Here's a refreshing fruit salad that is great in the Spring & Summer when fresh blueberries & strawberries are plentiful. It's great as a salad side dish, as a dessert, or as a topping on pound cake or ice cream! -- posted by Sydney Mike

Pasta With Fresh Fruits and Yogurt

I know it sounds strange but, this combination is just right. It's low in calories and can be served as a dessert or lunch. When I plate this I separate the fruits around the pasta on the platter in triangular shapes. -- posted by Smurfetta Chef #427781

Sarah Jayne's 4-Fruit Salad

Hankering for the onset of spring, I made this fruit salad with a cold in my head and warmer weather on my mind. Plus I have this Cuisinart mini-food-processor that I wanted to test out.
You could probably use any fresh fruits you like, but this is what I used. The watermelon was on special at my favorite supermarket and it makes me think of summer!
If you don't have cinnamon sticks or a food processor, you can use already-ground cinnamon.
This recipe serves 2, so expand if you need to! -- posted by The Polish Avenger

Jicama-Melon Salad With Pomegranate Dressing

This is referred to as "pico de Gallo" in Jalisco, Mexico. Depending on the availability of the cantaloupes, this is equally good with other fresh fruits such as pink grapefruit, pineapple, blood oranges, watermelon and honeydew melon. Feel free to interchange or mix the different fresh fruits. It makes a delightful palate cleaner. It is delicious served alone, or tossed with an elegant pomegranate dressing, which follows.
Amazing Watermelon Greek Salad With Feta

This refreshing salad will surprise you and your guests with how well the flavours work together. At first, it might seem strange, but one taste and you will be hooked. The cool, crunchy watermelon is the perfect base for the pungent, greek flavours - it's a perfect balance of savoury and sweet.

A similar salad was served to me at a cafe a few years back. I had always remembered it and finally decided to try to recreate it. This is about as close to the original I could get. :)

***note*** Feel free to experiment with flavours. Try adding in some fresh basil OR fresh mint in place of the balsamic vinegar. Or leave out the vinegar altogether. -- posted by grumblebee

Fresh Fruit With Poppy Seed Dressing

Any fruit can be used, but this is my favorite combination. If you wish to use oranges and grapes in the same batch, DON'T add the oranges until ready to serve or the grapes become very bitter. Got this from another site and because the dressing has such a bite, everyone loved it at Easter, 2008. Couldn't find it anywhere on Zaar, so wanted to give everyone a chance to try this wonderfully fresh fruit with a zesty bite. Be careful of the cayenne, it really has a bite. -- posted by Sodak1951

Watermelon Jicama Salad

I saw a different recipe for this salad on a Bobby Flay Food Network show and it got me thinking. Since this recipe is an invention on my part, all ingredients are, of course, variable according to your own personal taste. Cooking time is chilling time.
This is from the Sept 08 issue of Cook's Country. I made this for a family bbq over the summer and everyone loved it. It's suggested to use a mild blue cheese, such as a gorgonzola, in this recipe. If you don't have a melon baller, cut the melon into 1-inch pieces.
Watermelon Salad

Recipe from a restaurant called Iron Barley here in St. Louis. They say this recipe is for 2 dinner size entree portions. If you are going to serve it as a side dish it will serve 4, but they recommend you cut the watermelon in smaller pieces if doing smaller salads. Cooking time is actually marinating time. NOTE: I served just the marinated watermelon as a side dish (didn't put it atop greens nor did I use onions) and it was great with BBQ meat!!! -- posted by JanuaryBride

Fruit salad with a kick to it, this salad is very original and very delicious. Please be sure to use fresh fruit as the flavour will come through better. Portions are also a very nice size and the point count is great! The secret ingredient here is salt. It actually makes fruit taste sweeter - but a little goes a long way.
Fabulous Fruit Salad

I can't make the dressing for myself (due to a food intolerance), but I think it would make a tasty dressing.
Cardamom-Flavored Fruit Salad (Salatat Al-Fawaakih)

From: "Classic Vegetarian Cooking from the Middle East & North Africa"-Arabian Gulf. This is the BEST fruit salad my husband or I have ever tried! It's easy, healthy, refreshing and WONDERFUL. You have to like cardamom to really appreciate it though. You may find yourself doubling the sauce in the future because you want to drink it up. I don't repeat very many recipes because there are too many new ones to try but this one is repeated over and over during cantaloupe season. I'm sure it would work with other fruits as well but I like this combo so much I haven't experimented. -- posted by Engrossed

Peachy Fresh Fruit Salad With a Flourish of Angelica and Mint!

This was the first thing I was taught to make at secondary school in Domestic Science! We were all taught to make basic lemon syrup for the fruit salad, a great classic and a standard recipe that I have never forgotten! However, here I have deviated a little and have taken advantage of some excellent local peach syrup instead of the homemade lemon syrup I usually make; and I have garnished the salad with mint and angelica from my herb garden. I have suggested certain fruits to use, but the beauty of a fresh fruit salad is that you can always rustle one up with whatever you have locally and to hand. Serve with fresh pouring cream for a real treat! -- posted by French Tart
