA Times Food &amp;amp; Drink Weekly will be used when our shrimp start coming in before too long. Since ours are fresh (netted 300 yards from the house often enough) we'll opt to keep head &amp;amp; shells on &amp;amp; cook the marinade as well. This is a perfect meal for newspaper covered table alfresco dining - with ice cold 8 ounce bottles of beer (the little ones stay cold better) in a galvinized pail of ice on the table &amp;amp; good conversation over leisurely shelling &amp;amp; slurping. Ok, maybe some tabouli &amp;amp; lightly steamed fresh Silver Queen corn on the side for the landlubbers to take respite from the heat. Good summer eating.
