I developed this on my own after not being fully satisfied from frozen pre-made skillet/scrambles.  

For this dish I recommend you break out two large skillets.

			<description>These are tasty and very filling. Excellent for breakfast dinner or supper. I use the frozen hashbrowns as it makes it so much easier to prepare. You can save some time with the prep time by chopping ingredients up the night before. This is also very good served with salsa andor fried eggs on top. The first time I made these I placed it on a large serving platter. The second time, I served it buffet style and everyone made there own. 			<description>This is a great make-ahead breakfast. I'm not sure what the site will say the calorie count is, but I have counted it myself to be 315 calories. (I actually use unsweetened vanilla Almond Breeze almond milk, and it brings the count down to 290.) It's a delicious and efficient way to eat breakfast. You chill it overnight and then just pop it in the microwave for 2 minutes when you get up. It's my new favorite oatmeal! However, we did make a few changes. We omitted the tarragon (don't like anise flavor!) and replaced with an extra tablespoons of parsely. We then made the dressing with shrimp and seafood sauce with horseradish instead of the ketchup. Thay are really fantastic! Afterburner Chili was created in response to my best friend's (Deli) challenge that an Iowa boy can't out chili a Texan.  He stood corrected!  After he went screaming to the sink.  Ha! Ha! Ha!



This, at least for me, is definitely a Winter dish.  I now live in Florida and do not make it as often as it does not get cold enough for this chili. I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like! I also call it 'Really Good Chili That's a Whole Lotta Work' but my guys love it so what can I do? It can be 1/2 diced beef and 1/2 ground beef but we like it all diced. It's pretty mild so add more chili powder and chopped chilis if you like it hot. I also use trimmed stew beef instead of a roast, costs a bit more but its quicker to cut up. 			<description>Whenever I make a loaf of gluten free bread, I can't seem to eat all of it before it goes stale or moldy.  While I could slice and freeze half, I prefer to use it for bread pudding, stuffing, meatloaf, etc.  This is an excellent use for bread that is too hard and stale to eat.  I would not make it from fresh squishy bread, as I think it would probably dissolve in the egg custard.  The original recipe, Debbie Tate's &amp;quot;Make Ahead French Toast&amp;quot; at allrecipes, suggests 8 slices of French bread.  I would assume that sourdough, old hard sandwich rolls, etc. would also work beautifully.  This morning I used the last quarter loaf of bread made from Bob's Red Mill GF Homemade Wonderful Bread Mix.  I would be happy to serve this for company, or Christmas morning. Great to make for the Superbowl or a casual get together. All the spices are to taste. The measurements below are estimates, I rarely measure. Feel free to cut back on the Jalepeno if you don't like your food spicy. Also, instead of just plain ground beef, I have made it using left-over chili, just cut back on the spices then.Use more or less Milk to make cheese as thin/thick as you like, keep in mind the salsa will thin it out. You can use Pepper jack Velveeta if you cannot find the Mexican style. Also, leftover chili or 1/2 lb ground beef and 1/2 lb Chorizo instead of ground beef has had awesome results in my household, just cut back on seasonings.
