			<description>Note: I'm trying to tweak this.  The calories are coming up WAY higher than they should (should be 400-500 depending on your salsa usage)  This is something that I've worked up recently.  The beans and rice should already be cooked.  If I were to eat all of this at lunchtime, I would still feel full around dinner.  You feel like you're stuffing yourself, but it's a modest amount of calories, low fat, low sodium (depends on the salsa), and an insane source of fiber.  Very easy to throw together if you make larger batches of the beans and rice.

I do NOT used canned beans because of the sodium.  But if you use a pressure cooker, a whole bag of dry beans (not soaked) only takes 35-40 minutes to cook. 

I get the frozen pepper &amp;amp; onion mixture from Kroger.

The salsa quantity is up to you, but you would save a few calories by reducing the amount (I like a lot). 			<description>Ive made risotto by the traditional method (in a pan on the stove top, stirring for 1/2 hour adding a 1/2-cup of broth at a time) and by this microwave method. I cant tell the difference of the final result. So this is the only way I make risotto now.

This is a good recipe for those who have physical challenges and cant stir regular risotto for half an hour. Let the microwave do the work for you and eliminate most of the stirring.

Just make sure to use a medium grain rice. I have best results with Calrose rice. Long grain doesnt work well because it has less of the starch that creates the creamy texture of risotto.

As for preperation of the bacon, you can choose to cook it in the stock pot, leaving behind as much fat as possible for flavour, and add back after cooking of the rest of the soup, or do as I've suggested with the microwave. 			<description>I could live on this!  Everybody loves this one, and agrees that its better than any Jambalaya they've ever ordered in a restaurant.  Give it a try, you won't be disappointed I promise.  The secret is the roasted red peppers and the butter.  Don't be put off that the dish is finished in the microwave, it just ensures that there are no burnt pans to deal with later!  The only other veg that work in this I find are sweetcorn or butternut squash/pumpkin cut into chunks and added just before it all goes in the microwave.  Even my friends from Louisiana find it hard to accept that its perhaps even better (If not a little different) than they make.
