I was trying to come up with something to serve canned corn in a more interesting way instead of just heating it up and putting butter on it. Everyone loved it and it was completely gone. My 16 year old son said "Dad this corn is awesome." I hope you like it. -- posted by brian48195

This is from Barbara Kafka's cookbook, "Microwave Gourmet," with only very minor changes. If you don't own this book, I recommend it highly! My copy is about 20 years old, and was one of the first cookbooks I bought as a grown-up. -- posted by deborahk

Sweet-And-Sour Green Onions (Microwave)

From Microwave Entertaining. Be wary of cooking times for your microwave, this is a rather old cook book, and I believe the wattages have gone up from the time it was published. My suggestion is if you have a newer microwave to only microwave for one minute the first time, adding +30 on until its hot or syrupy, three the second, then one , adding +30 until tender :) unless you have an old low wattage microwave like me! Please note, the recipe calls for green onions/scallions, other large onions are not an do-able substitution. -- posted by Michelle_My_Belle

How to Cook Frozen Vegetables in the Microwave

Another basic recipe written down as I teach my older children the cooking skills they need to put good, simple food on their tables. Since microwaving is fast and because it preserves the flavors, colors, and textures without taking up room on the stove I probably do this 5 days out of 7. With slight variations in timing it works for any frozen vegetable. And once the veggies are cooked they can be dressed up with butter, olive oil, cheese, sauces, or garnishes as desired. Note -- this method is for the veggies that come loose in bags rather than packed in blocks. -- posted by 3KillerBs

Fast and Easy Potato Salad

Using the microwave provides a quicker version of potato salad than you'll get from boiling the potatoes. Fast, simple, easy, and delicious! Perfect for those days when you just want potato salad but can't be bothered to make it from scratch, yet don't want the garbage you get at the grocery store. Also great for people living in households where other members don't share the same potato salad enjoyment (my fiancee hates mayo). For gluten-free or lactose free version-check that the mayo used is suitable -- posted by kittyroara

Simple Corn Stuffed Tomatoes

Something I threw together when I was given some fresh tomatoes out of a neighbor's garden. Delicious!

If you bake this, put the tomatoes over a muffin pan so they can drain into the muffin cups, or they'll be very watery. We prefer the corn hot but the tomato crisp and raw.

This recipe can be easily made vegan by subbing margarine for butter or leaving it out altogether, and skipping the cheese. -- posted by JeannaLW

Tipsy Fat-Free Microwave -Sauteed Mushrooms

I am sharing my kitchen secret with you. I first read the small paragraph in Barbara Kafka's Microwave Gourmet about the possibilities of achieving "sauteed" mushrooms quickly in the microwave without a drop of butter. Then I began preparing my Portabello mushrooms this way to top my signature pizza (have you ever noticed that if you pile a lot of toppings on a pizza, it's hard to cook everything through?). I admit I use dry sherry almost as much as I use olive oil! One giant Portabello mushroom (5"-6" diameter) yielded 2 cups raw mushroom slice halves, which yielded 1 cup "sauteed" mushrooms for my pizza. These would also make a wonderful accompaniment to steaks or burgers, or omelets, or on other veggies... -- posted by KateL

Cheddar and Blue Cheese Cajun Noodles

Mac 'n' cheese, basically, but with noodles. This came about because a) I have dozens of packets of Kraft Blue Cheese Dressing in the house from Job Lot and b) I wanted to try Ranch Style Ramen (http://www.recipezaar.com/Ranch-Style-Ramen-93749) when I didn't have any ranch dressing in the house. The Kraft blue cheese dressing really isn't very strong, so if you use another type you might want to thin it out a bit with milk or half and half. This makes 1 small-ish serving. -- posted by Kris B.

Microwave Scalloped Potatoes

This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!) -- posted by Recipe Book Worm

Bring Me Your Head on a Platter! Cauliflower

OK just the Brain Food here!
This is a take off of my Recipe #106251 using a different method to keep it looking like a brain for Halloween.
Do take note all microwaves cook differently so take care when roasting not to over do.
Oh by the way cauliflower is Brain food!
A recent study done by McLean Hospital, an affiliate of Harvard Medical School, suggests that taking a minimum of 500mg of citicoline supplements a day can help boost mental energy and efficacy. Citicoline, a natural substance found in all living cells, can also be ingested via cauliflower—a source of choline, which is converted to citicoline in the brain! -- posted by ~Rita~
