Peanut butter and chocolate, yum! I got this recipe from a 2005 isuue of Womans Day magazine and its presentation is nice enough for serving to guests or just treating yourself to a bit of indulgence. They're very rich, so don't let the small 9" pan size fool you ;) -- posted by Breezytoo

Greek-Style Tuna Casserole

My mom was cleaning out one of her closets and came across several folders full of recipes that she had clipped from magazines and newpapers over the years. I'm not sure what publication this one came from. The title says "casserole" but it's really more of a hot pasta salad.
Spanish Tomato Jam (Mermelada De Tomates)

The surprising bright accent of sweetness in this popular modern Catalan relish makes it an ideal counterpoint to savories such as anchovies, pungent cheese, or smoked ham. Normally, the tomatoes are slowly baked or cooked on top of the stove with sugar syrup, but this quick microwave version is delicious and simple. The tomatoes will splatter as they are microwaved, so choose a deep bowl with sides at least three inches tall. Adapted from "The New Spanish Table" cookbook.

Samoas (Caramel Delites) (Gluten-Free)

Samoas were my favorite type of girl-scout cookie before going gluten-free. Now I haven't had one in over two years. When I saw a recipe for homemade Samoas, I knew I had to make a batch that was gluten-free. These take a while to make and are completely terrible for you but it's so worth it! * For the flour mix, I used Bette Hagman's Mix with great success: 2 parts garfava flour, 1 part sorghum flour, 3 parts cornstarch and 3 parts tapioca flour. Feel free to experiment with your own shortbread cookie mix though. -- posted by Andrew Mollmann

Caramel Yoghurt Tart

Away on business for 10 days, I was about to board a plane back home when I got a call to tell me we were having unexpected guests for tea that evening.
In a crunch, I sent a text message to my 15-year-old daughter, asking her to please pop over to the bakery. My daughter then discovered that her scooter was out of action, not being able to reach me as I my flight had just taken off she decide to make something herself, this recipe she put together herself.
There is only one thing I can say, Yummy.
Very quick and easy to make.
Our guest went back for seconds. -- posted by JeanineD 2

Cheesy Breakfast Toast

This isn't breakfast exclusive, but it's very easy to make for those mornings before your coffee is done brewing. All the measurements are loose, because this is made on a single piece of toast, so you can eyeball how much you want/need. Also, you can put whatever seasonings you feel like on it. Sometimes I put crushed red pepper flakes on there. This is single serving, but I think you can manage to make more than one! Enjoy. -- posted by Kyene

Lightly Spiced Citrus Wonder Cake!

I know there are other cakes on Zaar known as 'Wonder Cake', this is nothing like them though.....the reason why I call this a wonder cake is because from start to finish, it's ready to eat in about 8 minutes flat!!! This cake is perfect for unexpected guests or if you need to take a cake to a pot luck with little notice etc. So really, there's no need for that old phrase " If I knew you were coming I'd have baked a cake". Ok so you don't bake this, but it cooks up beautifully & is wonderfully soft & most importantly, unlike other microwave cakes, it won't become tough. I have other variations of this cake including chocolate, which I will post a.s.a.p............ -- posted by Um Safia

Creamy Potato and Bacon Soup.

Quite simple, not alot of work involved. Produces a wonderful soup full of flavour! I made this recipe a few weeks ago on a very cold day. As for preperation of the bacon, you can choose to cook it in the stock pot, leaving behind as much fat as possible for flavour, and add back after cooking of the rest of the soup, or do as I've suggested with the microwave. I suggested the microwave because making the bacon cripsy is much easier this way. -- posted by Ambien.

Fall Harvest Smoothie

This recipe tastes like pumpkin pie in a glass! You will never know it is packed with veggies and fruits and "good for you stuff". Top with a little fat free whip cream for an extra-special desert. My teen-age daughter begs for this and sometimes we even heat it up for a thick soup. The key to this recipe is to make sure you use a blender/smoothie maker that has enough power to completely puree alll the ingredients; otherwise the squash will stay stringy. -- posted by RackeSRN

Bring Me Your Head on a Platter! Cauliflower

OK just the Brain Food here!
This is a take off of my Recipe #106251 using a different method to keep it looking like a brain for Halloween.
Do take note all microwaves cook differently so take care when roasting not to over do.
Oh by the way cauliflower is Brain food!
A recent study done by McLean Hospital, an affiliate of Harvard Medical School, suggests that taking a minimum of 500mg of citicoline supplements a day can help boost mental energy and efficacy. Citicoline, a natural substance found in all living cells, can also be ingested via cauliflower—a source of choline, which is converted to citicoline in the brain! -- posted by ~Rita~

Knock off Boneless Wings for the Lunch Box

This is a quicky recipe that I came up with to take in my lunch box. Sort of like asian wings. Not gourmet, just something different for your lunch box. I take this with a serving of pre-cooked or leftover rice. Would probably be good over a salad or with steamed veggies too. The chicken tenders I use call for 5 as a serving size. Use the appropriate # of tenders for the serving size listed on the package. And you can mix the other ingredients in a dressing container. -- posted by MsSally

Five Spice Chicken Wings

From the latest edition of Recipe+. I love five spice and chicken wings but unfortunately the only one in the family to like wings so will probably make with drumsticks and thighs and allow a longer cooking time. When removing tips from wings, bag and freeze and when you have enough they are great to make stock with. The recipe can be doubled and taken up to the end of step 1, bag and freeze (for up to 3 months), defrost in refrigerate overnight and continue from step 2.
