Quickie Mexican Pizza for One

Something I often make for lunch or supper when I'm on the fly and eating alone (though of course if someone else is around I'll make one for them, too--big of me, don't you think?). Sometimes in place of the cheddar or mixed Mexican cheeses, I use shredded pepper jack cheese (Monterey Jack with jalapeno peppers) and omit the chilies. -- posted by echo echo

Tostada Pizza

Very tasty and quite easy. Note: Do not put veggies on the whole pizza if you want to have leftovers...they get yucky when you try to re-heat.
Taco Pizza

This is really good and a nice comfort food. I imagine it would be good to also cook for a superbowl party or other gathering. It doesn't take many slices to fill you up, though! I came up with this one day when a local restaurant was closing and the taco pizza was my favorite item there. I think this is as good as theirs. I found it fun and easy to make too. -- posted by Chef Mindi

Paula Deen's Mexican Pizza

I haven't tried this yet, but it sounds so good I had to post it right away. These are individual pizzas you can assemble yourself on a prepared crust, or on an already prepared frozen cheese pizza. I can't decide which way I'll go first. I suspect you could make two large pizzas, also. (Edited to add: In fact, in her cookbook, Paula does indeed make this as 2 large pizzas for a party for teenagers.) See the note for possible variations. Recipe halves easily. -- posted by Lorraine of AZ

Twig's Taco Pizza

I miss living where Pizza Hut has a taco pizza. I had a craving and went looking for a recipe. I didn't find one so I whipped this up. It's close to PH but they don't use taco seasoning in their beef. -- posted by Twig #2

Fish Taco Pizza

I had some leftover fish that I had made for fish tacos and didn't feel like tacos again. So after throwing it on some pizza dough, this is what I came up with. My husband just gave me funny looks until he tried it. It turned out really yummy. You could probably use any other cooked and well seasoned meat instead of the fish. -- posted by C. Taylor

Mexican Chicken Pizza With Cornmeal Crust

I found this recipe on the Muir Glen website. I added the carmelized onions and it really brings out the taste of the fire roasted tomatoes. We loved it. I plan on making different pizzas with the cornmeal crust. A taco pizza would be great. A great way to use up leftover chicken. -- posted by carolinajen4

Mucho Queso Pizza

Using queso as a base, you don't need sauce or cheese - so here's a quick, easy dinner without many ingredients! The queso used in the original Pace Foods recipe (Pace Mexican Four Cheese Salsa con Queso) is spicy and flavorful, so if yours is plain you may want to jazz up your toppings with chopped jalapenos, diced green chilis, black olives or red pepper flakes. The original recipe called for basil which competed with the queso, but some fresh cilantro added at the end would be nice. The original recipe called for sun dried tomatoes; the second time we made it, we used roasted red peppers instead, and thought they were better. -- posted by ~Jen~
