Apple Pecan Tuna Salad

I grew up eating tuna salad made with sour pickles, onions, and mayonnaise. When I married, my m-in-law made a delicious tuna salad with apples as one of the main ingredients. I LOVED it and began to use that recipe. My husband likes pecans (Texas' state nut) in everything, so I always add a handful, but they are optional. It's better to begin with the chopped apple so you can sprinkle lemon juice over the pieces to keep them from turning brown. I also prefer unpeeled apples. I am saying this makes 6 servings because we like THIN sandwiches. I also sometimes make my sandwich ingredients the night before because allowing to set a while makes the flavors blend. -- posted by BDH

Skillet-Sizzled Buttermilk Cornbread

An outstanding cornbread recipe from the cookbook, "Passionate Vegetarian", by Crescent Dragonwagon. She and her husband served this at their award-winning inn, The Dairy Hollow House, and it was their most requested recipe. Make sure your oven is accurate.
Garlic Roast Chicken (Barefoot Contessa)

After seeing this on Food Network and trying it that very night, I'll never make a roasted chicken any other way. The vegetables alone are worth it, but the chicken is so unbelievably tender and juicy that you can't help but go back for seconds. I've made only very subtle changes to suit my taste, and I would recommend nearly doubling the veggies if feeding four grown people. Reheated leftovers are phenomenal (use medium power on microwave). -- posted by KissKiss

Fancy Macaroni - Wisconsin Style

WARNING: This is not diet food! This dish is pure calories, but it is simply delicious.

This is a very simple recipe that can be easily altered depending on the ingredients at hand. Feel free to substitute the cheeses to whatever your taste or change the amounts of anything. Everything is intended to be "eyeballed." This would be a very popular dish to pass.

This dish was born in Wisconsin, so the cheesier, the better!

It goes very well with garlic bread! -- posted by TerribleCook1017

Bacon & Baked Potato Soup

Potato soup with sharp Cheddar cheese = comfort & cozy:) If you chose to add bacon, I think a peppery-rubbed bacon. That is delicious! If you choose a vegetarian soup - ignore the bacon and add just the sauteed mushrooms, & use the vegetable broth! Complete the menu with hot, crusty, out-of-the-oven bread, and a sliced tomato & onion salad with a vinaigrette.;) -- posted by Manami

Aunt Fannie's Dinner Soup

This is such a Midwestern dish. It reminds me of cold nights and blustery weather and a good bowl of soup to stick to the ribs. My mother has made this forever and it's like a cross between a shepherd's pie, and a fagoli style soup with a little down home twist that has a little "Kitchen Sink" inspiration. No, I didn't have an Aunt Fannie, it's just what we've always called it. Because it's a Midwest dish, it's definitely a taste as you go and jazz up the flavor to your own palate. -- posted by peskyleo

Kids' Puppy Chow - Gluten Free, Casein Free

Yay! General Mills reformulated their Rice and Corn Chex to be gluten-free! Watch for gluten-free on the labels. This recipe makes a GREAT snack for kids especially since the cereal is fortified with iron and folic acid. The peanut butter is also good for protein, but watch out for PB allergies.
Firecracker Burgers

Whenever I am grilling I usually make half of my burgers this way and half plain. Anyone who overdoses on pepper in soup and likes spice enjoys these burgers. I was inspired by a burger I got in Toronto, ON a couple years back which had cracked peppercorns and was served open faced and drizzled with brown gravy. Wasn't crazy about gravy on a burger but used the concept in creating my firecracker burgers. Named this way because when you eat them it is a flavor explosion. Enjoy!! -- posted by Brew City Chef

Tangy, Zesty Oil and Vinegar Potato Salad

The best potato salad you've never had. For when your craving that certain ZING from vinegar...I don't like regular potato salad. I don't like sweet relish, eggs, or miracle whip in my potato salad. The sharp onion with the vinegar balances the soft potato texture. Inexpensive and college budget approved. For more of a bite, add two to three teaspoons of whole grain mustard along with the olive oil. Try this!! Yumm....From Bon Appetit, 2009.

Tortellini Salad

A simple tortellini salad with veggies and a vinaigrette dressing. Simple, and tastes great warm or cold!

I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like!
Hearty Chicken Soup

A hearty chicken soup recipe that has been fine-tuned over many years to near perfection. It is one of the most flavorful soups due to the inclusion of dark meat, soup base, and a relatively high fat content.
Classic Skillet or Baked Macaroni and Cheese

This is just good 'ol mac and cheese- rich, creamy and satisfying. Any cheese you like can be put in there, and any shaped noodle will work (though I think elbows, penne and rotini work best). Whole milk makes a richer mac and cheese, but didn't miss it here (and dh only will drink whole milk!).
Don's Queso Dip

My dad started this recipe in our family. I grew up making it with my dad and after his death I have continued to make it. I have tweaked it to suit my family. Great to make for the Superbowl or a casual get together. All the spices are to taste. The measurements below are estimates, I rarely measure. Feel free to cut back on the Jalepeno if you don't like your food spicy. Also, instead of just plain ground beef, I have made it using left-over chili, just cut back on the spices then.Use more or less Milk to make cheese as thin/thick as you like, keep in mind the salsa will thin it out. You can use Pepper jack Velveeta if you cannot find the Mexican style. Also, leftover chili or 1/2 lb ground beef and 1/2 lb Chorizo instead of ground beef has had awesome results in my household, just cut back on seasonings. My mother likes to put this into a Crockpot to cook while she makes dinner. -- posted by Bekahbv

Joan's Ultimate Appetizer

This is my mother's appetizer that I upgraded to match my tastes. It is a very fast and easy recipe that will always be polished off at parties. It is best served warm so keep it covered, even better covered with warmed cloth napkins. This recipe does not do well reheated as it dries out in the oven or gets mushy in the micro. Please use "bacon bits" or the cheap version. Real bacon lacks the salty crunchy flavor that the bacon bits have. I have tried all the versions of brand name and non for the ingredients and really it doesn't matter so this can be a cheap appetizer if you need it.
