When I think of Mexico I tend to think of a bit of heat and fresh tomatoes and avocado. So, I threw them together to make one yummy burger. 			<description>Shortly after my husband and I were married, we dined at a restaurant in Punta Gorda, Florida. They had an item on the menu called &amp;quot;Burrito Grande&amp;quot; and we fell in love with the meal which was served with, what else, beans and rice. I went home and experimented for some time until I came up with this recipe. It is a favorite in our household to this day. I have also made this recipe using 2 pounds of cooked, shredded beef (such as chuck roast). 			<description>I combined a couple of recipes to come up with this one.  It is a perfect meal to have in the freezer for when you want something spicy.  For a milder version, use less chipotle peppers.  I have served it to company  and everyone has loved it.  Add a side salad and you are all set.  Serve with sour cream and guacamole on the side.
