Mocha Frosting

I have not yet tried this, but it is from an overdue library book (From Our Mothers' Kitchens) and I want to return the book tomorrow, so need to get the recipes I want to try copied down, pronto. I love anything mocha, and this frosting sounds so easy and so good. I think I'll have to make a chocolate cake just to try it! -- posted by Lennie

Royal Icing

One of the parents in my class brought in some sugar cookies topped with this icing. It was delicious! The recipe came from a book called Cookie Dough Fun.
I just made this recipe myself, and I had to add a 2 tablespoons of milk to it - the icing was very stiff and it hardens quickly. The taste is fantastic though and it looked really pretty on the cookie. -- posted by Elmolvsu

Peanut Chocolate Cake

This recipe came from The Taste of Home Magazine. I have made a couple of very small changes to suit me. It is a very light cake and makes a very large cake. Very rich!!! TOH recommends to NOT use the fat reduces or generic brands for this cake and I fully agree!!!! -- posted by Jellyqueen

White Buttercream Icing

I decorate cakes and this is my most requested icing. This recipe will decorate one 9x13 or smaller cake. This icing tastes the best with yellow or white cake. The creme bouquet flavoring is made by CK Products (www.ckproducts.com to find a location) and can be found at some stores that carry cake decorating supplies. If you cannot find it, substitute any clear flavoring of your choice. I got this recipe from the Wilton cake decorating courses. -- posted by Moe! Larry! Cheese!

I was so happy when I made this icing the first time because I knew that I would never need another icing recipe as long as I lived, lol. It was just so light and fluffy, and it still had a very buttery flavor even though it doesn't have any butter in it; probably because of the white chocolate. -- posted by MizEmerilLagasse

Professional Decorators' Icing

I needed an icing to use to make my daughters castle cake. While in Farmer Jack, the woman at the register ahead of me talked about how she decorates cakes. So I took that as my opportunity to ask her what recipe she uses for icing and this is what she gave me. I got lots of raving reviews. This hardens up like the cakes in meijer, etc.... and it's not too sweet. -- posted by mandikaake

The powdered egg whites act as a stabilizer and allows the icing to harden. Make certain to purchase only POWDERED egg whites, powdered egg whites are available in the baking section of most major super markets. This is wonderful to decorate Christmas cookies such a gingerbread cookies, you can also pipe it through a pastry bag. Add in food colouring to create colours if desired. It was 5 years ago today that my darling sister Carol gave me this recipe when she last visited our home - she has since passed away. It was pure chance that I looked at her recipe today and noticed her last visit was 7th Sept 2001, today’s date – I had typed it into the description when I’d submitted her recipe in June. -- posted by Ninna

Vanilla and Almond Frosting

You can use the base of this recipe to make almond and/or vanilla buttercream frosting. The vanilla works wonderfully with most any cake flavor.
Heavenly Vanilla Buttercream

The smell of powdered sugar makes me gag, so when I came up with this buttercream (loosely adapted from Alton Brown's Buttercream recipe), I knew I could never go the sickly sweet frosting route again for my cupcakes. This frosting is so fluffy and light and buttery and not too sweet. This frosting, however, does not set, so it's not good for piping flowers onto cakes, although is sturdy enough to support decorations made out of royal icing or "Crisco and powdered sugar" buttercream. If you have vanilla bean paste (you can get this at Williams Sonoma for the same price ounce for ounce as vanilla extract), use 1 teaspoon of the paste with 1 teaspoon of extract for that special, delicious effect of vanilla bean specks throughout the frosting. -- posted by jenw1041

Orange Golden Layer Cake

Oh, so good! Makes a nice birthday or special-occasion cake. I used to sift the flour, baking powder and salt together, but nowadays most commercial flour is pre-sifted so I don't bother. If you don't want grated citrus zest in your frosting (though I love it!), after allowing the orange juice in the frosting to infuse some of the flavor from the zest for 10 minutes, you can pour it through a strainer and discard the zest. -- posted by echo echo

Perfect Cream Cheese Frosting

I found this on the howtoeatacupcake blog. I haven't tried it myself but the reviews were great. Here are some tips: To have perfectly smooth cream cheese frosting with enough body to spread in dramatic swirls or even pipe through a pastry bag, you have to know these two secrets. First, overbeating breaks down the cream cheese, and produces grainy looking frosting that is too soft to hold a shape. Second, cold (not softened) cream cheese produces the best texture in both of our methods. Have the butter, if you use it, at the temperature recommended for the method you choose, and sift the powdered sugar after measuring. -- posted by TeksGlutes

It is a little complicated but well worth it. -- posted by Sherrybeth

Whipped Coconut Cream

This is the perfect topper for waffles, soy ice cream sundaes, cupcakes, desserts, or pretty well anything else that calls for a little something extra! It uses agave nectar or Maple syrup instead of sugar, making it a little less of a sugar shock for some diabetic fols. This is a Vegan whipped cream so good, it will even please the non-vegans at the table.

For this recipe, you will need to create a cold version of a double boiler. Fill a small pot about half way with cold water and ice cubes, and place a bowl on top of the pot ( you may want to do some measuring first, because you do not want the bowl to fall into the pot). This is a great way to make sure the whipped cream stays chilled while you give it a good whip!

Feel free to play with it, add some spices or flavors to it to enhance the flavour of your dish. -- posted by Big Fat Vegan

Ace's Ruby Red Grapefruit and Orange Cake by Melissa Winner

Entered for safe-keeping. From Melissa Winner, Gulfport, MS, as entered in Cuisinart Stand Mixer competition, and later entered on Food Network's Ultimate Recipe Showdown as Ruby Red Grapefruit Cake. I prefer a glaze such as this on my Bundt cakes, so no refrigeration is needed, although Paula Deen likes a cream cheese frosting on hers (see Recipe #324804). This can also be made as two 9-inch layers, which would work better with the cream cheese frosting.
Meringue Buttercream Frosting - 1st Generation

Sophmore year of highschool I jobshadowed a pastry chef, and she told me that the best icing to use for cake is meringe buttercream. So I went online, found a cute little blog that told me all the steps in detail. mmhmhmm. Makes very fluffy frosting, great for decorating! Has a great texture, but unfortunately, it's VERY fattening because of all the butter, and also it has a pretty prominent butter flavor. That's my disclaimer. But don't be discouraged! When I discovered this recipe, I never went back to regular buttercream. Anyway, I'm working on a less fattening version involving gelatin. So check back! -- posted by MandyLovesPandys

Italian Meringue Buttercream

A very versatile Buttercream. This recipe produces enough buttercream to cover three 9 inch round layer cakes. This recipe can be turned into chocolate buttercream, or spiced buttercream. You will need to have a candy thermometer, an electric stand mixer with a whisk attachment, a pastry brush and a bowl of water. This is my favorite buttercream! It's sweet, but not too rich and just the right consistency to do just about anything with it. The recipe is from my pastry arts school. -- posted by pastrygirl_5280
