			<title>Testament (Chicken-Rice) Casserole</title>

			<description>Sometimes, more attention to the details is a little more bothersome but the end result pays off. So it is with this casserole. There is some pre-cooking involved (rice and chicken) but the superior flavor of the casserole makes it all worthwhile. The recipe is not at all difficult but it does take just a bit longer to prepare than the traditonal &amp;quot;quick casserole&amp;quot;. It took me a few weeks, off and on, to develop this recipe and, after a couple of trials, I found that the chopped artichoke hearts added just the right flavor to enhance the overall dish. I gave a lot of attention to keeping the instructions clear on this one. You can also make it up ahead, bake it, and freeze it for re-heating later. 			<description>...heh... heh... heh..... Hey! Some folks really like Spam! I like Treet even a little better because it's sweeter. The recipe comes off the back of the del Pino's shell macaroni box. If you don't like canned Spam or Treet, then I would look elsewhere for a casserole more to your liking but, if Spam is your thing, this is easy and tasty! You could melt some extra cheese on top if you wished to do so. This is probably a great college student recipe. By the way, THEY didn't call it &amp;quot;Spam Fantasy&amp;quot; -- they called it &amp;quot;Shell Bake&amp;quot;, which I thought sounded pretty unexciting. I call this an updated version of Johnny Marzetti, using sweet (Vidalia type) onions, minced garlic, baby portabello mushrooms, low-sodium tomato sauce, and bow tie pasta (farfalle).  When all is said and done, this is a tasty casserole I am requested to make again and again (in all its incarnations). 			<description>I took this to work this week, and got rave reviews on it. People loved the fact that they were being served out of a pumpkin. Even though the recipe calls for a sugar pumpkin, I actually made a triple batch and filled a jack-o-lantern pumpkin for work because I needed something that would serve a lot of people. However, jack-o-lantern pumpkins are not very good for eating themselves so everybody just ate the filling, whereas you should actually scoop out part of the flesh of the sugar pumpkin with the stuffing.

I originally got this recipe off of here, but went I started to review it, with my list of modifications, I realized that it had changed so much that it was a completely different recipe so I am posting my own version.

			<description>Whenever I make a loaf of gluten free bread, I can't seem to eat all of it before it goes stale or moldy.  While I could slice and freeze half, I prefer to use it for bread pudding, stuffing, meatloaf, etc.  This is an excellent use for bread that is too hard and stale to eat.  I would not make it from fresh squishy bread, as I think it would probably dissolve in the egg custard.  The original recipe, Debbie Tate's &amp;quot;Make Ahead French Toast&amp;quot; at allrecipes, suggests 8 slices of French bread.  I would assume that sourdough, old hard sandwich rolls, etc. would also work beautifully.  This morning I used the last quarter loaf of bread made from Bob's Red Mill GF Homemade Wonderful Bread Mix.  I would be happy to serve this for company, or Christmas morning.
