Eggs in a Ham Cup

Another tasty yet impressive recipe from Alberta Egg Producers. You can also use a microwave-proof wide mug if you don't have a ramekin or custard cup. You can cook more than one at a time, just make sure that they have cooked through; they should need more time the more you are cooking. Enjoy! -- posted by Nif

Spanish Tomato Jam (Mermelada De Tomates)

The surprising bright accent of sweetness in this popular modern Catalan relish makes it an ideal counterpoint to savories such as anchovies, pungent cheese, or smoked ham. Normally, the tomatoes are slowly baked or cooked on top of the stove with sugar syrup, but this quick microwave version is delicious and simple. The tomatoes will splatter as they are microwaved, so choose a deep bowl with sides at least three inches tall. Adapted from "The New Spanish Table" cookbook.

Caramel Yoghurt Tart

Away on business for 10 days, I was about to board a plane back home when I got a call to tell me we were having unexpected guests for tea that evening.
In a crunch, I sent a text message to my 15-year-old daughter, asking her to please pop over to the bakery. My daughter then discovered that her scooter was out of action, not being able to reach me as I my flight had just taken off she decide to make something herself, this recipe she put together herself.
There is only one thing I can say, Yummy.
Very quick and easy to make.

Cheesy Breakfast Toast

This isn't breakfast exclusive, but it's very easy to make for those mornings before your coffee is done brewing. All the measurements are loose, because this is made on a single piece of toast, so you can eyeball how much you want/need. Also, you can put whatever seasonings you feel like on it. Sometimes I put crushed red pepper flakes on there. This is single serving, but I think you can manage to make more than one! Enjoy. -- posted by Kyene

Creamy Potato and Bacon Soup.

Quite simple, not alot of work involved. Produces a wonderful soup full of flavour! I made this recipe a few weeks ago on a very cold day. As for preperation of the bacon, you can choose to cook it in the stock pot, leaving behind as much fat as possible for flavour, and add back after cooking of the rest of the soup, or do as I've suggested with the microwave. I suggested the microwave because making the bacon cripsy is much easier this way. -- posted by Ambien.

Knock off Boneless Wings for the Lunch Box

This is a quicky recipe that I came up with to take in my lunch box. Sort of like asian wings. Not gourmet, just something different for your lunch box. I take this with a serving of pre-cooked or leftover rice. Would probably be good over a salad or with steamed veggies too. The chicken tenders I use call for 5 as a serving size. Use the appropriate # of tenders for the serving size listed on the package. And you can mix the other ingredients in a dressing container. -- posted by MsSally

Scrambled Eggs in the Microwave (Great for Work!)

I can only eat so much oatmeal and peanut butter toast without getting bored. I started making scrambled eggs in the microwave to break up the breakfast monotomy at work! I serve these alongside a piece of whole wheat toast and a glass of vegetable juice. In order to cut down on unhealthy cholesterol but keep the healthy protein, I use only one egg yolk; three works fine too (just increase the water [or milk] to 3 T).
