It uses agave nectar or Maple syrup instead of sugar, making it a little less of a sugar shock for some diabetic fols. This is a Vegan whipped cream so good, it will even please the non-vegans at the table. 

 For this recipe, you will need to create a cold version of a double boiler. Fill a small pot about half way with cold water and ice cubes, and place a bowl on top of the pot ( you may want to do some measuring first, because you do not want the bowl to fall into the pot). This is a great way to make sure the whipped cream stays chilled while you give it a good whip!

So I went online, found a cute little blog that told me all the steps in detail. mmhmhmm. Makes very fluffy frosting, great for decorating! Has a great texture, but unfortunately, it's VERY fattening because of all the butter, and also it has a pretty prominent butter flavor. That's my disclaimer. But don't be discouraged! When I discovered this recipe, I never went back to regular buttercream. Anyway, I'm working on a less fattening version involving gelatin. Even though we later introduced more variation to our desserts menu, this one is still the biggest favourite. It may seem complicated, but I was 13 when I made it for the first time completely on my own - so it should not be too difficult. Still, it is somewhat time-consuming, so I now usually make it only once a year, for the New Year's Day. It is big enough for a company of 8-10 people. One of the most enjoyable things is having your guests to try and guess what the filling is made of (no one ever succeeds, trust me :) ).
